Easy Sweet Asian Brussels Sprouts

Do you love Brussels Sprouts? Me too. Roasted, steamed, fried, shaved into salad, you name it, I’ll try it!
I recently had the pleasure of sampling a sweet Asian sauce version over these little cabbage cousins when I was in Alabama. Now this sauce was thick like glaze, sweet yet tangy with a hint of heat. A bit of onion dotted the plate.

Let me tell you, these were some of THE best Brussels Sprouts I’ve ever eaten!

I vowed try to make something similar back home.

These sprouts come close to the original with a bit of help from bottled Sweet Sour Sauce. You can find this sauce in some grocers and Asian markets. You can make your own with pineapple juice, ketchup, cornstarch, sugar, salt, rice vinegar and mustard.

Either way you’re in for a treat.

Start by cutting sprouts in half and coat with oil. spread evenly on a cookie sheet and roast at 350 for about 10 minutes, turning once until tender and charred.

Toss in Sweet Sour sauce and sprinkle with black sesame.

That’s it! Easy right? Enjoy!

Cranberry Almond Quick Bread Mix

I like to include key ingredients like special flours or blends that I grind myself. It saves your recipient from crawling the shelves of a health food store or specialty shop just to make your recipe.

A new loaf pan, potholder, wooden spoon, dish towel or other kitchen gadget is always a welcome addition too. You may be surprised to learn that all your friends and family don’t own every size baking dish, pie plate or cake pan out there. Who knew, right?

Grease a 9x4-inch loaf pan. Line with parchment allowing enough paper to cover sides and extend about 1 inch above rim. Set aside. Whisk together flours, psyllium and salt. Add cranberries. In a separate bowl, stir together melted butter, milk, honey and vinegar. Temper eggs into wet mixture. Stir together wet and dry ingredients. Pour batter into prepared pan. Sprinkle with almonds. Bake at 375 for

Add as many ingredients as you can to the kit. I add the dry ingredients including the flours (you can substitute entirely all-purpose flour if you like), a small jar of honey, craisins and nuts. You can add the salt to the flour, just remember to label it that way.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup teff flour
  • 1/4 cup sorghum flour
  • 1/4 cup psyllium
  • 1 teaspoon salt
  • 1 1/4 cups milk, warmed
  • 1/4 cup butter, melted
  • 2 eggs
  • 2 tablespoons honey
  • 1 teaspoon cider vinegar
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds

Instructions

  • Grease a 9x4-inch loaf pan. Line with parchment allowing enough paper to cover sides and extend about 1 inch above rim. Set aside.
  • Whisk together flours, psyllium and salt. Add cranberries.
  • In a separate bowl, stir together melted butter, milk, honey and vinegar. Temper eggs into wet mixture.
  • Stir together wet and dry ingredients.
  • Pour batter into prepared pan. Sprinkle with almonds.
  • Bake at 375 for 30 to 35 minutes until bottom is solid when tapped and inserted pick comes out clean.
  • Cool with paper in place on bottom on a wire rack. When completely cool, remove paper and wrap tightly.

Power Bowls are taking over breakfast, lunch and dinner meals. What’s a Power Bowl? Answering that is the easy part. A power bowl is a nutrient dense meal that fits in a single serving.
Most offer a high amount of fiber, antioxidants, Omega3 and protein.
My version for cranberry week has several proteins in the forms of tuna, quinoa, pepitas and hemp seed hearts. Fiber and vitamins from barley, pepitas and spinach. Antioxidant rich cranberries fresh and dried and blueberries dot the bowl.

Substitute and lean protein for the tuna or skip it altogether. Drizzle with a balsamic vinegar reduction to bring out the flavors.

Blondies are a super sweet dessert that benefits from the addition of tart cranberries. I like the texture of walnuts in this dessert. A bit of crunch goes a long way. Keeping it, “blond” I added white chocolate. Ha!

Dark chocolate brownies with nuts, black cherries, coffee or and so many more combos have a special place in my heart. My problem is I can’t quit with one. That IS a problem, right? Oh well, maybe not.

Cranberry Blondies

This easy dessert above can be adapted to use different fruits and fillings. When you find the combo that suits you best you just might have trouble eating just one. I know I do! 😉

Cranberry Blondies

 

Cranberry Blondies #CranberryWeek

Yield: 12 blondies

Serving Size: 1 each

Ingredients

  • 1 cup brown sugar
  • 1/3 cup butter
  • 1 cup flour
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 cup chopped fresh cranberries
  • 1 tablespoon powdered sugar
  • 1/4 cup chopped walnuts
  • 1/2 cup white chocolate chips, divided

Instructions

  • Melt butter and brown sugar together in a small saucepan. Cool slightly,
  • Whisk in egg, vanilla and almond extract.
  • In a separate bowl, whisk together flour, baking powder and baking soda. Add wet mixture.
  • Toss cranberry pieces in powdered sugar. Add to batter along with walnuts and 1/4 cup white chocolate chips.
  • Pour into a greased 8x8-inch pan. Bake at 350 for approximately 25 minutes until set and inserted toothpick comes out clean.
  • Melt remaining chips in microwave. drizzle over cooled blondies.
