Chocolate Chip Banana Cake #SundaySupper

This week Sunday Supper celebrates Grandparents Day! You’re invited to join in the fun!

Whether you have fond memories of cooking or baking with your grandparents or making memories in the kitchen with your grandchildren, I’d love to hear from you!

I’ve been blessed with both.

My Grammy was my rock. She was my buffer when my Mom and I got into it. You know how teens can be!
“Don’t worry, she’ll come around to our way of thinking,” she’d say with a wink.
So true.  I wish I’d have had half her of her confidence.
Strangers saw a sweet, little old woman clad in a colorful cotton dress and apron. White hair combed back and bobby-pinned. Always smiling. The proverbial twinkle in her eye. That’s Gram and me on my first birthday and how I remember her most. I still have that cutting board with the teapot on it that was hanging on her wall.

She was all that but so much more. My Grammy survived the Great Depression, raised 10 kids and helped us 17 grandkids. She could cook anything from soups to chickens in those old enamel coated 4-gallon pots. If an army stopped by, she was ready to feed them!
Grammy always seemed to wear the same aprons and use the same old towels for potholders. Every Christmas I would buy her a new apron or set of tea towels. She smile and thank me but I never seemed to remember ever seeing them in use.
When Gram passed, we found an entire metal cabinet full of unopened packages of aprons, tea towels, potholders and flannel nighties. I guess we all wanted better for her. In typical Grammy style she lived by, “Less is more”.
I strive to be like her. I hope someday my granddaughter and grandson look back at me as fondly.

So today I want to share one of my favorite cakes from Grammy’s recipes.

Chocolate Chip Banana Cake!

Chocolate Chip Banana Cake

 

Chocolate Chip Banana Cake turns those mushy over-ripe bananas into a moist, delicious dessert! Enjoy the nutritional benefits of bananas as a bonus. Believe it or not but ripe and over ripened bananas are higher in antioxidants and easier to digest than their less ripe cousins.

I had an uncle that lived with my grandmother. My uncle was sickly and had extreme digestion problems. He ate an overly ripe banana with a spoon every day. That was back in the 1970’s when doctor’s advised their patients to eat better to feel better.

I do love bananas in cream pies, breads, Bananas Foster Banana cake is great by itself too. I like it plain or with a handful of chocolate chips thrown in. Of course walnuts work too!

 

Chocolate Chip Banana Cake

Yield: 9 to 18 servings

Ingredients

  • 2 cups cake flour
  • 1 1/4 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1/2 cup shortening
  • 1/3 cup milk
  • 1 cup mashed ripe bananas
  • 1/3 cup eggs (2 small)
  • 1/2 cup chocolate chips

Instructions

  • Sift together flour, sugar, baking powder, baking soda and salt.
  • Add shortening, bananas and half the milk. Beat 2 minutes. Add egg and rest of milk.. Beat for about 3 minutes until smooth and aerated for a lighter cake.
  • Stir in chocolate chips
  • Pour into an 8x8-inch greased and floured pan. Bake at 350 until toothpick inserted in center comes out clean. (approximately 40 minutes)
  • Cool completely in pan on wire rack before removing.

Notes

The more air in the batter produces a lighter cake. Cool completely before cutting.

I want to start the week off with some Bacon and Honey Waffles. Salty sweet and ready to eat! All the good things in one bite!

Get ready for fall flavors! Now if Cinnamon Rolls are more to your breakfast liking, I have a suggestion. Cinnamon Roll Waffles. These beauties smell as good as they look.

I’m a sucker for an ice cream sandwich anytime of year. How about Lemon Ice Cream and Blueberry Waffles ? These are my kind of sandwich!

Perhaps a stack of Classic Belgian Waffles will entice you? Pile these light airy breakfast treats with fruit and whipped cream.

Cream Dried Beef anyone? Cornmeal makes these special. a breakfast, lunch or dinner treat!

Bacon Honey Waffles

Today we’re here to sample these waffles. There is bacon in these honey sweet waffles and of course, sprinkled on top too! Enjoy with maple syrup, honey, powdered sugar or plain!

Honey Bacon Waffles

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 Tablespoons honey
  • 1 cup warm milk
  • 2 eggs, beaten
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1/4 cup bacon bits

Instructions

  • Whisk together flour, brown sugar, baking powder, baking soda and salt.
  • In a separate container, whisk together butter, milk and honey. When cool, slowly add to eggs.
  • Fold wet ingredients into dry mixture.
  • Pour batter onto hot waffle iron. Sprinkle with bacon bits.
  • Top waffles with additional bacon bits if desired.

Barber Stuffed Chicken Breasts have been a long time friend of mine. When I was a young mom first starting out with a family on my own to feed, Barber Broccoli & Cheese Stuffed Chicken Breasts were one of our favorite meals. We also enjoyed the Chicken Kiev and Cordon Bleu Stuffed Chicken Breasts.
I was excited to try the new Cordon Bleu version from Barber. Cordon Bleu, French for Blue Ribbon fit the bill. I love the new improved coating. The new version offers a home-style breading similar to my own. It keeps the chicken so much more moist and juicy than I remembered. Barber mixes it up with Swiss and American cheeses. These stuffed chicken breasts are tender and flavorful.

You can find Barber Stuffed Chicken Breasts in the frozen food aisle. I found these Barber Cordon Bleu Stuffed Chicken Breasts at several retailers in my area. Here at Wegman’s they are located with the ready to cook chicken entrees.

I couldn’t decide which vegetable to make with these Barber Cordon Bleu Stuffed Chicken Breasts. Lemon Pepper Roasted Vegetables turned out to be a great idea! Slightly spicy and a bit tangy plus roasting brings out the natural sweetness of vegetables.

Lemon Pepper Roasted Vegetables

I used red potatoes, sweet potatoes, broccoli, red onion, baby carrots and red beets. Place the veggies in a plastic zipper bag with the olive oil and seasoning.
Just close the bag and squeeze the vegetables around in the bag to coat.

You might want to keep red beets separate to stop the color bleeding onto your other veggies.

Lemon Pepper Roasted Vegetables

Ingredients

  • 1 cup red potatoes, skin on cut into 1/2-inch pieces
  • 1 cup sweet potatoes, peeled and cut into 1/2-inch pieces
  • 1 cup red beets,cut into 1/2-inch pieces
  • 1/2 cup red onion
  • 1/2 cup baby carrots
  • 1/2 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon pepper seasoning
  • 1 lemon

Instructions

  • Place vegetables in a plastic zipper bag with oil and lemon pepper seasoning. Mix to coat.
  • Bake at 375 for approximately 30 minutes, turn once halfway through the cooking process.
  • Drizzle juice from one lemon over cooked vegetables.

Notes

Keep red beets separate to keep from bleeding onto other vegetables.
