Make the batter easy to spoon but not runny. Fill the doughnut tray about 1/2 to 3/4 full.

Bake the doughnuts for about 8 to 10 minutes at 400 degrees. Your doughnuts are ready when it lightly springs back when gently pressed.

Ingredients
  

doughnut

  • 1 1/4 cups flour
  • 1/2 cup sugar I used Dixie Crystals
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 cup milk plus 2 tablespoons
  • 2 tablespoons butter, melted and cooled
  • 3 tablespoons freshly squeezed orange juice (I used Melissa's Cara Cara oranges)
  • 1 teaspoon vanilla bean paste or extract

Orange Glaze

  • 1 cup powdered sugar (I use Dixie Crystals)
  • 2 tablespoons milk
  • 2 tablespoons freshly squeezed orange juice (I used Melissa's Cara Cara oranges)
  • 1 teaspoon orange zest
  • sprinkles (I used Sweets & Treats)

Instructions

  • Preheat oven to 400 degrees. Mix together, flour, sugar, baking powder and salt. In a separate bowl, whisk together milk, egg, orange juice, and vanilla.
  • Add wet ingredients to dry ingredients, Spoon batter into prepared donut baking tray, filing each shape from 1/2 to 3/4 full. Bake for 8 to 10 minutes until doughnuts spring back when lightly pressed. Cool in pan 3 to 4 minutes before removing doughnuts. Prepare glaze while doughnuts cool in pan.

  • Whisk together powdered sugar, milk, orange juice, zest.
  • Dip top of doughnut in glaze. Return to rack and sprinkle with sprinkles.

Taco Pie #PiDay #OurFamilyTable

Easy Taco Pie takes all the things we love about tacos and puts them in a quick biscuit crust. Ground beef, cheese, Pico de Gallo and a bit of  sour cream if you like. Part of #OurFamilyTable salute to Pi Day!

I used Bisquick mix for the crust but you can use and mix you like or homemade batter.

An 8-inch cast iron pan worked perfectly for my version of this recipe. You can use a casserole dish too if you like.

Precooking the beef ensures it’s totally cooked when put in the shell.  I like to melt shredded Colby and Jack cheese on top.

Pico adds fresh lime to brighten the dish. I like sour cream with lime zest to top it off. Hot sauce works too. Even chipotle!

Keep the bottom crust layer thin. Biscuit dough tends to really puff up. Check it about halfway through the bake cycle and remove a bit of dough if it seems too thick.

Ingredients
  

crust

  • 2 1/4 cups baking mix (I used Bisquick)
  • 2/3 cup milk

filling

  • 1 lb ground beef
  • 1 teaspoon taco seasoning
  • 1 cup shredded cheese (I used a jack, colby combo)

Pico de Gallo

  • 1/2 cup diced plum tomatoes
  • 1/4 cup diced red onion
  • juice and zest from 1 lime
  • Kosher salt to taste

optional garnish

  • sour cream, hot sauce, chipotle peppers

Instructions
 

  • Preheat oven to 425. Mix together baking mix and milk. Gently press a thin layer of baking mix into an 8-inch cast iron pan. Bake 8 to 12 minutes until crust is set and golden brown. Check about halfway through and remove excess dough if necessary to thoroughly bake.
  • While crust bakes, prepare filling. Cook beef and seasoning in a medium-sized skillet over medium heat until thoroughly cooked. Add meat to baked crust. Top with cheese. Return to oven for about 5 minutes until thoroughly heated and cheese melts.
  • Prepare pico. Add all pico ingredients together in a small bowl. Stir and allow to set to blend flavors. Top cooked taco pie with pico and garnish with sour cream, zest, hot sauce, chipotle peppers if desired.

Meyer Lemon Tahini Sauce #OurFamilyTable

Meyer Lemon Tahini Sauce works with meat, fish, or vegetables. Use it anywhere you want a nutty sesame kick. I like it as a dipping sauce too!

Sauces can make or break a dish. I don’t mean literally “break” the dish, at least I hope not! 🙂
A sauce can add depth of flavor. Sometimes it can bring the dish together by adding moisture to dry vegetables or meats. Sauces can be thin, almost like a glaze or thick and clingy.
Meyer Lemon Tahini Sauce can be either. You can thin it by adding extra Meyer Lemon juice or even regular lemon juice or a bit more water.
Black garlic balances out the sauce with a bit of sweetness. I add parsley for some texture and color. You can substitute cilantro if you like.
serve it on the thick side with fresh vegetables or toasted pita for a tasty appetizer.

