I’m always leery of using a mandoline slicer to make thin cuts. I just feel  more in control with a knife blade.

You can make a meal out of a salad like this one. I enjoy a salad with the freshest ingredients.
A bit of cider vinegar brightens this dish and brings out the apple sweetness. Tangy mustard adds zing and helps bind the dressing.
Fennel and apple pair perfectly in this salad. Slightly salty pepitas round out the dish.
Pass me a fork, please!

Total Time: 15 minutes

Yield: 2 servings

Serving Size: 1 cup

Shaved Apple Salad

Ingredients

  • 1 cup apples, peeled and thinly sliced
  • 1/2 cup fennel, thinly sliced plus fronds for garnish
  • 1/4 cup chopped kale
  • 1/4 cup walnut pieces
  • 2 tablespoons pepitas
  • dressing
  • 2 tablespoons olive oil
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon whole grain mustard
  • 1/2 teaspoon honey
  • salt and pepper to taste

Instructions

  • Whisk together oil, vinegar, mustard, honey, salt and pepper. Set aside.
  • Toss together apples, fennel, kale and walnuts.
  • Told in dressing. Sprinkle with pepitas. garnish with fennel fronds if desired.

I love stuffing fruit and vegetables this time of year. Apples and squash are natural vessels for fillings. A firm baked apple holds it’s shape and adds a bit of sweetness and fall flavor to the dish.
Carve out the core and a bit more apple to form a cavity. Fill with the chicken sausage stuffing and bake uncovered for about an hour until the apple is soft but not mushy.
Precooked chicken sausage is a great time saver. Saute the celery and onions then crumble in the sausage. Add your broth, bread and seasonings and your filling is ready.

Cook Time: 60 minutes

Total Time: 1 hour, 15 minutes

Yield: 4 servings

Chicken Sausage Stuffed Baked Apples #AppleWeek

Ingredients

  • 4 medium-sized apples, peeled, cored and dug out (I used Envy Apples)
  • 1/2 pound cooked chicken sausage, diced
  • 1/4 cup diced celery
  • 1/4 cup diced onion
  • 1 tablespoon vegetable oil
  • 1/4 cup chicken broth
  • 1 cup bread cubes
  • 1/4 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  • Saute celery and onions in oil until soft. Add chicken sausage and broth. Bring to a boil, reduce heat and simmer until thoroughly heated.
  • Remove from heat. Add bread and seasonings.
  • Fill apples and pack tightly.
  • Spray baking dish with oil. Add apples and any additional leftover stuffing. Bake at 350 for approximately 1 hour until apples are soft but not mushy.

Apple Fritters #AppleWeek

Apple Fritters serve chunks of juicy apples in fried batter drizzled with vanilla icing. A delicious treat any time of day!

I grew up eating apple fritters that my Mom made in a big pot of boiling oil on the back stove burner. She also made funnel cakes the same way.
Drizzle in the batter and watch it like a hawk.
No thermometers ever. Not even for human fevers at our house. Wrist to the forehead, check for glassy eyes and flushed cheeks. Pure old school.

I have to admit I’m more comfortable with my thermostat controls on my mini fryer. I can do it old school but sometimes technology wins.

Lightly fried and drizzled with icing is my favorite way to eat them. You can dust these with powdered sugar too!

Apple Fritters #AppleWeek

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 4 to 6 servings

Serving Size: 1 each

Apple Fritters #AppleWeek

Ingredients

  • oil for deep frying
  • fritter
  • 3 tablespoons butter
  • 1/4 cup sugar (I used Imperial Sugar)
  • 1/2 teaspoon vanilla
  • 1 egg, beaten
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 to 3/4 cup milk
  • 1 cup apples, peeled and chopped
  • glaze
  • 1 cup powdered sugar (i used Imperial Sugar)
  • 1 to 2 Tablespoons water or milk

Instructions

  • Cream together butter, sugar and vanilla.
  • Add eggs and beat until fluffy.
  • Combine flour, baking powder and salt.
  • Alternate adding a bit of flour mixture with adding milk.
  • Stir in apples
  • Fry at 365 degrees, about 4 minutes on each side until golden brown.
  • Remove and to drain off excess grease place fritters on paper towels.
  • Mix together powdered sugar and water as needed to get drizzle consistency. Drizzle over fritters.

If you can’t find apple sausage, country sausage or breakfast sausage works as well. Remove meat from the casing. Add the diced apple, green onion, seasoning and a touch of maple syrup. So good!

Apple Pork Burgers

Ingredients

  • 1/2 pound ground pork or loose pork sausage
  • 1/2 cup diced apples
  • 1/4 cup diced green onion
  • 1/2 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste
  • 1 teaspoon oil to grease griddle (optional)

Instructions

  • Mix together all ingredients. Divide in half and form 2 patties.
  • Preheat griddle over medium heat. Lightly oil if desired.
  • Cook over medium heat, turning burgers once, until internal temperature reaches 160 degrees.
  • Serve on toasted buns with lettuce and dressing as desired.
