Caramel Chocolate Chip Cookies #FilltheCookieJar

Caramel Chocolate Chip Cookies
Hi! Welcome and thanks for joining us as we Fill the Cookie Jar with some of our favorite Christmas cookie ideas!

Caramel Chocolate Chip Cookies started out to be orange chocolate chip cookies. Then I saw a bag of caramel filled chocolate chips on the shelf. I still didn’t want to let go of the orange flavor though. So I didn’t ;).
Caramel and orange go perfect together. So caramel chocolate chips with a hint of orange sings, “Merry Christmas” to me!

If you can’t find caramel filled chocolate chips in a store near you, that’s okay. You can still add the orange juice and bits of caramel candy along with your chocolate chips.
Santa will love these with a glass of eggnog! Santa’s helpers are sure to enjoy them too!

Caramel Chocolate Chip Cookies

Ingredients
  • 1 cup plus 2 Tablespoons flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • ¼ cup plus 2 Tablespoons brown sugar
  • ¼ cup plus 2 Tablespoons sugar
  • 1 egg, beaten
  • 2 Tablespoons orange juice
  • ½ teaspoon vanilla
  • 1 cup caramel filled chocolate chips or regular chocolate chips
Instructions
  1. Cream together butter and sugars
  2. Add egg, orange juice and vanilla
  3. In a separate bowl, mix together flour, baking soda and salt
  4. Add dry ingredients to wet mixture
  5. Chill for at least 30 minutes
  6. Drop dough by the tablespoons onto an ungreased cookie sheet
  7. bake at 350 for 9 to 12 minutes until set and golden brown

Fruity Eggnog Bread Pudding #FoodieExtravaganza

I do like eggnog but I can only drink so much of it. So I was ready for this month’s challenge.

Usually I make my own eggnog but for this Fruity Eggnog Bread Pudding recipe I’m relying on store purchased to get a thicker consistency.

Raisins and craisins add just enough fruit and color. This bread pudding held up well for several days without getting soggy.

A bit of glaze seemed like a nice touch. So festive!

 

Fruity Eggnog Bread Pudding

Ingredients
  • 8 cups 1½-inch bread cubes
  • ⅓ cup seedless raisins
  • ⅓ cup golden raisins
  • ⅓ cup craisins
  • 2 cups eggnog
  • 2 Tablespoons brandy
  • 2 eggs
  • 2 egg yolks
  • nutmeg for garnish
  • 1 cup powdered sugar
  • 1 Tablespoon water
Instructions
  1. Place bread cubes into a large bowl.
  2. Toss fruit and brandy together. Add to the bread.
  3. In a separate bowl, whisk together eggs, yolks and eggnog. Pour mixture over bread and fruit. Toss to coat. Let set 5 minutes for bread to absorb liquid.
  4. Grease a 8x8-inch glass baking dish with butter. Add bread pudding mixture. Sprinkle with nutmeg.
  5. Bake in preheated 350 oven until bread is browned and custard sets. about 40 minutes.
  6. Make glaze. Whisk together powdered sugar and water. Add water a little at a time to achieve desired consistency. Drizzle over pudding. Serve warm.

Egg White Omelettes are back! Fast and Easy CedarLane Review #ad

Egg white omelettes were all the rage, cutting edge, back in the eighties when I was a breakfast cook. We would separate a few dozen eggs a day for those special orders.
Pan omelettes were our specialty. Light, fluffy whole eggs turned into thick pillow-like eggy goodness.  These whole egg omelettes came stuffed and folded with your choice of bacon, ham, lox, potatoes, peppers, tomatoes, onions  and cheese. Yes, delicious cheese. Cheddar, American, Swiss or Munster.
A side of homefries, bacon or scrapple, toast, OJ and coffee and you were set until lunch. Maybe even until dinner.
There were still customers resisting temptation. Cream cheese and chive, vegetable only and even standards like Western were requested as no yolk omelettes.
Fast forward to today’s breakfast menus where egg white versions are the norm. Most are flat, cardboard-like discs served as sandwiches.
You can stay home and make your own egg white omelettes. There are egg white processed products on the market.

I wasn’t sure what to expect from a frozen omelette. The pictures on the package looked very inviting. Thick like the old-fashioned pan omelettes I love. Garden Vegetable and Mozzarella, Spinach and Mushroom, Uncured Turkey Bacon, Vegetable and Cheese.

I’m glad I invited some taste testers to help me devour these.
The consensus is CedarLane All Natural Egg White Omelettes are a great choice for breakfast or brunch. Did I mention that these omelettes are hot and ready to serve in about 4 minutes? Great idea with the Holidays here as we could all use a little more free time.
From a nutritional standpoint, they are gluten free, a good source of protein and 300 calories or less.
