White Chocolate and Carrot Cake Peeps Nests #DessertChallenge

Welcome to the April White Chocolate and Peeps Dessert Challenge sponsored by Sheryl from The Lady Behind the Curtain .

Each month we receive a food pairing to create amazing desserts. April’s pairing is white chocolate and Peeps! Peeps are sugar glazed marshmallow pieces. The free-formed shape resembles a baby chick.
My Peep’s nests are made with drizzled white chocolate, carrot cake, toasted coconut and of course, Peeps.
Start your nests by lining cupcake tins and drizzling melted white chocolate on the sides and bottom.

Refrigerated overnight.
Bake your carrot cake the night before too if you like. For these nests I cut each cupcake in half.

Add a few white chocolate chips for “eggs”.

White Chocolate and Carrot Cake Peeps Nests #DessertChallenge

Ingredients
  • 8 ounces white chocolate melts, melted
  • ½ cup white chocolate chips
  • ¼ cup toasted coconut
  • 6 Peeps or marshmallow candies
for the cake
  • 1 egg
  • ½ cup sugar
  • ¼ cup vegetable oil
  • ¾ cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¾ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon vanilla
  • ½ cup cooked mashed carrots
Instructions
  1. Drizzle melted white chocolate into paper lined cups. Refrigerate until firm. Peel off paper before assembling.
for the cake
  1. Mix together oil, egg, vanilla and sugar.Add carrots.
  2. In a separate bowl, add flour, baking powder, baking soda, spices.
  3. Stir in dry ingredients.
  4. Fill each cupcake paper lined tin about halfway full. Bake at 350 for about 10 minutes or until an inserted toothpick comes out clean. Cool completely before assembling nests.
  5. To assemble:
  6. Add cake slice to chocolate nest. Sprinkle with toasted coconut. top with a peep and white chocolate nibs.

Grilled Turkey Rachel #WeekdaySupper

Grilled Turkey Rachel
Turkey Rachels are Turkey Reuben’s little sister in the sandwich world. When I worked in a New York deli on Long Island, native New Yorkers called them “sloppys”. Cole slaw tends to do that to a sandwich! I think I like the term “Rachel” better. 😉

Some people prefer mustard but I like mine with Thousand Island dressing.

I’m making these quick, easy grilled sandwiches for #WeekdaySupper.

You can make the slaw ahead and use bottled Thousand Island. The hardest part is deciding what kind of turkey to choose. I like a honey roasted breast. Traditional oven roast or even smoked turkey will also taste great.

These sandwiches can be served open-faced too! Just grab your knife and fork.

Ingredients
  • 4 slices rye, marble or pumpernickel bread
  • 4 slices low-fat Swiss cheese
  • ¼ pound deli turkey meat
  • ½ cup cole slaw
  • ¼ cup Thousand Island dressing
  • butter for grilling
Instructions
  1. Spread dressing on both sides of bread. Top with one slice cheese per piece.
  2. Melt butter in skillet. Add bread.
  3. Add turkey along side of bread, turning to warm through.
  4. When cheese starts to melt, add warmed turkey to both sides of sandwich. Top with cole slaw.
  5. Remove when bread is lightly browned and cheese is melted.

Chocolate Coconut Joy Pudding #ChocolateParty

Chocolate Coconut Joy Pudding! The joy is in the pudding!

Chocolate Coconut Pudding sounded like a good idea for this month’s Chocolate Party hosted by Roxana’s Home Baking . Thanks Roxana for hosting such an awesome party!

I love chocolate, so it is usually easy to come up with something that fits the monthly chocolate challenge theme.

I started with a basic chocolate and coconut milk pudding. That turned out good, but no I couldn’t stop there!

I added a bit of almond extract. Better. It still needed something more.

Graham cracker crust. Yes that’s it! Delicious! Okay, by now you probably noticed those toasted marshmallows.
Smores right? Of course!

If you like the idea of adding toasted marshmallows to your dishes, but don’t own a torch, here what I do.

Broil them! Arrange your marshmallow on a cookie sheet and broil on high until browned. This takes about a minute or two. set aside to cool slightly. Lift off the toasty marshmallows with a spatula and place on dessert!
A little sprinkle of toasted coconut sealed the deal!

 

Chocolate Coconut Joy Pudding #ChocolateParty

Ingredients
  • ¾ cup graham cracker crumbs
  • 5 Tablespoons melted butter
  • 1 14 ounce can coconut milk
  • ¼ cup cocoa
  • ¼ cup plus 2 tablespoons sugar
  • 3 Tablespoons cornstarch
  • ⅛ teaspoon salt
  • ½ teaspoon almond extract
  • mini marshmallows (optional)
  • toasted coconut (optional)
Instructions
  1. Mix graham crumbs and butter together. Press 1 Tablespoon of mixture in the bottom of a dessert dish or coat a small tin with mixture.
  2. Whisk together coconut milk, sugar, cocoa, cornstarch and salt in a medium saucepan. Bring to a simmer, stirring constantly until thickened,
  3. Remove from heat and add almond extract.
  4. Pour into serving dishes, cover by laying plastic wrap directly on top of pudding. This prevents a skin from forming. Refrigerate and let set for at least 2 hours.
  5. Garnish with toasted coconut and marshmallows if desired.
