I love cranberry anything. I’m not alone. According to cranberryinstitute.org more than In 2012, a total of 1.13 billion pounds of cranberries were produced in the U.S., Canada and Chile.
As a native to North America, the humble cranberry serves as a major food source for wildlife and was important to Native American culture.
Cranberries are high in antioxidants and PAC’s. Studies show regular cranberry consumption helps maintain urinary tract health.
Of course its okay to eat them just because they taste good. You can freeze some for later too.

Chicken pairs well with tart cranberries lightly sweetened in a warm sauce. I used chicken thighs. It works as well with white meat. Served with a salad and rice or couscous and you have a quick, delicious meal.

Cranberry Chicken

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 cup fresh cranberries
  • 1/2 cup cranberry juice
  • 1/4 cup pink Moscato or red Moscato
  • 1/2 cup sugar
  • pinch of ground cloves

Bring all ingredients to a boil over medium heat, whisking constantly. As sauce cooks, cranberries will pop. When sauce thickens and reduces by about 1/2 remove and strain. Continue cooking sauce if you like it thicker. I add back most of the cranberry pieces.

Pomegranate Spinach Salad #TheSaladBar

I love pomegranate juice and I even buy pomegranate flavored yogurt. Then there are craisins soaked in it (there are some on this salad). All these choices to get my pomegranate on yet I’d never eaten the fresh arils.
I cut open one open and tasted one of the arils. Little hard seeds rolled on my tongue. Not so pleasant texture wise. Why was everyone crazy about these little beads? So this salad was a challenge.
The Salad Bar
Each month our favorite salad bar-tender, Wendy from The Weekend Gourmet hosts The Salad Bar Group. Our December challenge: a salad using pomegranate.
I chose spinach as the base. Toasted walnuts, arils, craisins and feta help round out the flavors. The dressing is slightly tart; made with cranberries and cranberry juice, pomegranate vinegar, a little sweetener and grapeseed oil.
After eating this salad, I found that I liked the aril taste after all!

Pomegranate Spinach Salad

A tasteful, full flavored salad for the Holidays or anytime!
recipe makes one salad
Ingredients

  • 1 cup baby spinach
  • 2 tablespoons pomegranate arils
  • 2 tablespoons feta crumbles
  • 1 tablespoon toasted walnuts
  • 1 tablespoon craisins (any flavor I used pomegranate)
  • 1/2 cup fresh cranberries
  • cranberry juice
  • 2 tablespoons sugar OR sweetener (I used Monk Fruit in the Raw)
  • 1 tablespoon pomegranate vinegar
  • 1 tablespoon grapeseed oil

method
Arrange spinach, feta, pomegranate, walnuts and craisins on a plate.
Dressing:
Bring cranberries, juice, sweetener,vinegar to a boil over medium heat, whisking constantly.
Allow to reduce to 1/2 the volume.
Strain and cool.
Add oil. Whisk.

Chocolate Coffee Roll Hershey's Chocolate family

I was given a free sample of Hershey’s Spreads chocolate flavor because I’m a Klout Influencer. I am under no obligation to receive the sample or talk about this company. I get no additional benefits for talking about the product or company.

Does it show that I’m partial to Hershey’s Dark Chocolate products? Well maybe a little. When I received my Klout perk from Hershey’s I needed to get the rest of the family out of my cupboards. I mean the Hershey’s Dark Chocolate products not my family, they don’t hide in the cupboards, except maybe sometimes the cat trys. Anyway, I wanted to do something more with this chocolaty goodness than cover toast or crackers.
When you crack open the package you immediately want to spread it on something. Nutella move over, chocolate is here to play.
So I started paging through cookbooks and an old favorite caught my eye. Cake roll. I’ve made jelly rolls, pumpkin cream cheese rolls, chocolate cake and buttercream rolls. Now I was ready to try a coffee flavored cake base with new Hershey’s Chocolate Spread roll.
It turned out fantastic!

Chocolate Coffee Roll

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 5 Tablespoons black coffee
  • 2 teaspoons vanilla
  • 1 cup cake flour (I use King Arthur Flour)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Grease and flour a jelly roll pan.
Beat eggs on medium speed until thick and lemony colored.
Gradually add the sugar.
Mix in coffee and vanilla.
Add flour, baking powder and salt.
Pour into prepared jelly-roll pan and bake at 375 for about 12 minutes. Cake should be done but not overly baked.

Turn cake out onto a towel coated with powdered sugar.

Spread cake with Hershey’s Spread.
Roll towel down to where cake the starts. Gently roll the cake inside the towel. Tuck the towel around the cake and cool before unrolling.
Place cake on a plate or board.

Dust with powdered sugar and cocoa.
Serve with Hershey’s Syrup if desired.
