This week Sunday Supper goes “Retro” as we pull out and dust off classic old favorites and either make as is, or modernize a bit. I chose this popular dish from my childhood and tweaked it a bit. If you are a fan of the movie, A Christmas Story, then you know this goes best with meatloaf and mashed potatoes!
If you have never tried braising, it is nothing more than quick searing then cooking something slowly partially covered in liquid. This technique brings out the sweetness in vegetables like cabbage.
It is also works on tougher cuts of meat. I use Gala, Fuji or Braeburn apples for added sweetness that can stand up to slow cooking. McIntosh or Granny Smith work well too, but no bonus sweetness!
Smokey Red Braised Cabbage
- Ingredients
- 6 cups shredded red cabbage
- 1 medium onion sliced thin
- 1/2 pound bacon (pork or turkey), cooked and chopped
- 1 apple, sliced thin
- 1 cup vegetable broth
- 2 Tablespoons butter (or reserved bacon fat if you dare)
- Salt and pepper
Place butter in a large skillet. Add cabbage and sauté over med-high heat for about 5 minutes or until cabbage starts to sweat.
Stir in bacon and onion, reduce heat to medium and cook another 5 minutes, stirring often.
Add broth and apples. Cover, reduce heat and simmer for 30-45 minutes, stirring occasionally, until cabbage is soft and tender. Add additional broth during cooking time if needed.
Serve alone as an entree or use as a side dish.
How many of these recipes jog YOUR memory? Wow, I see a lot I still make. Hmm does that make me retro?

Being half-German I’ve had my share of seeing red cabbage all my life. It does bring back lots of memories from my childhood. I just love all these Retro recipes today.

The bacon must be giving the the red cabbage such intense and wonderful flavors. This is a recipe I would treasure too, simply because I grew up with red cabbage and mashed potato. =)

Cindy, you were such a cutie patootie! That’s often the look I have when I’m standing in front of my fridge, wistfully wishing for something delicious to appear (that I don’t have to cook – hah!). I love braising – such a fabulous way to make a yummy, hearty dish like this.
