Minty Blueberry Iced Tea serves refreshing mint and sweet blueberries in one delicious drink. A great summer drink for one or summer party!

Minty Blueberry Iced Tea
Iced tea is my go to drink. Refreshing, cool and thirst quenching. What’s your favorite iced tea?
I’m a big fan of mint. A patch grows on the side of the house where it’s a bit shady. Sometimes I’ll add a few mint leaves to a cup of black tea or green tea. Mint makes a tasty tea by itself.
Minty Blueberry Iced Tea
Brewing fresh mint can be done several ways. You can make mint tea in a regular coffee maker. Add mint leaves with a filter and run the coffee maker normally. I don’t advocate making tea this way. As a result it takes too much mint to get any flavor.
Simply bring cold water and mint to a boil in a small saucepan, turn off the heat and let it steep for several minutes.
You can add blueberries directly to the water with the mint, then strain. For a more intense blueberry flavor, puree blueberries with a bit of water and add the puree to the tea.
A touch of honey can balance any tartness fresh blueberries bring to the drink.
That’s the fun of making tea! Experiment and find the perfect balance. Enjoy!

These orange cupcakes bring triple orange flavor to the table. I used fresh squeezed orange juice, orange extract and orange zest!

Ingredients

    cupcakes
  • 1 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 tablespoons butter, softened
  • 2/3 cup sugar
  • 1 tablespoon orange juice
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon orange extract
  • 2/3 cup buttermilk
  • 1/2 teaspoon orange zest
  • frosting
  • 2 cups powdered sugar
  • /4 cup shortening
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest for decorating

Instructions

    cupcakes
  • Whisk together flour, baking powder, baking soda, salt.
  • In a separate bowl, cream together sugar and butter. Add juice, buttermilk and extracts.
  • Stir in dry ingredients and zest.
  • Divide batter between 12 lined cupcake holders. Bake at 350 for approximately 12 to 15 minutes until inserted toothpick comes out clean.
  • frosting
  • Mix together powdered sugar, shortening and juice until fluffy. Add a bit of water if necessary to reach desired consistency.

To me, watermelon and summer are are perfect pair. Sweet and juicy watermelon tastes great on a hot, summer day.

  • 1 1/2 ounces vodka
  • 1/4 cup pureed watermelon

  • Fill a large rocks glass with ice.
  • Add ginger beer, vodka and watermelon puree. Garnish with an watermelon slice if desired.

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 6 to 8 servings

Serving Size: 1/2 cup

Ingredients

  • 1 12-ounce bag frozen tortellini
  • 2 tablespoons fresh dill plus sprigs for garnish
  • 1/4 cup roasted red peppers, sliced thin
  • 1/4 cup sliced green onion
  • 4 tablespoons freshly squeezed lemon juice
  • 6 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • zest from one lemon

Instructions

  • Cook tortellini according to package directions. Chill.
  • Whisk together oil, lemon juice, salt and pepper.
  • Toss peppers, dill and onion with dressing. Fold into tortellini. Sprinkle with lemon zest.
