Steak Caprese Salad #WeekdaySupper

Steak Caprese Salad has all the familiar ingredients you would expect to find in Caprese. There are ripe, juicy tomatoes, melt-in-your-mouth fresh mozzarella cheese and basil. Don’t forget the steak!

Salads and steak go so well together. Steaks like a 1/2-inch sirloin take about 7 to 11 minutes to grill, and 8 to 15 minutes to broil or pan fry.

The Beef Checkoff

Here are a few tips from The Beef Checkoff on grilling beef:

  • Marinate tender cuts 15 minutes to 2 hours, less tender cuts like flank steaks 6 hours but less than 24 hours.
  • Grill meat taken directly from the refrigerator. You do not need to bring a steak to room temperature.
  • Season with pepper and herbs only. Cook over medium heat, turning as needed with tongs, careful not to pierce meat.
  • Remember to wait to salt until after the steak is cooked. This practice helps keep the natural juices inside.

Use a meat thermometer to test for desired doneness 140 rare, 145 medium rare, 160 medium. Keep a close eye on the meat when it reaches 140 until it registers your desired temperature.
Remember after resting your steak for about 3 minutes, cut on the bias and against the grain to keep it tender.

Ingredients
  • 1 lb sirloin steak
  • 1 large tomato. thinly sliced
  • ½ lb ball of fresh Mozzarella, sliced
  • 3 cups mixed salad greens
  • 1 cup balsamic vinegar
  • olive oil for drizzle
  • salt and pepper to taste
  • ½ cup favorite marinade, optional
Instructions
  1. Place balsamic vinegar in a 1 quart saucepan and simmer over medium heat, stirring often until reduced by about ⅔ (about 15 minutes)
  2. While vinegar simmers, heat grill to medium heat. Season steak with pepper and grill to desired doneness. Add salt as desired. Transfer to board to rest.
  3. While steak rests, arrange lettuce, tomatoes and cheese slices.
  4. Cut steak into strips and arrange on the plate.
  5. Drizzle with oil then top with balsamic reduction.

Carrot Craisins Salad

Carrot Craisins Salad

Carrots and Craisins go together as well as the traditional carrots and raisins in this creamy side salad. If you look at the picture, you may think that there is a lot of mayo in this salad. Actually there is only a tablespoon of mayo. The thick, creamy texture comes from Greek yogurt.
I used a bag of shredded carrots to make this salad. What a time saver!
This is a very simple recipe that you can increase as needed.
A dash of celery flakes and a drizzle of honey round out the flavors.
You can mix a few raisins in too. I think golden raisins would look lovely in this salad!

Ingredients
  • 1 cup shredded carrots
  • ¼ craisins
  • ½ cup plain Greek yogurt
  • 1 Tablespoon Mayonnaise
  • 1 teaspoon dried celery flakes
  • 1 teaspoon honey or to taste
  • pinch of salt
Instructions
  1. Add carrots, craisins and celery flakes to a small mixing bowl.
  2. In another bowl, blend yogurt, mayo, honey and salt.
  3. Coat carrot mixture with dressing. Allow to marinate in refrigerator for at least an hour before serving.

Tomato Basil Soup Shooter

Tantalizing Trays, what a great way to describe this week’s Sunday Supper!  My Tomato Basil Soup Shooters fit right in with week’s theme. Who wouldn’t like a shot of tomato soup and bite of savory cheddar grilled cheese to start the party?

I recently started a new business hosting tasting parties and I’m always on the lookout for new ways to present small bites. I’m just as excited to serve tastes this way at home parties or a small get-together.

Appetizers, fruit and cheese, mini sandwiches and brownie bites arranged in groups or presented on boards and trays easily whets my appetite.

I like this better served cold like Gazpacho. You can serve these with a dash of hot sauce if you like!

My turkey baster makes filling the shooter cups fast and easy.

Ingredients
  • 6 cups fresh tomatoes, peeled and chopped
  • 2 cups vegetable stock
  • 1 cup celery, chopped
  • ½ cup onion
  • ¼ cup red wine (I used Cabernet Sauvignon
  • ½ cup basil, chopped
  • salt and pepper to taste
Instructions
  1. Place tomatoes, stock, celery and onion in a large saucepan. Bring to a boil. reduce heat and simmer uncovered for at least 30 minutes until vegetables are tender.
  2. Add wine and basil and continue cooking about 15 minutes to incorporate flavors.
  3. Puree with an immersion blender or cool slightly and puree in small batches using a conventional blender.
  4. Pour into shooter glasses and garnish with a basil sprig. Serve with grilled cheese squares.
