Tortillita de Camarones (Shrimp Cakes) Tapas #SundaySupper

Tortillita de Camarones
Welcome to our Sunday Supper Tapas Party! What’s a tapas party? It’s okay to ask, I had no idea either. From my internet research and gently asking friends, I learned a Tapas party has a Spanish flair where appetizers or small plate offerings are served.
I dug a little deeper and found several lists of choices for tapas. Tortillita de Camarones or Shrimp Cakes sounded like something I wanted to try.

These light pancake style shrimp fritters are easy to make and can be served with or without a sauce or just a slice of lemon. I chose to make a simple Blood Orange reduction as my sauce. I boiled 1/2 cup Blood Orange juice with a teaspoon of port wine and a tablespoon of honey until it reduced to a thick glaze.
The only difference in the recipes I found was that some recipes called for eggs, others baking powder and another no leavening. You decide how light you want your shrimp cakes.
Serve these shrimp cakes with olives and sangria for a true Spanish style tapa party!

Total time

Ingredients
  • ½ cup chickpea flour
  • ¼ cup flour
  • 2 teaspoons baking powder
  • 1 cup water
  • 1 pound shrimp, finely chopped
  • ¼ cup finely chopped onion
  • 1 teaspoon garlic, minced
  • 2 Tablespoons chopped parsley
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • olive oil for frying
Instructions
  1. Whisk together flours, paprika, salt and baking powder. Slowly add water to form a thin batter similar to a crepe.
  2. Add shrimp, onions and garlic.
  3. Lightly grease a griddle or fry pan with oil. Heat to medium-high as if frying pancakes.
  4. Drop small spoonfuls onto the griddle. Spread into a thin layer if necessary. Fry 1 to 2 minutes per side until shrimp are cooked and cakes are slightly browned.
  5. Drain on a paper towel if necessary.
