Pumpkin Spice and Caramel Fudge

Fudge is a quick, easy to make dessert or anytime treat. Pumpkin Spice and Caramel Fudge represents the best of fall flavors wrapped up into a sweet delight. Great for an adult party, after school snack or trick-or-treat idea.

For my Pumpkin Spice and Caramel Fudge, I used JELL-O Pumpkin Spice Flavor Instant Pudding, JET-PUFFED Marshmallow Creme- 7oz., BAKER’S White Chocolate and KRAFT Caramel Bits.

Pumpkin Spice and Caramel Fudge layers delicious pumpkin flavored fudge, caramel and drizzled with white chocolate. This fudge gets a double kick of white chocolate and caramel. I put BAKER’S White Chocolate and KRAFT Caramel Bits IN the fudge too!

Pumpkin Spice and Caramel Fudge #SweetenTheSeason #AD

Ingredients

  • 1 1/2 cups sugar
  • 2 Tablespoons butter
  • 1/2 teaspoon salt
  • 2/3 cup evaporated milk
  • 1 3.4 ounce box JELL-O Pumpkin Spice Flavor Instant Pudding
  • 1 jar-JET-PUFFED Marshmallow Creme- 7oz.,
  • 8 ounces BAKER’S White Chocolate plus 2 ounces
  • 1 cup KRAFT Caramel Bits, divided
  • 1 Tablespoon water

Instructions

  • Line an 8×8-inch baking dish with parchment paper. I add a dollop of shortening to the dish so the paper stays in place. Lightly grease the inside of the paper with shortening.
  • Bring the sugar, butter, evaporated milk and salt to boil. Boil, stirring constantly for about 3 minutes. Remove from heat, add the JELL-O Pumpkin Spice Flavor Instant Pudding. Whisk in. Return to heat and keep stirring until sugar and JELL-O Pumpkin Spice Flavor Instant Pudding is dissolved. It takes about a minute.
  • Remove from heat. Whisk or stir in JET-PUFFED Marshmallow Creme- 7oz. and BAKER’S White Chocolate. Stir until smooth.
  • Pour into prepared dish. Sprinkle with 1/2 cup KRAFT Caramel Bits.
  • Top fudge with parchment paper and gently press in the KRAFT Caramel Bits. refrigerate until firm, about 2 hours.
  • Microwave 1/2 cup KRAFT Caramel Bits with 1 Tablespoon water. Spread over fudge. Melt 2 ounces of BAKER’S White Chocolate and drizzle on top. Chill until firm.
  • Cut into bite-sized pieces.

Cut into bite-sized pieces.

I like putting beef, whole grains like brown rice, quinoa or barley and vegetables together and pop them in the oven. Magic happens in there, I swear! All those juices and flavors blend together to make an entire new dish from what I put in the oven.

Nutty brown rice and pasta absorb the essence of meat and broth. Vegetables play both sides. Potatoes, carrots and beans give off flavor and take on their surroundings at the same time!

Beef enhances so many types of dishes.

I do love casseroles but soups and stews are on my must make list too! Who doesn’t like crock of hearty beef stew or smoldering bowl of beef barley soup?

For soups and stews I use a shoulder round roast or bottom round roast I can braise for an hour or two to draw out all the beefy goodness and create an outstanding broth. It’s a Low and Slow Experience way of cooking. Making the same roast in a slow-cooker will accomplish the same results.

Beef and Beans Over Orange Rice

Beef and Green Beans over Orange Rice

Yield: 4 servings

Ingredients

  • 1 (8-ounce) sirloin tip steak or tenderloin steak cut into 1/4-inch thickness
  • 1 Tablespoon olive oil
  • 1 cup Mandarin oranges, canned, drained
  • 6 ounces whole green beans fresh or frozen
  • 3 cups cooked brown rice
  • 1/2 cup orange juice
  • 1/4 cup diced onions
  • 1 teaspoon fresh thyme leaves plus sprigs for garnish
  • 1/4 cup sliced almonds blanched or toasted
  • salt and pepper to taste

Instructions

  • Season steak with salt and pepper. Carefully add oil to hot skillet. Saute steak 2 to 3 minutes per side. Set aside.
  • In a 2-quart saucepan, blanch onions and beans in orange juice until softened. Add thyme leaves.
  • Layer rice, steak pieces, beans and oranges in a greased 8x8-inch casserole dish.
  • Sprinkle with almonds.
  • Bake at 350 for 30 minutes to thoroughly heat and blend flavors. Garnish with thyme springs.

Notes

Use cooking spray or lightly butter dish to prevent rice from sticking.

Ingredients

  • 1 lb ground chicken
  • 1/4 cup Sabra Olive Tapenade Hummus
  • 1 Tablespoons crumbled feta cheese
  • 1/4 cup breadcrumbs (plain, homemade or seasoned)
  • salt and pepper to taste
  • 1 Tablespoon olive oil
  • 1/2 cup fresh spinach
  • 2 8-inch soft tortillas
  • 8 green olives (optional)
  • Additional Sabra Hummus for dipping

Instructions

  • Mix together chicken, 1/4 cup Sabra Olive Tapenade Hummus, feta, breadcrumbs, salt and pepper. Form into 8 patties.
  • Fry patties in 1 tablespoon olive oil over medium heat until thoroughly cooked.
  • Cut tortillas into quarters. Top with spinach. Add burger.
  • Fold corners together and secure with a toothpick with olive if desired.
  • Serve with a side of Sabra Hummus for dipping.
