Nothing can beat the scrumptious simplicity of a well-made club sandwich — unless you take that sandwich and waffle it.

Makes 1 serving
• Preheat waffle maker
Tips
For the best results when toasting sandwiches in the waffle maker, choose a bread that is more dense than fluffy. Bread that is too soft and airy will break apart.
The bacon grease in the waffle maker will be extremely hot, so be very cautious. Depending on your waffle maker, you can either carefully turn it and drain off some of the grease or dab off some of the grease with a paper towel.
You may want to rotate your sandwich 180 degrees halfway through cooking if the bread is not toasting evenly.

2 slices bacon, cut in half crosswise
Butter, softened
2 slices sturdy white sandwich bread
Mayonnaise
2 slices deli roasted chicken
1/4 tomato, thinly sliced
1 leaf romaine or iceberg lettuce
1. Arrange bacon slices in waffle maker, spacing them apart. Cook for 4 to 5 minutes or until crispy. Transfer to a plate lined with paper towel. Wipe out waffle maker (see tip).
2. Butter one side of each bread slice. Spread mayonnaise on the other side of each slice. Place 1 slice buttered side down and top with chicken, bacon, tomato and lettuce. Cover with the other bread slice, buttered side up.
3. Transfer sandwich to waffle maker, as far from the hinge as possible. Close lid, gently pressing down, and cook for 1 to 2 minutes or until bread is toasted to your liking. Cut in half and serve immediately.

Morning Waffled Cinnamon Rolls
Waking up in the morning is so much better when the smell of warm cinnamon and brown sugar is wafting through the air. Baking cinnamon rolls in the oven can seem to take an eternity, but when you waffle them, they are ready in about 3 minutes. The dough needs an hour to rise, though, so if you are in a hurry, prepare it the night before.

Makes 20 rolls
• Electric mixer
Tips
The dough can be prepared through step 3 and refrigerated in an airtight container overnight.
If the sugar mixture gets messy in the waffle iron as you cook the cinnamon rolls, carefully use a damp paper towel or a moistened silicone pastry brush to wipe out drips between batches and prevent burnt sugar from sticking to the rolls.

Cinnamon Rolls
All-purpose flour
1 lb frozen bread dough, thawed 500 g
1/4 cup butter, melted 60 mL
2 tsp ground cinnamon 10 mL
2/3 cup packed brown sugar 150 mL
Nonstick cooking spray
Icing
1/2 cup confectioners’ (icing) sugar 125 mL
1/4 tsp butter, softened 6 mL
1 tbsp brick-style cream cheese, softened 15 mL

1/4 tsp vanilla extract 1 mL
2 to 4 tsp milk 10 to 20 mL

Lemon Basil Chicken #NielsenMasseyInspires

Lemon Basil Chicken slightly sweet, slightly tangy. A great dish to enjoy end of summer basil. Nielsen-Massey Pure Lemon Paste makes it easy.

We’re big fans of lemon here. I love the way lemon brightens any dish calling for citrus.
One of my favorite chicken dishes is Lemon Basil Chicken. Fresh basil and fresh squeezed lemon juice make the flavor pop. This was a perfect dish to test Pure Lemon Paste.

Nielsen-Massey Pure Lemon Paste is made with their Pure Lemon Extract. It contains the natural essence of the highest quality California lemons.
A great time-saver in the kitchen. Pure Lemon Paste allows you add a layer of sweet, bright, citrus flavor to many dishes, without the need to juice or zest.
My Lemon Basil Chicken was kicked up a notch by adding Pure Lemon Paste to the sauce. The slight sweetness added a welcome depth to the dish.

Total Time: 45 minutes

Lemon Basil Chicken #NielsenMasseyInspires

Ingredients

  • 2 (4 ounce) chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons Nielsen-Massey’s Pure Lemon Paste
  • 2/3 cup chicken broth
  • 1/4 cup fresh basil, chopped
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  • Heat oil over med-high heat in an oven proof fry pan. Season chicken with salt and pepper. Brown chicken on both sides.
  • Add Pure Lemon Paste, broth, basil, onion powder and garlic powder. Place pan in 350 oven for 15 minutes until internal temperature reaches 165.
  • Remove chicken to a plate. Cover with foil and rest.
  • Reduce pan juices to desired consistency. Pour sauce over chicken.

I’m always leery of using a mandoline slicer to make thin cuts. I just feel  more in control with a knife blade.

You can make a meal out of a salad like this one. I enjoy a salad with the freshest ingredients.
A bit of cider vinegar brightens this dish and brings out the apple sweetness. Tangy mustard adds zing and helps bind the dressing.
Fennel and apple pair perfectly in this salad. Slightly salty pepitas round out the dish.
Pass me a fork, please!

Serving Size: 1 cup

Shaved Apple Salad

Ingredients

  • 1 cup apples, peeled and thinly sliced
  • 1/2 cup fennel, thinly sliced plus fronds for garnish
  • 1/4 cup chopped kale
  • 1/4 cup walnut pieces
  • 2 tablespoons pepitas
  • dressing
  • 2 tablespoons olive oil
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon whole grain mustard
  • 1/2 teaspoon honey
  • salt and pepper to taste

Instructions

  • Whisk together oil, vinegar, mustard, honey, salt and pepper. Set aside.
  • Toss together apples, fennel, kale and walnuts.
  • Told in dressing. Sprinkle with pepitas. garnish with fennel fronds if desired.

I love stuffing fruit and vegetables this time of year. Apples and squash are natural vessels for fillings. A firm baked apple holds it’s shape and adds a bit of sweetness and fall flavor to the dish.
Carve out the core and a bit more apple to form a cavity. Fill with the chicken sausage stuffing and bake uncovered for about an hour until the apple is soft but not mushy.
Precooked chicken sausage is a great time saver. Saute the celery and onions then crumble in the sausage. Add your broth, bread and seasonings and your filling is ready.

Cook Time: 60 minutes

Total Time: 1 hour, 15 minutes

Chicken Sausage Stuffed Baked Apples #AppleWeek

Ingredients

  • 4 medium-sized apples, peeled, cored and dug out (I used Envy Apples)
  • 1/2 pound cooked chicken sausage, diced
  • 1/4 cup diced celery
  • 1/4 cup diced onion
  • 1 tablespoon vegetable oil
  • 1/4 cup chicken broth
  • 1 cup bread cubes
  • 1/4 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  • Saute celery and onions in oil until soft. Add chicken sausage and broth. Bring to a boil, reduce heat and simmer until thoroughly heated.
  • Remove from heat. Add bread and seasonings.
  • Fill apples and pack tightly.
  • Spray baking dish with oil. Add apples and any additional leftover stuffing. Bake at 350 for approximately 1 hour until apples are soft but not mushy.