Instructions
 

  • Mix together all ingredients in a 1-quart saucepan. Cook over medium heat until thoroughly heated. Sauce can also be served cold as a condiment or dipping sauce.

I’m a big fan of cheese. I can eat it as a snack as well as incorporated in dishes.
Fruit and cheese boards are fun. It can be a nice change from meat.

One of my favorite ways to enjoy cheese is cheese sauce.
Old Amsterdam Classic Gouda melts easily. It’s tangy flavor doesn’t get lost in a rich sauce. Classic Gouda pairs beautifully with steak.

Sweet potatoes cooked with onion then mashed with butter and cinnamon works with steak and cheese. You get a burst of umami, a bit of sweet and salty and tang from the gouda. Delicious!

Stacked Sweet Potato Steak with Gouda Cheese Sauce

Servings 4 people

Ingredients
  

Sweet Potatoes

  • 2 cups peeled and diced sweet potatoes
  • 1/4 cup diced onion
  • 2 tablespoons freshly squeezed orange juice (I used blood oranges)
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon Kosher salt

Steak

  • 1 pound skirt or flat iron steak cut into thin strips
  • 1 tablespoon vegetable oil
  • salt and pepper to taste

Cheese Sauce

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup milk
  • 1/2 cup shredded Old Amsterdam Classic Gouda

Garnish

  • 1/4 cup shredded Old Amsterdam Classic Gouda
  • orange zest
  • fresh thyme leaves

Instructions
 

Sweet Potatoes

  • Bring sweet potatoes and onions and enough water to cover it to a boil in a 2-quart saucepan. Reduce heat to medium. Cover and cook until tender, about 12 to 15 minutes.
  • Turn off heat. Drain and return sweet potatoes and onion to the burner. Add butter, orange juice, salt and mash. Fold in cinnamon and thyme. Keep warm. While sweet potatoes cook, prepare steak and cheese sauce.

Steak

  • Heat a medium-sized skillet over medium heat for about 1 minute. Add oil and heat until oil shimmers, about a minute. Salt and pepper steak strips. Add steak to pan in a single layer and fry about 1 to 2 minutes per side to reach desired doneness. keep warm.

Cheese Sauce

  • Add flour to a 1-quart saucepan. Cook over medium heat about 1 minute, stirring constantly. Add butter and continue cooking, stirring constantly to form a roux, about 2 to 4 minutes. Remove from heat and whisk in milk. return to stove, reduce heat to low-medium and cook, stirring constantly until sauce starts to thicken, about 2 to 3 minutes. Remove from heat and add cheese, stirring until melted in and thoroughly blended.

Assemble

  • Use a ring mold or just mound desired amount of sweet potatoes onto a plate. Next, drape steak over top. Add cheese sauce over steak. Garnish as desired with zest, thyme and shredded cheese. Sprinkle with additional cinnamon if desired.

Here’s a perfect salad recipe to try with Old Amsterdam Goat Gouda courtesy of Old Amsterdam. A healthy salad with radicchio and chicken and shaved Old Amsterdam.

Old Amsterdam Goat Cheese Chicken SaladRadicchio

This salad is packed full of vitamins! The black grapes are a delicious, sweet complement to the salty cheese. Ideal for leftover chicken, but if you don’t have any, you can also use chicken thighs.
60 minutes–Serves 4
Ingredients
•2 chicken thighs
•5 tablespoons olive oil
•4 radicchio stalks
•2 sticks of celery
•1 tablespoon mustard
•1 tablespoon mayonnaise
•1 tablespoon vinegar
•Salt and pepper
•1 head of curly endive
•A few sprigs of flat parsley
•2 handfuls of seedless black grapes
•A piece of Old Amsterdam
Season the chicken. Heat 2 tablespoons of olive oil in a thick-bottomed pan and fry the drumsticks so they are brown all over. Put the heat down to a low setting, add a splash of water and leave the chicken to cook for 30 minutes (you may need to add more water if the chicken gets dry). Leave it to cool and cut the meat into pieces.
Cut the radicchio stalks lengthways down the middle and remove the core. Then cut them into strips. Remove the strings from the celery sticks and slice them diagonally into thin rings.
Make a vinaigrette with the mustard, mayonnaise, vinegar, and a pinch of salt and pepper. Add the rest of the olive oil and beat it into a smooth dressing.
In a bowl, mix the radicchio, curly endive and celery and then add the dressing. Divide it between 4 plates, put the chicken and grapes on top, sprinkle with finely chopped parsley and finish with shavings of Old Amsterdam.
