Grilled Asparagus Salad offers crisp, tender asparagus in a light lemon basil dressing. A perfect accompaniment for any BBQ meats.

Grilled Asparagus Salad Fresh Asparagus, lightly grilled adds a wealth of nutrition. Asparagus is an excellent source of vitamin Kfolate, copper, selenium, vitamin B1, vitamin B2, vitamin C, and vitamin E. It is a very good source of dietary fiber, manganese, phosphorus, vitamin B3, potassiumcholine, vitamin A, zinc, iron, protein, vitamin B6, and pantothenic acid.

  • The season is early/mid May – June
  • They are one of the only (and largest) domestic production regions for US grown asparagus. That means less food miles and fresher asparagus that isn’t coming from some other country.
  • The hand harvested spears are “snapped” versus cut. What that means is you get fresher, more usable asparagus with less woody end.
  • All asparagus is hand harvested and hand packed…that means handled with care.
  • Did you know that asparagus can grow 2” a day at the peak of the season.

Grilled Asparagus Salad

Grilled Asparagus Salad

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 4 to 6 servings

Serving Size: 1/2 cup

Grilled Asparagus Salad

Ingredients

  • 1 pound Michigan Asparagus
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons chopped shallots
  • dressing
  • 1 tablespoon fresh chopped basil
  • 1 tablespoon fresh squeezed lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon smoked salt

Instructions

  • Lightly oil grill with vegetable oil. heat to medium-high. Add asparagus and grill to crisp tender on all sides. Approximately 5 minutes total.
  • Chop grilled asparagus and add shallots and peppers. Toss.
  • dressing
  • Whisk together lemon juice, oil, smoked salt. Add basil. Toss salad with desired amount of dressing.

Today I thought a good, thick boneless pork chop should be on my dinner table. Pork holds up well to grilling. Boneless chops do take a bit longer to cook but it’s well worth the time.

Get a good sear on both sides then move to indirect heat or finish off in the oven.

I like topping meat with caramelized onions instead of fried onions. I reserve fried onions for cheese steaks only! Caramelizing onions in butter adds a sweet richness like no other.

Not Ketchup Smoky Date sauce goes well with grilled meat. You  can use it as a marinade, grill sauce or dipping sauce.

I like to lightly brush it on right after the sear and let it cook in. You can always add more when it’s off the grill.

Pull your pork off the grill, add onions, more Not Ketchup Smoky Date sauce and enjoy!

Meat Lovers Kebabs

The secret to grilling different meats together is the size of the pieces. Different meats need to reach different temperatures to be considered safe to eat.
Beef needs to be at least 140 degrees for rare. Pork 145 degrees and chicken 165 degrees. Cutting chicken smaller than the other meats is key. Always temp out your meat and allow for rest time. The internal temperature of meat will raise slightly after resting. Five to ten degrees total.
That’s another reason to pull that Thanksgiving turkey on time!
What about the bacon? There is no definitive temperature for cooking bacon. Thin cured meats like bacon will vary in cook times. The USDA recommends bacon be cooked until crisp and at least 140 degrees.
