I’m a big fan of Peanut Butter and Jelly any way I can get it. Late night sandwiches, peanut butter pancakes with jelly breakfast, even Peanut Butter Sandwich Cookies.

Peanut Butter and Jelly Bread Pudding is super easy to make. All you do is make a peanut butter and jelly sandwich,

Out comes a warm, gooey peanut buttery, sticky jelly smooth custard treat.
The hardest part is choosing which flavor of jelly to use! Me, I’m partial to strawberry.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 8 to 10 servings

Serving Size: 1 piece

Peanut Butter and Jelly Bread Pudding

Ingredients

  • 2 thick slices sourdough bread
  • 1/2 cup smooth peanut butter
  • 1/2 cup jelly (I used strawberry jam)
  • custard
  • 2 cups milk
  • 3 eggs plus 2 yolks
  • 1/2 cup light brown sugar
  • whipped cream optional
  • cooking spray

Instructions

  • Spray an 8x8-inch baking dish with cooking spray
  • Whisk together milk, eggs, yolks and brown sugar. Set aside.
  • Make sandwich with 1/4 cup peanut butter and 1/4 cup jam. Cut into 1-inch pieces.
  • Place pieces in pan. Pour custard over top. Dot top with remaining peanut butter and jam.
  • Bake at 375 for approximately 30 minutes until custard sets and inserted toothpick comes out clean.
  • Rest 10 minutes before cutting. Serve with whipped cream if desired.

Notes

Refrigerate unused portion. Can be reheated in microwave.

I decided to make a display instead of using Peeps in a recipe. These peeps are on a stick so they stand tall on their chocolaty popcorn mounds in a field of edible Easter grass. Actually it’s colored coconut!

Did I mention that I put dried banana chips in with the popcorn? I broke the chips into small pieces so it’s easy to eat. It’s a good substitution for nuts too.

Chocolate Popcorn Peeps Treats

Chocolate Popcorn Peeps Treats #SpringSweetsWeek

Yield: 8 cups

Serving Size: 1/2 cup

Ingredients

  • 8 cups popcorn
  • 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup chocolate chips
  • 1/2 cup banana chip bits
  • 2 cups sweetened coconut
  • food coloring

Instructions

  • In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage).
  • Remove from the heat. Add the butter, chocolate chips and banana bits. Immediately pour over popcorn and stir until evenly coated.
  • While mixture cools, divide coconut into several bowls. Color as desired.
  • When mixture is cool enough to handle, spoon tablespoonfuls of mixture onto parchment paper to cool.
  • Add a lollipop stick to Peeps and place on cooled popcorn. Set popcorn on coconut.

Super Moist Coffee Cake inspires to be the moistest coffee cake ever! The secret is sour cream in the batter.

I like to try making cakes in different sized pans just for fun.

Here I used a small tube pan, mini tubes and a traditional cake pan. I put them all in the oven together. Each one bakes at different times of course, so no napping!

You can add nuts if you like. Glazed or not glazed, it is entirely up to you!

I was in the mood for a good Jewish-style coffee cake. I have a lot of recipes for coffee cakes that turn out, let’s say, not so moist. Of course there is no coffee in the cake to moisten it. Dunking won’t do. I still feel I need the coffee to wash those down.
A put a plea out for help with a moist coffee cake recipe. My cousin, Rick came to my rescue. His wife, Penny shared her mom’s recipe. Penny said it is one of their family’s favorites.
After making it, I see why!

Super Moist Coffee Cake #SpringSweetsWeek

Ingredients

    cake
  • 1/2 lb butter
  • 1 cup sugar ((I use Dixie Crystals)
  • 4 eggs
  • 1 pint sour cream
  • 2 teaspoons vanilla
  • 3 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoon baking soda
  • topping
  • 1/2 cup sugar (I use Dixie Crystals)
  • 1/2 cup brown sugar (I use Dixie Crystals)
  • 2 teaspoons cinnamon
  • 1 cup chopped nuts (optional)
  • glaze
  • 1 1/2 cups powdered sugar (I use Dixie Crystals)
  • 2 to 4 tablespoons milk
  • 1/2 teaspoon vanilla

Instructions

  • Grease and flour a 9 1/2" tube pan, or a 9" x 9" pan.
  • Combine sugar, brown sugar and cinnamon to create topping. Add nuts if desired.
  • cake
  • Beat together the butter, sugar, and eggs. In a separate bowl, mix together the flour, baking powder, baking soda.
  • Add the flour mixture to the butter mixture alternately with the sour cream stirring after each addition.
  • Spread half the batter in the pan, and sprinkle with half the topping mixture. Repeat with the remaining batter and topping.
  • Bake at 350 for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven; if you've baked it in a tube pan, wait 10 minutes, loosen the edges, and carefully turn it out of the pan.
  • While cake cools prepare glaze. Add milk one tablespoon at a time until you reach desired consistency.
  • Place the cake right-side up (topping up) on a plate to serve. Drizzle with glaze if desired.

Mint Chocolate Yogurt Pudding

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 6 to 8 servings

Serving Size: 1/2 cup

Mint Chocolate Yogurt Pudding

Ingredients

  • 1/3 cup water
  • 1 cup brown sugar
  • 1/3 cup cocoa
  • 1/8 teaspoon salt
  • 1 3/4 cups milk, divided
  • 1/4 cup cornstarch
  • 1 cup yogurt (I used Nancy's yogurt)
  • 1 teaspoon vanilla
  • 1/2 teaspoon mint extract

Instructions

  • Stir cornstarch into 1/4 cup milk. Set aside.
  • In a medium-sized saucepan, over low heat, bring water, cocoa, brown sugar, salt and 1 1/2 cups milk to just under a boil (about 190 degrees).
  • Remove from heat and stir in cornstarch mixture, vanilla and mint. Return to low heat and cook until pudding starts to thicken.
  • Remove from heat. Stir in yogurt and portion if desired.
  • Pudding will thicken as it cools.

Notes

Cover with plastic wrap directly on pudding as it cools to avoid scum coating.
