I’m not a big mixed drink consumer but I do appreciate a good Pink Cadillac.

No, not this Pink Cadillac. (Go ahead, play it I’ll wait… 😉 )

This Pink Cadillac Margarita. (See recipe below) 😉

Pink Cadillac Margarita

My Pink Cadillac Margarita Cupcake plays with the flavors of cranberry, orange and lime with a bit of gold tequila tossed in too!

Pink Cadillac Margarita Cupcakes

Serves: 16 cupcakes
Ingredients
  • ¼ unsalted butter, softened
  • ¼ cup butter flavored shortening or addition ¼ cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 2¼ cups cake flour
  • 2 tsp. baking powder
  • ¾ tsp salt
  • ½ cup cranberry juice or blend NOT cocktail juice
  • ¼ cup orange juice
  • 1 tablespoon lime juice
  • 2 teaspoons tequila
Instructions
  1. In a standard mixer on low speed, cream together butter and sugar.
  2. Add eggs one at a time.
  3. In a separate bowl, mix together flour, baking powder and salt.
  4. In a separate measuring cup mix together cranberry juice, orange juice, lime juice and tequila.
  5. Add half the dry ingredients then half wet ingredients. Mix and repeat.
  6. Batter should be thick and spongy.
  7. Bake in lined cupcake pan at 350 for 12 to 15 minutes until set and test clean with inserted toothpick .
  8. Cool and top with your favorite frosting.

 

If you want to enjoy a Pink Cadillac Margarita with your cupcake (which I highly recommend) here is the recipe! The pink salt rim is colored with a few drops of cranberry juice.

1 1/2 oz. Top Shelf Tequila (Cuervo 1800)
splash of fresh squeezed Lime Juice (more Lime Juice for rim)
1 oz. Cranberry Juice
3/4 ounce simple syrup
1/2 ounce Grand Marnier or Cointreau
Instructions
Shake with ice and strain. Serve over ice.

I love pasta and meatballs any day of the week. Beef, turkey, chicken or a meatloaf mix with beef, pork and veal all make great meatballs.

Sometimes I get to be a stickler when it comes to sauce. It needs to satisfy what I’m craving. A good tomato based sauce like McCormick’s Sicilian Chicken with Tomato, Basil & Garlic is a great place to start!

This sauce has all the good stuff that I put in my own sauce without spending hours of cooking time to achieve.

It is so easy to use straight out of the package. Notice how convenient the sauce is packaged. I can stand them upright on my pantry shelf or  lay down on its side to save space without worrying about glass breakage or leaks.

Chicken Meatballs and Pasta Rose Ingredients

Start your pasta and while it cooks, make your meatballs. Mix together ground chicken, onion, celery flakes, basil, 3 Tablespoons Parmesan.
Form into mini meatballs. (18 to 20) Meatballs will be slightly sticky.

Heat the oil in your skillet over medium- high heat. Add meatballs and turn to coat meatballs with oil. Fry over medium heat, turning often to brown on all sides. Reduce heat, cover and simmer until thoroughly cooked. Too dry? Add 1 to 2 tablespoons of water to help steam meatballs if necessary.

Add pasta, McCormick sauce and half and half or milk. Heat thoroughly and serve.

  • ½ teaspoon dried basil
  • salt and pepper to taste
  • 1 Tablespoon olive oil
  • 2 cups dried pasta (mini penne, penne, ziti)
  • 1 package McCormick Skillet Sauce Sicilian Chicken with Tomato, Basil, Garlic
  • ¼ cup half and half or 2 percent milk
  • ½ cup shredded Parmesan for topping(optional)
Instructions
  1. Cook pasta according to package directions. Drain.
  2. While pasta cooks, mix together ground chicken, onion, celery flakes, basil, 3 Tablespoons Parmesan.
  3. Form into mini meatballs. (18 to 20) Meatballs will be slightly sticky.

Turkey and Black-Eyed Peas Soup with chunks of potatoes and kale. A hearty, delicious ♥ heart-healthy ♥ soup! One bowl is not enough!
I have a secret that makes this heart-healthy soup, souper special.
I didn’t use turkey breast or thighs. I said beat it to turkey drums,too.
You guessed it. I made this soup with turkey wings.
Wing meat has the taste of white meat and the moist, tender texture of dark meat. Turkey wings also make full-bodied stock and can be quite economical too.
Black-Eyed Peas, also known as cowpeas, are actually beans. Like all beans, dried cowpeas swell when cooked. In some cultures, people eat these beans on New Year’s Day hoping to bring wealth and prosperity to the household.
I eat them because they’re delicious and good for you.
Black Eyed-peas are loaded with vitamins and nutrients.
These beans are a great source of Potassium, Dietary fiber, Vitamin A, Vitamin K, Calcium, and Magnesium.
Kale is no slouch either. 😉
This leafy green is high in Vitamin A, Vitamin C, Calcium and Iron.

Ingredients
  • 2 turkey wings
  • 4 cups chicken broth
  • 2 cups chopped celery
  • 1 cup chopped onions
  • 3 cups potatoes, ½-inch diameter
  • 6 cups chopped kale
  • 1 14.5 ounce can black-eyed peas, rinsed
  • salt and pepper to taste
Instructions
  1. Place wings in a 6-quart pot. Cover wings with water. Bring to a boil. Reduce heat to medium and add celery, onion and broth.
  2. Simmer until wings are thoroughly cooked. Remove to cool before removing meat.
  3. Add kale and return to a simmer. Cook 10 to 15 minutes until kale starts to soften.
  4. add potatoes and cook until potatoes are almost done but still a bit hard.
  5. Add beans and turkey meat and return to a simmer until potatoes are cooked and turkey soup is thoroughly heated.
  6. Salt and pepper to taste.
