Pecan Chicken and Grapes Salad

Ingredients
  

  • 2 cups diced cooked chicken
  • 1 1/2 cups grapes cut in half
  • 1/2 cup chopped pecans I used Millican Pecan brand pecans
  • 1/2 cup chopped celery
  • 1/4 cup sliced green onion
  • 1/4 cup mayonnaise
  • 1 tbsp fresh squeezed lemon juice
  • 1/4 tsp salt
  • 1 tsp canola oil

Instructions
 

  • Mix together in a large bowl, chicken, pecans, celery, mayonnaise, salt and lemon juice.
  • Fold in onion, and grapes. Add oil. Chill for about 30 minutes before serving.

My Java Beef Flatbread Pizza makes a quick meal you will love. Flatbreads are a nice change from doughy type pizzas.

I blended a bit of Door County Wisconsin Harvest Blend grounds with the beef, peppers and onions as it fried. The smooth flavor comes through and goes so well with tomato and mozzarella.

Java Beef Flatbread Pizza

Cook Time 15 minutes
Servings 2 people

Ingredients
  

  • 2 each flatbread
  • 1 tablespoon vegetable oil
  • 4 ounces chipped steak
  • 1/4 cup red and yellow bell pepper slices
  • 1/4 cup sliced onions
  • 1 teaspoon ground coffee I used Door County Wisconsin Harvest Blend
  • salt and pepper to taste
  • 1/4 cup pizza sauce
  • 2 ounces shredded mozzarella
  • 2 ounces fresh mozzarella slices

Instructions
 

  • Preheat oven to 375 degrees, Lightly spray a pizza pan with cooking spray. Lay on 2 flatbreads. Top each with half the pizza sauce. Sprinkle each with half of the shredded mozzarella.
  • In a small fry pan, heat 1 tablespoon vegetable oil. Add steak, onions, peppers, coffee, salt and pepper. Fry over medium heat, stirring as needed until steak in thoroughly cooked and peppers and onions are softened.
  • Divide beef and pepper onion mixture between the 2 flatbreads. Add fresh mozzarella. Bake at 375 for about 10 to 15 minutes until bread is crisp but not burnt and cheeses have melted.

Vegan Pumpkin Cupcakes

Ingredients
  

  • 1/2 cup brown sugar
  • 3/4 cup pumpkin puree
  • 2 tbsp water
  • 1 tsp pumpkin spice
  • 3 tbsp vegetable oil
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sprinkles I use Sweets & Treats
  • frosting
  • 1 cup powdered sugar
  • 1 tbsp water
  • 1 tbsp shortening

Instructions
 

  • Cream together brown sugar and pumpkin. Stir in water and oil.
  • Sift together flour, pumpkin spice, baking soda, baking powder and salt. Fold into wet ingredients. Fill 9 cupcake paper lined muffin pan compartments, 3/4 full. Bake at 350 degrees for 15 to 20 minutes until inserted toothpick comes out clean.
  • Frosting: Stir together powdered sugar, shortening, and water. Frost cooled cupcakes and decorate with pumpkin and gold candies.
