If you or someone in your family benefits from a gluten free diet these crackers are a perfect accompaniment to any meal. You don’t need to be gluten intolerant to appreciate these crackers.
I sampled both the Breton Gluten Free Original with Flax and Breton Gluten Free Herb and Garlic crackers and found both to be delicious! I’m a cracker snacker. I like nothing better than a small plate of crackers, cheese, fruit and a beverage. So I don’t hesitate to serve crackers to guests.
Recently a friend gave me some home smoked trout. I used to work in a deli years ago where we sold smoked fish. Salmon, sable, herring, whitefish, carp; all these fish take on a different flavor when smoked. You can make great canapes by adding a little flavored Neufchâtel cheese or regular cream cheese. Top an already great tasting cracker like Breton Gluten Free Original with Flax or Breton Gluten Free Herb and Garlic and you will have a surefire party hit!

Ingredients
  • 1 package Breton Gluten Free Original with Flax or Breton Gluten Free Herb and Garlic crackers
  • 1 package (8 ounces) Neufchâtel cheese, softened
  • 1 Tablespoon dill
  • ½ lb smoked fish pieces ( trout, salmon, sable, herring, whitefish, carp, sardines)
  • ¼ cup capers, drained
Instructions
  1. Mix together cheese and dill.
  2. spread on Breton Gluten Free Original with Flax or Breton Gluten Free Herb and Garlic crackers
  3. top with fish and capers

I tasted Moscato for the first time at a party a few years ago and it has been a favorite of mine ever since. If you never tried Moscato, then you are in for treat. The sweet, light-bodied white wine pairs perfectly with fruity desserts or adds a nice contrast to spicy dishes.
I chose Gallo Family Vineyard’s White Moscato with its peach undertones and bright taste for my peach and apricot cake.
Soaking the dried apricots in Moscato added a layer of flavor. These plumped up nicely.

I love the way the wine taste mingled throughout the fruit! I soaked a few extra to enjoy later with a cheese tray and a glass of Moscato as an added treat. Delicious!
Depending on your dish, you may want to try pairing it with Gallo Pink or Red Moscato.
Gallo describes their Pink Moscato as light-bodied, but bursting with aromas of fresh citrus and peach, followed by hints of fresh red berries and orange blossoms. This wine is versatile and pairs equally as well with spicy foods like Thai curries as it does with dessert.
If you want a more medium-bodied wine, Red Moscato brings out flavors of sweet citrus and peach, with a bright red berry finish. This refreshing, wine is best-enjoyed chilled and paired with light cheeses, spicy cuisine or desserts. I especially like this wine with chocolate.

Peachy Apricot Moscato Cake with Moscato Whipped Cream #SundaySupper

Ingredients
  • 1 cup granulated sugar
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 cup flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup chopped fresh peeled or frozen peaches
  • ½ cup brown sugar
  • ½ cup chopped pecans
  • 12 dried apricots
  • ½ cup Gallo White Moscato
Whipped cream
  • 1 pint heavy cream
  • ¾ cup powdered sugar
  • 1 tablespoon Gallo White Moscato
  • ½ teaspoon vanilla
Instructions
  1. Soak apricots overnight in ½ cup Moscato.
  2. Beat together egg, granulated sugar and vanilla. Add wine syrup from apricots. Stir in peaches.
  3. In a separate bowl, combine flour, baking soda and salt.
  4. Add dry mixture into wet mix. Stir to coat fruit.
  5. Pour batter into a greased and floured 8×8-inch baking pan.
  6. Top with apricots, brown sugar and pecan pieces.
  7. Bake at 350 for 30-40 minutes and an inserted tooth comes out clean.
  8. While cake cooks, make whipped cream:
  9. Whip together cream, powdered sugar, Moscato and vanilla until stiff peaks form.
  10. Serve cake warm with Moscato Whipped Cream or chill to serve later. Refrigerate cake up to 3 days.
Notes
Soaking apricots releases juices and thickens wine into a syrup. Add this syrup directly to cake batter.

I tried both and was pleasantly surprised. Both cracker varieties are flavorful and pair well with a variety of foods. I made smoked trout canopies that I’ll share next week. For now, I have a crab cake I think you’ll enjoy.
Crab Cakes tend to be dry when you use wheat-based bread crumbs. The dry bread soaks up moisture like a sponge from the crab and any condiment you choose to add. Mixing in an egg helps bind the crab cake but often that moisture is quickly absorbed by the crumbs.
Breton Gluten Free Herb and Garlic crackers supplied just enough binding texture to hold the crab cake together without drying it out. The delicate seasoning worked perfectly with the crab.
My guy claimed that these were the best crab cakes he had eaten in a long time. Hmm, hey I made my traditional ones only 2 weeks ago. I guess Breton is on to something!

Grind these crackers a little on the course side.

Ingredients
  • 8 ounces lump crab meat
  • ¾ cup Breton Gluten Free Herb and Garlic Crackers, coarsely ground * ( about 8 crackers) divided
  • 1 egg, lightly beaten
  • 1 tablespoon mayonnaise (gluten free)
  • 1 teaspoon horseradish
  • 1 teaspoon lemon juice
  • ½ teaspoon dill
  • 1 tablespoon olive oil for frying
Instructions
  1. Coarsely grind Breton Gluten Free Herb and Garlic Crackers in a food processor.
  2. Add oil to frying pan.
  3. Mix crab meat, egg, lemon juice, dill and mayonnaise together in a large bowl. Add ½ cup Breton Gluten Free Herb and Garlic Cracker crumbs and mix well. If too moist to hold together, add additional reserved crumbs.
  4. Divide mixtures into 4 cakes.
  5. Fry over medium-high heat. Fry until golden brown and set. About 4 minutes per side.
  6. Serve with your favorite cocktail or tartar sauce.
Notes
*Breton Gluten Free Original with Flax crackers can be substituted for Breton Gluten Free Herb and Garlic crackers.
Make an easy cocktail sauce by combining chili sauce, horseradish and lemon juice.
