  • 1 ounce 1 ounce vodka
  • 2 ounces Pumpkin Pie syrup I use Torani Pumpkin Pie
  • 6 ounce ginger beer
  • 1 ounce lemon soda
  • whipped cream optional

Instructions
 

  • Add together all ingredients except whipped cream. Pour over ice filled glass. Add whipped cream on top if desired and sprinkle with nutmeg.

A hint of vanilla makes this pumpkin pudding flavor pop! You can dust your serving with cinnamon or nutmeg for a warmer, fall taste.Pumpkin Pudding

I use an egg yolk instead of a whole egg. Yolks need to be tempered in to the mix just like whole eggs. This action prevents curdling. No one wants scrambled eggs in their pudding! Ha!
First whisk together milk, sugar, cornstarch, vanilla and pumpkin puree. Bring to a boil over mediunm heat, stirring constantly. Reduce to a simmer as it starts to thicken.
I add a few drops of the hot thickened pudding to a small bowl containing the yolk. Gently stir it together. No lumps should be made. Slowly whisk the tempered mixture into the thickening pudding. Cook over low heat, stirring constantly until thick. About 2 minutes.

Homemade candy can be a fun project. I like to make fudge. At Easter I make peanut rolled cream eggs.

But truth be told, making chocolate candy has always been intimidating. I especially worry about tempering the chocolate and keeping it smooth.

Mini Apple Candies

Mini Hand Shaped Apple Candies

Ingredients
  

  • 3 tbsp sweetened condensed milk
  • 2 tbsp butter, softened
  • 1 1/2 cups powdered sugar, divided
  • 1/2 teaspoon apple flavoring
  • 2 cups white chocolate candy melts, divided (I use Chocoley)
  • liquid red color (I use Chocoley)
  • liquid green color (I use Chocoley)
  • cinnamon stick pieces optional

Instructions
 

  • Whisk together condensed milk, butter and apple flavoring. Gradually add 1 cup powdered sugar. Coat your hands with powdered sugar and knead dough until it reaches the desired consistency. Your dough should be firm by not crumbly. Add more sugar if needed. Dough will be sticky. Form dough into a log and dust with powdered sugar then roll up in parchment paper. Refrigerate for at least an hour until firm enough to handle.
  • Warm red and green liquid candy coloring in a plastic bag in
    a warm water bath.
  • Melt 1 1/2 cups white chocolate in a double boiler or microwave, stirring until smooth. Add 2 to 3 drops of red color to achieve desired shade of red.
  • Melt 1/2 cup white chocolate in a double boiler or microwave, stirring until smooth. Add 1 to 2 drops green color to achieve desired shade of green. Pour colored chocolate onto parchment paper. Spread to desired thickness. Shape out leaves, remove excess chocolate and remelt as needed.
  • When dough is set, cut off pieces into desired size.
    Remember that your finished candy will be a bit larger with the candy coating
    Form the piece of dough into an apple shape. You can use the
    space between your index finger and thumb as a guide.
  • Dip the candy into the melted chocolate to coat on all sides. Tap off excess. Insert cinnamon stick piece and garnish with leaves if desired. Let set a minute or until chocolate starts to set up. Reshape as needed. Chill until fully set. Enjoy!

Applesauce whether store bought or homemade just tastes better when apples are in season. We have loads of apple orchards and apple festivals in our area. I can’t resist visiting one from time to time throughout harvest time.

My tassies are made with store purchased applesauce as a short cut. You can use any type you like. I added hazelnut flour and ground Narin’s Oat Grahams to make a nutty, graham type crust.

Narin’s Oat Grahams eaten alone are gluten free.

The dough is super easy to make. Add all the ingredients, knead, chill and roll into a rectangle. Divide dough into 12 equal pieces. Roll each piece into a ball and press inside a lightly greased mini muffin pan compartments.

Ingredients
  

  • crust
  • 1/3 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1/2 cup flour
  • 1/4 cup hazelnut flour I used Bob's Red Mill
  • 1/4 cup oat grahams I used Nairin's
  • cake
  • 1 1/3 cups sugar
  • 1 each egg lightly beaten
  • 1 3/4 cups flour
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup applesauce
  • 1/3 cup water

Instructions
 

  • dough: Add all the dough ingredients together, knead into a
    ball, chill. Roll chilled dough into a rectangle. Divide dough into 12 equal
    pieces. Roll each piece into a ball and press inside lightly greased mini
    muffin pan compartments.
  • Cake: Cream butter and sugar. Add egg, mix well. Add 1 cup
    of the flour, mix. In a separate bowl, mix together the rest of the flour,
    spices, baking powder, salt and baking soda. Stir into the butter mixture. Add
    applesauce and water. Stir. There will be extra batter. Bake extra batter as muffins
    at 350 degrees for 15 to 20 minutes.
  • Add about 1 teaspoon of batter to each of the tassie cups.
    Bake at 325 for 20 to 25 minutes until inserted toothpick comes out clean. Cool
    in pan on wire rack before removing tassies
