These cookies mash up chocolate chips with caramel nibs for a great fall taste. Spooky eyes add to the festivities. Plus the eyes add a little sweet crunch! Gross! I forgot for a minute those are candy!

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 27 minutes

Yield: 24 cookies

Serving Size: 1 each

Monster Mash Cookies

Ingredients

  • 1 cup plus 2 Tablespoons flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, softened
  • 1/4 cup plus 2 Tablespoons granulated sugar
  • 1/4 cup plus 2 Tablespoons brown sugar
  • 1 egg, beaten
  • 1/2 cup caramel nibs flavored chips
  • 1/2 cup dark chocolate chips

Instructions

  • Cream together butter and sugars
  • mix in egg
  • in a separate bowl, whisk together flour, soda, salt, cinnamon
  • Stir dry ingredients into wet mixture. add chips.
  • Chill dough for about 30 minutes.
  • Drop by teaspoonfuls onto ungreased cookie sheet
  • Bake at 375 until golden brown (about 10 minutes)
  • Cool on rack and enjoy!

Antipasto Pizza

Antipasto Pizza adds a variety of meats, cheeses and marinated vegetables to spice up any pizza. Add your favorite toppings for a unique taste.

Welcome to our Festive Foodies celebration of #NationalPizzaMonth! I’m a big fan of pizza. Give me that doughy goodness slathered in sauce and piled high with cheese! I could eat pizza every day but my doctor would go into shock.
Antipasto actually means, “before food” in Italian. It’s a starter course to whet your appetite. Maybe I should have called this, “clean out the fridge pizza” instead. 😉
I start by adding the typical salami, ham and pepperoni with chunks of provolone and any cheese I have on hand. Then add olives, roasted peppers, onions, artichokes and assorted veggies.
Toss them together in an oil and vinegar base or Italian dressing to marinate. Drain then top your pizza and bake.

Remember this is one of those recipes that you make your own by adding your favorite toppings. The more, the merrier!

Ghoul Fudge

Ghoul Fudge takes green and purple swirled vanilla fudge and almonds and turns them into a fiendish delight. Add some spooky eyes just for fun!

I’m a big fan of fudge and nothing beats homemade.
This easy recipe takes minutes to make and will disappear like a ghost in the wind!

TIP freeze your fudge after it sets. Frozen fudge cuts easier. I use festive cookie cutters to add spooky shapes.

Yield: 9 to 12 pieces

Serving Size: 1 each

Ghoul Fudge

Ingredients

  • 1 14 oz can sweetened condensed milk
  • 1 12 oz bag white chocolate chips
  • 1 tsp vanilla
  • 1 cup mini marshmallows
  • ½ cup chopped almonds
  • green and purple food coloring

Instructions

  • Line an 8x8x2-inch pan with parchment paper, grease with butter. Set aside.
  • Combine the milk and white chocolate chips in a saucepan. Heat the mixture over low heat, stirring constantly, until the chocolate is completely melted. Remove the pan from the heat.
  • Stir in the vanilla. Add marshmallows and almonds, stir to mix. Cut back on stirring If you like little pieces of marshmallow.
  • Pour the fudge into the prepared pan and smooth the top slightly. Dip a toothpick in green color and swirl through the fudge. Repeat with purple.
  • Refrigerate to set, 1½ hours or longer. Freeze for easier cutting.
