Yankee Doodle Noodle Salad. A fanciful salad made with plain ingredients that will tickle taste buds.
I’m excited to be hosting this week’s Easy to Make Patriotic 4th of July Dishes for Sunday Supper!

Being patriotic means many things to many people. How we express it is totally up to us. Some people wave or display flags. Others go to service memorials. Some people just want to surround themselves with family and friends and pay homage to those who made it possible by enjoying the day.
How you spend July 4th is up to you.
Today we are focusing on the food!
According to Wikipedia, “Yankee Doodle” is a well-known Anglo-American song, the early versions of which date back to the Seven Years’ War and the American Revolution (1775–83).[1] It is often sung patriotically in the United States today and is the state anthem of Connecticut.[2] Its Roud Folk Song Index number is 4501.
The term Yankee Doodle was a British put-down referring to Colonists as lesser in wit as well as wealth.
“Yankee Doodle went to town
A-riding on a pony,
Stuck a feather in his cap
And called it macaroni.
Yankee Doodle keep it up,
Yankee Doodle dandy,
Mind the music and the step,
And with the girls be handy.”
The macaroni the song refers to are fanciful Italian-style dress clothes that were popular in Britain at the time.
Imagine a young man of meager means trying to emulate a wealthy landowner.
He sees a pigeon feather on the street. Maybe it fell from a Passenger Pigeon, a prolific bird at that point in time.
He bends to scoop it up. The young man twirls the feather between his fingers. It was rather plain for plumage but attractive just the same.
The young man picks his hat with the feather. His mood changes.
He imagines himself at a cotillion filled with music, food and young women. He dances hand in hand with a bejeweled beauty. Lightly clasped, finger to finger. They float around the dance floor. Even if it is only in his mind.
A Barrister ride by and can’t believe eyes. He calls out, “Why are you dancing, boy?” “Are these Yanks mad?””Look at Yankee Doodle Dandy.”
We may not have been grand but we were certainly full of spirit. That resilience to keep it up, strive for freedom and never quit is why we are celebrate Independence Day today.
So in honor of that patriotic tune I give you, Yankee Doodle Noodle Salad. Italian penne tossed in a sweet and tangy horseradish dill vinaigrette with cucumbers, radishes, onions, red bell peppers and horseradish cheddar.
Yankee Doodle Noodle Salad
Ingredients
Salad
- 2 cups penne pasta
- 1 cup chopped English cucumber
- 1/2 radish slices
- 1/2 cup chopped red bell peppers
- 1/4 cup chopped onions
- 1 cup diced horseradish cheddar (I used Cabot Horseradish Cheddar Cheese)
Dressing
- 1/4 cup olive oil
- 3 Tablespoons cider vinegar
- 2 Tablespoons sugar
- 1 teaspoon horseradish
- 1 teaspoon dill
- salt and pepper to taste

Instructions
- Cook pasta according to package directions. Cool.
- Mix together pasta and vegetables. Set aside
- Whisk together dressing ingredients. Pour over pasta mixture and stir to coat.
- Add cheese, toss and chill until ready to serve.
