This month Sheryl at The Lady Behind the Curtain posed a new Dessert Challenge using pears and maple.

I do love pears. Red Anjou are my favorite but I won’t pass up a bosc or bartlett ;). I admit I haven’t seen many different kinds of pear desserts so I’m very excited to see what this challenge brings!
I made a simple pear crisp with grated candied ginger for extra kick. I hope you enjoy it.

Pear and Maple Oatmeal Crisp

Ingredients
Filling

  • 2 medium pears, peeled and sliced
  • 2 tablespoons maple syrup
  • 1 Tablespoon candied ginger, grated
  • 1/2 teaspoon nutmeg
  • 2 Tablespoons lemon juice
  • 1/2 water

Topping

  • 1 cup oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter, melted

Method
Place pear slices, ginger, nutmeg, lemon juice and water in a 8×8-inch dish or divide between individual cassolettes.
Mix topping ingredients together and distribute evenly on top of fruit.
Bake at 375 for approximately 60 minutes until fruit is soft and topping has set.

I chose an Alfredo recipe contributed by Nancy Monasmith as my inspiration. I changed the type of cheese and reduced the amount of butter but loved her idea of adding chicken.
When I want chicken breasts to cook in a hurry, I’ll place them between 2 sheets of plastic wrap and pound the chicken with the flat side of a meat mallet to 1/4-inch thickness. This keeps the chicken shape intact so you can cook it faster and slice it or leave it whole to serve. Cook the chicken approximately 3-4 minutes per side.
You can also parboil your noodles so that they will finish cooking in about 2 minutes. Boil your noodles as you normally would but stop cooking them about 3 minutes before recommended cook time. You can shock them in ice water, drain and bag them for later use. Drop them back in boiling water when you are ready to finish cooking.

Creamy Alfredo with Chicken

Ingredients

  • 2 4-ounce chicken breasts, pounded to 1/4-inch thickness
  • 1 Tablespoon olive oil
  • 2 cups cooked noodles
  • 2 cups 2 percent milk
  • 1 Tablespoon butter
  • 2 Tablespoons cornstarch
  • 4 ounces shredded white cheddar
  • 2 Tablespoons grated parmesan cheese
  • salt and pepper to taste

Cook chicken in oil for 3-4 minutes per side until chicken reached 160 degrees and juices run clear. Keep warm.
In a 2 quart saucepan, combine cornstarch, salt and pepper. Over medium heat, whisk in milk and butter. Bring to a boil stirring constantly, Remove from heat. Whisk in cheeses. Add noodles and toss to coat.
Top with cooked chicken and extra parmesan if desired.

Chicken and Cheesy Brown Rice with #Skellig Cheddar Sauce

Chicken and Brown Rice in Creamy Skellig Cheddar Sauce
I was given a package of Skellig sweet cheddar by Kerrygold for a recipe contest. I did not receive monetary compensation for this post. All opinions are my own.
I love cheese sauce. The creamier the better. When I heard Kerrygold had developed a soft cheddar, I thought about all the possibilities.
I could make a cheddar sauce for mac and cheese or maybe for veggies or even a potato casserole.
Or, I could make chicken coated in a smooth cheddar sauce with a bit of white wine and a hint of smoke. I went for the chicken.
But I wanted more than just chicken for dinner.
Another option was adding Skellig to brown rice and not ending up a gloppy mess like some cheese tend to become when added at the end of cooking. I was pleased with how easy the Skellig cheddar melted. It adhered to the rice without weighing it down. Terrific!
Like all Kerrygold cheeses and butters, Skellig is made in Ireland with milk from grass-fed cows that are free of artificial growth hormones. The cows are raised on small family farms, with an average herd size of 60. (Photo and information courtesy of the Irish Dairy Board.)

This chicken dish turned out fantastic. The Skellig melted easily for the sauce and didn’t breakdown as it cooled. It isn’t oily, so it holds texture beautifully.

Chicken and Cheesy Brown Rice with #Skellig Cheddar Sauce

Ingredients

  • 4 4-ounce chicken breasts
  • 1 Tablespoon olive oil
  • 4 ounces Skellig cheddar, thin sliced, divided
  • 1 cup brown rice
  • 2 1/2 cups chicken broth
  • 1 cup half and half
  • 2 Tablespoons white wine
  • 1/8 teaspoon smoked sweet paprika plus more for garnish

Directions
Bring broth and rice to a boil. Reduce heat to low and simmer for 45 minutes. Remove from heat and add 1 ounce of cheddar. Stir in as it melts.
While rice cooks, make chicken and sauce.
Pound chicken to 1/4-inch thickness. Place oil in a large skillet and brown chicken over med-high heat for about 3 minutes per side and internal temperature reaches 165.Keep warm.
Place half and half, wine and paprika in a medium saucepan. Bring to a boil over low heat whisking constantly. Reduce heat, add cheese and continue to whisk until cheese is dissolved. Remove from heat. Sauce will thicken upon standing.
Place chicken over rice, drizzle with sauce and sprinkle with paprika.

Cheesy Potato Dumpling Soup #SundaySupper #FamilyDinnerTable

I love cheese. so when American Family Insurance asked our Sunday Supper Group to participate in an event featuring cheese dishes, I was happy to join in! Thank you, Isabel from Family Foodie for hosting this event!

I’m always looking for something different from spreadable cheddar to smoky Gouda and maybe Colby, or longhorn and anything in between.
One thing I’ve found out about working with cheese is that cheese melts best in soups and sauces if you remove the pot from the heat and slowly whisk the cheese into the hot mixture. Semi-hard cheese like cheddar will blend better than a processed cheese like American. Processed cheese tends to get stringy and grainy; sometimes sinking to the bottom instead of blending in.
You also need to be careful in your recipes that you measure your cheese by either weight or volume. As a guide, an 8-ounce bag of shredded cheddar is approximately 2 cups.
Today I’m sharing a basic cheddar soup recipe and added light mashed potato dumplings and a bit of smoked turkey sausage. The sausage is optional but I liked the added smokiness and texture.

Cheesy Potato Dumpling Soup
Ingredients

• 2 cups cold mashed potatoes fresh or leftovers
• 1/2 cup flour, divided
• 2 Tablespoons olive oil or butter
• 2 cups vegetable or chicken broth
• 1 cup half and half
• 1 cup 2 percent milk
• 1 4-oz jar pimentos, chopped
• 1/2 cup onions
• 2 Tablespoons cornstarch
• 2 cups shredded cheddar cheese
• 2 Tablespoons butter
• 2 cups cooked smoked turkey sausage, cut into 1/2-inch cubes
• salt and pepper to taste
Method
Preheat oven to 200 degrees.
Mix potatoes with 1/4 cup flour, salt and pepper to taste. Roll into 1-inch balls. Dip in extra flour. Flatten.
Heat 1 Tablespoon of oil in a large fry pan. Fry potato dumpling over med-high heat until golden brown on all sides. Transfer to a baking sheet and keep warm in the oven while preparing soup.

In a small sauté pan add 1 tablespoon oil, sausage, onion and pimentos. Fry over medium heat until onions are soft and meat is thoroughly heated, keep warm.
Combine half and half, milk and broth in a large saucepan. Whisk in cornstarch, salt and pepper to taste. Slowly bring to a boil. Allow to thicken. Remove from heat and whisk in cheese. Add sausage, onion and pimentos.

Divide into individual bowls and add dumplings. Sprinkle with shredded cheddar if desired.
