Aztec Beef Chili

Using roasted poblano peppers adds a bit of smoky flavor without a lot of heat.  To roast peppers, cut in half, remove seeds and pith then broil flat until skins char, about 4 minutes. Remove and wrap in paper towels. Skins should loosen and slid off.

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 4 cups

Serving Size: 1 cup

Aztec Beef Chili

Ingredients

  • 1/2 lb steak cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 (1.5 ounce bar) Forte Aztec Soul chocolate
  • 1 cup canned black beans, rinsed
  • 1/4 cup tomato paste
  • 2 cups beef broth
  • 1 poblano pepper, roasted and diced
  • 1 cup tomatoes peeled, seeded diced (fresh or canned)
  • 1/2 cup diced onion
  • 1 teaspoon chopped cilantro
  • salt and pepper to taste

Instructions

  • Fry steak pieces and onions in vegetable oil in a large skillet.
  • Melt chocolate in microwave safe bowl. Set aside.
  • Whisk together tomato paste, beef broth. Stir in melted chocolate. Add to steak mixture.
  • Fold in beans, tomatoes and peppers. Season to taste with salt and pepper. Heat thoroughly. Garnish with chopped cilantro.
