Today Festive Foodies are celebrating Iced Tea for National Iced Tea Day! thank you Heather from Hezzi-D’s Books and Cooks for hosting our event!
Iced tea refreshes us on the hottest of days. It’s a simple drink to customize any way you want. You can add fruit, sweetener, alcohol or drink it plain. Caffeine or decaf you pick.
Chai tea blends start with black, green or oolong tea and add warm spices to the mix. Spices like cinnamon, ginger, cloves, black pepper and cardamom enhance the health benefits from this delicious treat.

Chai Tea Shushies
For my Chai Tea Shushies, I left out the milk. Milk is usually served with Chai tea. You can add it if you like. Try mixing it up with almond milk, soy or rice milk. it will freeze a bit differently than plain tea without milk. Try it both ways and let me know what works best for you!

Chai Tea Shushies #NationalIcedTeaDay

Ingredients

  • 4 cups water
  • 3 chai tea bags
  • sugar or honey to taste

Instructions

  • Brew tea in water. Steep and allow to set until reaching room temperature.
  • Pour into ice cube trays and freeze.
  • Crush frozen tea cubes in a blender until slush forms.
  • Pour into frosted glasses. Garnish with cinnamon stick if desired.

Notes

Freeze tea cubes for at least 6 hours before making slushes.

Smoked Brisket Potato Salad #BestAngusBeef

Summer means getting outside. I love summer so much I hate to come indoors. Even cooking takes on a different atmosphere.
I discovered the joy of grilling a few years ago. Yes, I’m a late bloomer when it comes to firing up the grill. I give the Chefs at Certified Angus Beef® full credit for inspiring me to give it a go.

If you grill, you totally get what I mean. First steak sizzling on the grill and I was all in!
Since then I’ve grilled many steaks, burgers, chicken, kebabs, veggies and fruit. Grilling adds a layer of flavor that you control. Marinades and rubs enhance meat and add to the char. So good!

Another way is to add a bit of wood to the fire. Gentle smoke adds subtle flavor to meats. Different kinds of wood give off different tastes. Popular varieties are hickory, mesquite, applewood and cherry.
I found I liked the taste of smoked meats. I was ready for the next step. I bought a portable smoker.

I admit I’m new to smoking meats. There are a few rules to achieving the “smoke ring” which is a coating formed by smoke penetrating the outer crust of the meat.

Here’s why you remove the bone before smoking brisket.

Smoked brisket is the ultimate smoked beef. You can slice it for sandwiches or shred it for barbecue.
Of course it also makes a great salad.

Smoked Brisket Potato Salad

Ingredients

  • 4 cups diced smoked beef brisket (about 2 pounds)
  • 4 cups diced cooked potatoes (about 6 medium potatoes)
  • 1/2 cup radishes, slivered
  • 4 green onions, thinly sliced
  • 2 tablespoons freshly chopped parsley
  • 1 head leaf lettuce, optional
  • Dressing
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons whole grain mustard
  • 3 teaspoons granulated honey
  • 1/4 teaspoon smoked salt

Instructions

  • Place smoked beef, potatoes, radishes, parsley and onion in a large bowl.
  • Whisk together oil, lemon juice, mustard, honey and smoked salt. Pour over beef and vegetable mixture. Toss to coat.
  • Serve alone or on lettuce bed.

Beefy Bacon Mac and Cheese is a recipe you can easily make your own.

It’s a great way to use leftover beef roast or steak. I used leftover smoked brisket. So good! If you don’t have access to smoked beef, you can still get a smoky taste by substituting smoked salt for plain salt.

Don’t forget the bacon adds a bit of smoky flavor too! You can also swap the cheddar for smoked cheddar or smoked Gouda.

The combinations are endless!

Beefy Bacon Mac and Cheese #nationalcheeseday

Ingredients

  • 1 cup dry macaroni, (I use medium shells)
  • 2 cups cooked beef, chopped (I used smoked brisket)
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup green onion, thinly sliced
  • Cheese sauce
  • 1 1/2 cups milk
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • 1 teaspoon dry mustard
  • 4 ounces cheddar, shredded
  • salt and pepper to taste

Instructions

  • Cook macaroni according to package directions. Drain.

  • Whisk together milk, cornstarch, butter, mustard, salt and pepper in a medium saucepan. Bring to a boil over medium-low heat. Boil about 1 minute, reduce heat and simmer, stirring constantly until thickened.
  • Remove from heat and whisk in cheese.
  • Add beef and macaroni to cheese sauce. Heat thoroughly.
  • Portion and sprinkle with chopped bacon and onions.

Burgers are tops on everyone’s grill list. There are so many ways to enjoy these juicy, handy sandwiches.
I grill often.

You can make just about anything on the grill. Pineapple, corn, potatoes even watermelon are easy to grill.

Today I’m focusing on kicking beef burgers up a notch.
An easy way to switch up the flavors is to change the condiments. I always offer the standards like ketchup, mustard, mayo, lettuce, tomato and onion. Mixing up the cheese selection transforms your cheeseburger from classic American to smoky cheddar or even a bit spicy with pepper jack.
Taking already made condiments and making tasty sauces is a great short cut.
Here’s some ideas:

  • Add Sriracha to ketchup for a spicier flavor.
  • Honey and mustard were made for each other. Experiment with different mustards to find your new favorite.
  • Pesto on burgers is a great change. Try adding mayo or roasted red peppers for a switch.

Roasted Garlic Mayo

Ingredients

  • 1 cup mayonnaise
  • 2 cloves roasted garlic, peeled and chopped
  • 1/8 teaspoon smoked salt (I use hickory salt)
  • 1 tablespoon sour cream

Instructions

  • Mix together mayonnaise, sour cream and salt. Add roasted garlic. Mix thoroughly. Store unused portion in refrigerator.

**To roast garlic, preheat oven to 350. Cut stem end off garlic, rub with oil, wrap in foil and bake until cloves are soft and golden brown. (about 30 minutes)
