Spicy Sweet Chocolate Cake

Ingredients

  • 1 cup sugar
  • 1 cup flour
  • 1/3 cup cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup buttermilk
  • 1/2 cup water
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon vanilla

Instructions

  • Add all ingredients into mixing bowl. Beat med-high for 3 minutes to aerate batter.
  • Pour into greased and floured cake pan. Bake at 350 until inserted toothpick comes out clean. (about 30 minutes)
  • Cool on rack. Frost if desired.

Valentine’s Day is just around the corner. Around here it’s difficult to get dinner reservations to our favorite places. Probably because I procrastinate when it comes to making reservations!

Truth be told, a cozy meal at home is always on my radar. One of my guy’s favorites is my homemade stuffing and chicken with country milk gravy. I confess I like it too. It’s simple to make. It tastes great. Plus I know what’s in it.
I am a snob when it comes to stuffing. I’m not big on surprise flavors and textures. I’ve been making slightly different versions of this stuffing for many years.

It’s easy to make your own stuffing. You can make it as moist or dry as you like! No surprises!

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 2 servings

Stuffed Country Chicken Breasts

Ingredients

  • 1 tablespoon vegetable oil
  • 2 4-ounce chicken breasts
  • stuffing
  • 4 cups fresh bread cubes (I use potato bread)
  • 1/4 cup diced celery
  • 1/4 cup diced onions
  • 1/2 cup butter
  • 1/4 cup chicken broth
  • 1/4 cup white wine
  • 1/4 cup half and half
  • 1 tablespoon parsley
  • 1/4 teaspoon nutmeg
  • salt and pepper to taste
  • gravy
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 tablespoon cornstarch
  • 1 tablespoon chicken bouillon

Instructions

    stuffing
  • Saute celery and onion in butter until soft.
  • Whisk together broth, wine, half and half, nutmeg, parsley, salt and pepper.
  • Add bread to butter mixture. Stir in broth mixture.

  • Pound chicken to 1/4-inch thickness. Drizzle baking dish with oil. Lay chicken flat in dish. Fill with stuffing and fold in half.
  • Bake at 350 until internal temperature reaches 165.(about 30 minutes)

  • Combine broth, cornstarch, milk and bouillon in a small saucepan. Bring to a boil over low heat. Cook to desired thickness. Pour over cooked chicken.

Smoothie drinks come in all flavors from fruity to green versions. You can use traditional dairy, almond, soy or coconut milk, bananas or just ice as a base.
Anything goes. Even a shot of your favorite liquor or liqueur.

Here’s a base smoothie recipe to get you started.

  • 1/2 cup vanilla yogurt
  • 1 cup ice
  • 1/3 cup milk
  • 1/2 banana
  • fruit, peanut butter or vegetables of choice

For my Gingerbread Smoothie I use gingersnaps as a flavor base with a touch of ground cinnamon or cinnamon liqueur.

  • 6 gingersnap cookies, crushed (about 1/4 cup)
  • 1/2 cup vanilla yogurt
  • 1/3 cup milk whole, skim, soy, or almond)
  • 1 cup ice
  • 1/2 banana
  • dash of cinnamon
  • cinnamon liqueur optional

Instructions

  • Place all ingredients in a blender. Pulse to desired consistency. Serve with whipped cream and cookie garnish if desired.

Ingredients

  • cookie
  • 1/2 cup peanut butter
  • 1/4 cup butter
  • 1/4 cup shortening
  • 1/2 cup sugar plus some for sprinkling
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • frosting
  • 1 cup powdered sugar
  • 1/4 cup strawberry jam
  • 1 tablespoon shortening
  • 1+ tablespoons water

Instructions

    cookie
  • Cream together butter, sugar, shortening, peanut butter. Add egg and vanilla.
  • In a separate bowl, whisk together flour, baking powder, baking soda. Add to wet mixture.
  • Chill dough for at least 30 minutes.
  • Divide dough into 12 equal pieces. Flatten on cookie sheet with a fork criss cross pattern. Sprinkle with sugar.
  • Bake at 375 for 15 to 18 minutes until set and slightly brown on bottom. Do not over bake. Cool on rack.
  • While cookies cool, prepare frosting/filling. Mix together powdered sugar, jam, shortening. Add enough water to reach desired consistency. Fill cooled cookies sandwiches.
