Turkey Sausage Noodle Pesto

I chose a skillet dinner as my dish this week. We’re lucky to have a grocery store nearby that grinds their own sausage. They switch it up with seasonal flavors like apple cinnamon but you can always find standards like sweet Italian or Country style. The nice thing is they make all their flavors as regular pork, turkey or chicken sausages.
I used turkey sausage but any kind will work as well.

Turkey Sausage and Noodle Pesto

Ingredients

  • 1 pound of sausage cut into 1/2-inch pieces
  • 1 Tablespoon olive oil
  • 2 cups chicken broth
  • 2 cups fresh spinach
  • 1/2 cup roasted red peppers, chopped
  • 2 cups cooked noodles
  • 1 cup prepared pesto

Instructions
In a large skillet, brown sausage pieces in oil over med-high heat.
Reduce heat to low-medium add broth, cover and simmer for about 10 minutes until meat is no longer pink.
Add spinach and peppers simmer until spinach wilts.
Add pesto and noodles and heat thoroughly.
