Strawberries are a great example of nutrient-dense foods, which provide the greatest amounts of vitamins and minerals with the fewest calories.

Fun Facts:

  • One cup of strawberries (about eight medium-sized berries) yields 150 percent daily value (DV) of vitamin C for only 50 calories.
  • Strawberries are also relatively high in fiber. One cup provides 3 grams, or 12 percent DV.
  • Did you know that strawberries are good for your bones? Strawberries are an excellent source of potassium, folate and the trace mineral manganese, which are essential for maintaining bone health.
  • The average strawberry has over 200 tiny seeds!
  • Strawberries are second only to apples in fresh-fruit popularity.

Enjoy nutrient packed Florida Strawberries as part of your breakfast, lunch or main meal.

Breakfast becomes a bit sweeter when you add Florida Strawberries to your favorite hot or cold cereal. I like to add a few slices to my pancakes and waffles, too. For pancakes, add strawberry slices right before you flip it. Of course a little homemade Strawberry Balsamic Syrup is a perfect topper!

Lunch might be a small tossed salad. There’s always room on my plate for Florida Strawberries!

Even beverages become something special with Florida Strawberries in the recipe! Add fresh strawberries to lemonade, ice tea or sparkling water for a new way to enjoy your favorite drink.
Of course I always save room for Florida Strawberry inspired dessert !

For today’s Sunday Supper event with Florida Strawberries, I chose to kick my salad up a notch!

Chef salads are as unique as the person creating them. Most Chef Salads are actually well-balanced meals. You’ll find a type of protein, dairy, bread and vegetables. How can I make this type of salad even more healthy and tasty?
Add Florida Strawberries, of course!
Why stop with adding a few slices? I incorporated fresh strawberries in the croutons and lemon basil dressing too. A strawberry trifecta!

Chef Salad with Strawberry Croutons

Yield: 4 servings

Serving Size: 1 each

Ingredients

  • Salad
  • 1 head red leaf lettuce, cut into bite-sized pieces
  • 1 cup sliced Florida Strawberries
  • 12 ounces cooked turkey or ham
  • 1/4 cup feta, crumbled
  • 1/4 cup chopped pecans
  • 1/4 cup grape or cherry tomatoes
  • 1/4 cup baby carrots, sliced
  • strawberry croutons (recipe below)
  • Strawberry Lemon Basil Dressing (recipe below)
  • Strawberry Croutons
  • 2 cups hearty crusty bread (French, Italian) cut into 1/2-inch pieces
  • 1/2 cup salted butter, softened
  • 2 Tablespoons minced strawberries
  • 2 Tablespoons powdered sugar
  • 1 teaspoon dried basil
  • Strawberry Lemon Basil Dressing
  • 1/4 cup strawberry puree
  • 1/4 cup fresh squeezed lemon or Meyer lemon juice
  • 1/2 cup olive oil
  • 1 Tablespoon fresh, chopped basil
  • salt and pepper to taste

Instructions

  • Toast bread cubes at 300 degrees until golden brown. Cool.
  • Whip butter and sugar together until smooth. Add strawberries and dried basil.
  • Gently fold butter over toasted bread creating a light coating.
  • Return to oven and bake at 325 turning as needed until all sides are golden brown. Cool before adding to salads.
  • dressing
  • Whisk together strawberry puree and lemon juice. Whisk in oil, basil and salt and pepper.
  • Assemble salads on 4 plates. Drizzle with dressing.

My secret food blog is Two Lazy Gourmets.

Robin Donovan and Juliana Gallin are the lazy foodies behind Two Lazy Gourmets and coauthors of The Lazy Gourmet cookbook (Viva Editions, 2011).

You’ll find a wide array of recipes from appetizers like Thai Chicken Satay to desserts like Maple-Glazed Bacon Beignets!
Here’s what the bloggers wanted me to know about them:

I love food that is full of flavor, generally healthy, and deceptively easy to make. I especially love spicy food and Asian food of all sorts (Indian, Thai, Burmese, Chinese, etc.) I like desserts, especially chocolate, vanilla, coconut, banana, caramel, peanut butter (any of the latter combined with chocolate is heaven!)

I heard the dessert part loud and clear! How does a banana cake with a creamy chocolate center, topped with strawberry glaze, peanut powder, coconut and fresh strawberries sound?

Strawberry Chocolate Banana Cake

Yield: 9

Serving Size: 1 each

Ingredients

    banana cake
  • 2 cups cake flour
  • 1 1/4 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup shortening
  • 1/2 cup buttermilk
  • 1 cup ripe bananas, mashed (about 2)
  • 1 egg
  • Filling
  • Chocolate spread or ganache
  • 1/2 cup strawberry preserves
  • 1 cup coconut
  • 2 cups fresh strawberries, sliced
  • 1/4 cup peanut powder

Instructions

  • Place flour, baking powder, baking soda, sugar, shortening, salt, bananas,and half buttermilk in a mixing bowl.Mix about 1 minute.
  • Add remaining liquid and egg and beat about 2 to 3 minutes to smooth batter a bit.
  • Pour into greased and floured 9-inch square pan.
  • Bake at 350 until browned and toothpick comes out clean.
  • Cool on rack and slice when completely cooled.
  • Spread top of bottom layer with chocolate and place back together.
  • Spread top layer with strawberry preserve. Dust with peanut powder and coconut. Layer on sliced strawberries.

I’m a pancake nut. I love them with fruit, whole grains, chocolate chips, nuts, you name it. I’ll try it pancake style!
Fruity Hemp Seed Pancakes take dried blueberries, ginger applesauce, nutty hemp seed hearts and wow! Eggless, fruity delicious, buttermilk griddle cakes.
These pancakes are great plain or with honey or your favorite syrup or honey.

Fruity Hemp Seed Pancakes

Yield: 8

Ingredients

  • 2/3 cup unbleached flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup applesauce
  • 1/4 cup dried blueberries
  • 1 Tablespoons hemp seed hearts

Instructions

  • Whisk together all ingredients. Fry on a lightly greased griddle, (flip once) until thoroughly cooked and golden brown.
