Side salads are a must for any BBQ. I enjoy a bit of potato salad, mac salad or some kind of slaw with my burger, grilled chicken or steak.

Lemon Dill Tortellini Salad

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 6 to 8 servings

Serving Size: 1/2 cup

Ingredients

  • 1 12-ounce bag frozen tortellini
  • 2 tablespoons fresh dill plus sprigs for garnish
  • 1/4 cup roasted red peppers, sliced thin
  • 1/4 cup sliced green onion
  • 4 tablespoons freshly squeezed lemon juice
  • 6 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • zest from one lemon

Instructions

  • Cook tortellini according to package directions. Chill.
  • Whisk together oil, lemon juice, salt and pepper.
  • Toss peppers, dill and onion with dressing. Fold into tortellini. Sprinkle with lemon zest.
