Pinot Noir Glazed Salmon would have been a hit with my Dad. Meaty fish with a glass of red wine for dinner. Maybe some pasta first of course.
My Dad was technically first generation Italian. He was born in United States territorial waters in 1909, on a ship about 100 miles off shore of New York.
I don’t have a lot of memories about my Dad, but I do remember that he had a glass of red wine with dinner. He always stopped home for a cooked lunch and he’d hurry back to work. Dinnertime was different. We sat at the table, my Dad, Mom and me.
We talked and ate. After dinner Dad had his cigar and then we’d watch some TV before bed time.

I chose Gallo Family Vineyard’s Pinot Noir for my salmon glaze. Gallo Pinot Noir is a medium bodied wine provides a smooth and light finish with aromas of cherry and sweet fruit flavors. This wine’s ripe berry and subtle earthy flavors stand up to meaty fish like salmon.

Pinot Noir, red raspberries, dark brown sugar, balsamic vinegar and a hint of cinnamon were reduced into this deep purple glaze. Isn’t it a gorgeous color?

For a smooth glaze, strain out the raspberry seeds.

Bake your salmon at 350 for about 20 minutes until internal temperature reaches 145.

Drizzle with glaze and garnish with raspberries.

Ingredients
  • 1 lb salmon filet
  • cooking spray
  • seafood seasoning
  • 1 cup Gallo Family Vineyards Pinot Noir
  • ¼ cup fresh or frozen raspberries
  • ¼ cup plus 2 tablespoons dark brown sugar
  • 1 teaspoon balsamic vinegar
  • ¼ teaspoon cinnamon
  • pinch of salt
  • raspberries for garnish
Instructions
  1. Spray a cast iron skillet, oven safe skillet or casserole dish with cooking spray.
  2. Place salmon skin side down in pan. Sprinkle with seafood seasoning. Bake at 350 for about 20 minutes and internal temperature reaches 145 degrees.
  3. Place wine, raspberries, ¼ cup brown sugar, vinegar, cinnamon and salt in a saucpan. Bring to a boil whisking constantly.
  4. Remove from heat and strain.
  5. Return glaze ingredients to stove add extra sugar if preferred and simmer until reduces to a glaze consistency.
  6. Drizzle over salmon and garnish with raspberries.

Ground turkey and mushrooms sounded like a great combo to me. I decided to kick my turkey mushroom burger up a notch with sun-dried tomatoes, olives and feta cheese.

My burger turned out moist and juicy. No need for added sauce, mayo or ketchup. A toasted ciabatta bun, tender baby lettuce and sliced green onion made this a perfect lunch.

Turkey Mushroom Feta and Olive Burger

Serves: 4 burgers
Ingredients
  • 1 pound ounces ground turkey
  • 2 cups ground mushrooms
  • 4 tablespoon sliced sun-dried tomatoes
  • 4 tablespoon feta cheese, crumbled
  • 4 tablespoon chopped black olives
  • 4 tablespoon butter or olive oil
  • salt and pepper to taste
  • 4 Ciabatta rolls toasted
  • baby lettuce
  • sliced green onions
Instructions
  1. saute mushrooms in oil. Salt and pepper to taste.
  2. Combine sauteed mushrooms with turkey, tomatoes, cheese and olives. Form into 4 patties.
  3. Spray a skillet with cooking spray. Fry patties over medium heat until golden brown and reach an internal temperature of 165 degrees.
  4. Serve on toasted buns with lettuce and onion.

Shrimp Salad with Lemon Basil Dressing #SundaySupper

Summertime means time for outdoor fun. Turn the oven off, fire up the grill. Eggs are a big part of my summer meals. From quick, light dinner salads to potluck potato salads and ice cream. Food safety is always a concern of mine.

One of my favorite ways to use eggs is in salad dressings. Since salads are such a big part of my summer meals, I’m always looking for new combinations. I love the taste of fresh basil and lemon. Together they make a smashing good dressing for my favorite salad protein, shrimp! Using pasteurized eggs takes the worry about Salmonella out of my creamy style dressings. Of course I keep normal food safety precautions for prep, transport and storage in mind.

Keeping meals simple in summer frees up more time to enjoy the best seasonal activities. Toss cooked shrimp in the Lemon Basil Dressing. Serve on a bed of greens with your favorite garnish. I added red pepper slices and tomatoes. Drizzle with dressing and serve!

Shrimp Salad with Lemon Basil Dressing

Ingredients
  • 1 lb cooked shrimp
  • 1 5-ounce bag mixed greens
  • 1 ripe tomato, wedged
  • 1 red pepper, cut into strips
Dressing
  • 4 Davidson's Safest Choice Eggs
  • 2 Tablespoons chopped fresh basil
  • 1 clove minced garlic
  • 1 Tablespoon fresh squeezed lemon juice
  • 3 Tablespoons honey
  • 1 teaspoon champagne vinegar
  • 1 cup olive oil
  • 1 tsp lemon zest
  • salt and pepper to taste
Instructions
  1. Arrange greens, tomatoes and pepper pieces on a salad plate.
  2. Place dressing ingredients in a blender. Puree about a minute until egg and oil emulsifies.
  3. Place shrimp in a bowl. Drizzle with dressing. Stir to coat.
  4. Place shrimp on salad.
  5. Drizzle salad with remaining dressing.
