Who doesn’t like sandwich cookies? Kids love sandwich cookies. What fun it is to twist them open and lick out the middle.
Okay, big kids like me like them too!

This month Fill The Cookie Jar is sending the kids off to school with cookies in their lunchbox and maybe a few for after school treats. Of course we get stash a few to enjoy for later.

August 19th is National Potato Day! What better way is there to celebrate this humble vegetable than with a sack full of tasty recipes!

I love potatoes! I could eat them at every meal.

One of my favorite ways to enjoy potatoes is in potato salad.

German Style Potato or in my case, PA Dutch style contains eggs, mayo and mustard.  Red Skinned Potato Salad is usually oil and vinegar based.

Both are delicious but I wanted to make something a bit different!

Bloody Mary Potato Salad infused all the great tastes of the cocktail without the alcohol.

Yukon Gold Potatoes with tomato, celery, bacon and horseradish. Just a squirt of lemon and dash of hot sauce for good measure.

Enjoy a bowl with a real Bloody Mary if you like!

 
Bloody Mary Potato Salad

Bloody Mary Potato Salad

Ingredients

  • 4 medium Yukon gold potatoes
  • 1/4 cup chopped celery
  • 1 Tablespoon minced onion
  • 1/2 cup mayonnaise
  • 1/4 cup tomato paste
  • 1 Tablespoon olive oil
  • 1 Tablespoon bacon bits
  • 2 teaspoons horseradish
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried celery flakes
  • 1/4 teaspoon celery seed
  • dash of hot sauce

Instructions

  • Boil potatoes until fork tender. Drain, cool and peel. Cut into 1/2-inch pieces.
  • Toss potatoes, celery, onion and bacon together.
  • Mix together mayo, oil, horseradish, Worcestershire sauce, celery flakes, celery seed and hot sauce.
  • Stir dressing into potato mixture to coat.
  • Serve garnished with celery leaves and extra hot sauce if desired.

    Happy Birthday, Isabel!

    What can you get someone on her birthday who does so much for us all year?
    How about a virtual birthday party!
    Isabel, thank you all you do for us! I thought I’d bring something to the party that you inspired me to try. Chorizo.
    I admit I has no idea what I was buying. Fortunately for me, our local Farmer’s Market has a butcher shop that gladly ordered a piece for me. Guess what?
    I love it!
    This cured version is perfectly seasoned. Flavorful with just the right amount of spices.
    Now what to do with it? Hmm…what pairs well with Chorizo, Isabel?

    Eggs of course!

    So in honor of your birthday I made this egg salad with bits of Chorizo, veggies and chives from my garden. I hope you enjoy it!

    Chorizo Egg Salad Cup

    Ingredients

    • 8 hard-cooked eggs, chopped
    • 2 ounces smoked Chorizo, chopped
    • 1 Tablespoon diced celery
    • 1 teaspoon diced red onion
    • 1 teaspoon diced fresh chives, plus extra for garnish
    • 1/4 cup mayo
    • 1 tablespoon spicy brown mustard
    • 1/8 teaspoon smoked paprika
    • 1/4 teaspoon salt or to taste

    Instructions

    • Blanch chorizo in just enough water to cover. Drain and reserve liquid.
    • Mix together mayo, mustard and paprika, set aside.
    • Mix salad ingredients together. Toss with dressing. Salt to taste.
    • If too dry, add a bit of reserved liquid to moisten.
    • Serve on bed of lettuce, as a sandwich or side dish.

    Cobb Salad Bar #WeekdaySupper

    It’s the Dog Days of Summer, so who wants to cook? Some days even the thought of standing over a grill makes me sweat.

    This week the Sunday Supper Movement wants you to turn off the heat and rev up the flavor!  Salads, sandwiches and wraps invite you to create endless combinations.
    Cold meals don’t need to boring. You can add some fun to mealtime by putting out make it yourself salad bars. One of my favorite salad bars is an oldie but goody. A Cobb Salad.
    Cobb Salad is named for Brown Derby owner, Robert Cobb. The story goes that one night back in the 1930’s Cobb’s appetite got the best of him and sent him on a quest in the kitchen for salad fixings. As we all know, the best salads, sandwiches and meals often originate from leftovers.
    He found some cold cooked chicken, avocado, bacon, eggs, cheese and veggies arranged on a bed of fresh chopped greens. This colorful food palette is considered the daddy of composed salads. Some sites include the dressing as a type of French while others list red wine vinaigrette.
    I say, “Eat what you like.” These flavors go well with any type of dressing. Better yet, skip the dressing and drizzle a bit of olive oil and a squirt of lemon.

    Ingredients

    • 1 head Red Romaine, chopped or 1 5-ounce bag mixed greens
    • 2 cups cold cooked chicken, chopped
    • 1 cup chopped hard-cooked eggs
    • 1 avocado, diced
    • 1 cup chopped bacon
    • 1 cup crumbled cheese (feta, bleu or Roquefort)
    • 1/2 cup sliced green onion
    • 1 cup croutons
    • 1 cup cherry or grape tomatoes

    Instructions

    • Fill salad bowl with lettuce.
    • Portion ingredients into individual bowls.
    • Serve with assorted dressings.
