Cardamom Lemon Mousse

I love the uniqueness of Meyer Lemons! These lemons offer a touch of sweetness without sacrificing lemon flavor. I think I taste a bit of orange too. Melissa’s Meyer Lemons brighten any meal from soups to dessert.

Cardamom Lemon Mousse

Servings 6 each

Ingredients
  

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 teaspoons vanilla
  • 1/2 cup frozen lemonade concentrate
  • 1/4 cup Meyer lemon juice
  • 1/4 cup sugar
  • 1/2 teaspoon cardamom
  • 1 packet unflavored gelatin

Instructions
 

  • In a cold bowl, whip cream, powdered sugar and vanilla together to form stiff peaks. Set aside and keep cold.
  • Bring juice, sugar, lemonade concentrate, gelatin amd cardamom to a boil, whisking constantly until thickened. Cool. Fold in cream mixture. Chill until firm.
