Mini Peanut Butter and Jelly Cheesescakes slather strawberry jelly between layers of peanut butter cheesecake. A creamy no bake version with fewer calories thanks to Swerve Sweetener.
I recently got on a cheesecake kick thanks to my granddaughter. She said, “Gram. Let’s make cheesecakes just for fun!”
So we made a batch of mini, 3-inch no bake strawberry cheesecakes and filled a few homemade chocolate cups too. I hate to think how many calories I ate that weekend!
That got me thinking. I really do a lot of baking. I’m also the taste tester and hate to waster better eat it one here.
So when The Recipe ReDux offered us a zero calorie product to try that tastes, bakes and measures like sugar, I was in!

Peanut Butter and Jelly Cheesecakes

Peanut Butter and Jelly Cheesecakes

Yield: 4 to 6 servings

Serving Size: 1 slice

Ingredients

    crust
  • 1/2 cup graham cracker crumbs
  • 4 teaspoons Swerve Sweetener
  • 2 tablespoons butter melted
  • filling
  • 1 1/2 teaspoons unflavored gelatin
  • 2 tablespoons water
  • 4 ounces cream cheese
  • 1 1/2 teaspoons peanut butter
  • 1/4 cup Swerve Sweetener
  • 1/2 cup heavy cream
  • 1/2 cup strawberry jelly
  • 2 fresh strawberries for garnish
  • 1 tablespoon chopped peanuts

Instructions

  • Grease two 3-inch or one 6-inch spring form pan.
  • crust
  • Mix together graham crumbs, Swerve Sweetener and melted butter. Press firmly into the bottom of the pan(s). Chill.
  • Filling
  • Stir together gelatin and water. Set aside for 5 minutes. Microwave 20 to 30 seconds to blend.
  • Beat Swerve Sweetener, cream cheese and peanut butter together until creamed.
  • In another bowl, whip cream into stiff peaks.
  • Fold whipped cream and gelatin mixture into cream cheese mixture.
  • Fill halfway with peanut butter cream cheese. Add jelly, reserve about a tablespoon for on top if desired.
  • Chill at least 2 hours.
  • Remove from mold. Garnish with fresh strawberries and chopped peanuts if desired.

Every now and again when St. Patrick’s Day rolls around, I go a bit Irish!

Of course what’s a good Irish cheese with out a good Irish beer? I thought so too and did a pairing event.

Guinness stoudt is still my favorite dark beer. It’s natural chocolaty undertones pair perfectly with cocoa. Dark cocoa. Very dark cocoa.
Chocolate Guinness Cake
It seemed natural to substitute Guinness as the primary liquid in my go-to chocolate cake recipe. turned out to be a great choice!
This cake is moist, not gummy.
The hard part was deciding how to frost it. I wanted to replicate the look of a glass of Guinness. There were a few ideas on Pinterest floating around but I wasn’t hooked.
Then I remembered the cream cheese icing I recently made for my Do You Carrot All Cake!

A splash of vanilla changed the color ever so slightly. Perfect!

Yield: 8 to 10 servings

Serving Size: 1 slice

Ingredients

    cake
  • 1 cup flour
  • 1 cup sugar
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 cup Guinness
  • 1/4 cup water
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • frosting
  • 8 ounces softened cream cheese
  • 4 tablespoons butter softened
  • 1 teaspoon vanilla
  • 2 to 2 1/2 cups powdered sugar

Instructions

    cake
  • Whisk together sugar, flour, cocoa, baking powder, baking soda. In a separate bowl, whisk together beer, water, egg and vanilla. Add to dry ingredients. Beat on medium speed for 3 minutes.
  • Pour batter into greased and floured 8-inch cake pan. Bake at 350 for approximately 20 minutes until inserted toothpick comes out clean.

  • Beat together cream cheese, butter and vanilla. Slowly add powdered sugar. Beat to desired consistency.

This recipe is part of a Festive Foodies Recipe ReDo Challenge!
Sometimes I can’t quite put my finger on it, but the recipes just isn’t what I planned for taste. Other times the texture is wrong. I think maybe, I can make it better.
This easy version of Turkey Stroganoff Baked Potatoes uses ground turkey.
I love the taste of classic Stroganoff but I wasn’t in the mood for noodles. I also love baked potatoes topped with a variety of toppings. So I thought why not put the two together?
I left out the mushrooms because not everyone here eats them but next time I will make some just for me. If you microwave your potato you can save a bit of time. I prefer oven roasted ones, myself.
Served with side vegetable or salad this recipe makes a complete meal.

Turkey Stroganoff Baked Potatoes recipe.

Turkey Stroganoff Baked Potatoes

Yield: 2 servings

Serving Size: 1 each

Ingredients

  • 2 large Idaho baking potatoes
  • kosher salt
  • ½ lb ground turkey
  • 1 tablespoon oil
  • 1 small shallot, thinly sliced
  • 1 clove garlic, minced
  • 1½ cups turkey gravy (homemade or purchased non-fat)
  • ½ cup sour cream, (I use light)

Instructions

  • Bake potatoes at 350 for about 1 hour until soft to the touch. Pierce with fork and squeeze to fluff.
  • While potatoes bake, brown turkey, shallots, garlic and salt in oil. Cook thoroughly. Add gravy. Heat. Stir in sour cream and pour over cooked potatoes.
