Pumpkin Brownies pack, snack and attack hunger in a big way! I love the way pumpkin makes these brownies moist without being gummy or greasy. A bit of frosting adds a touch of sweetness. The brownies will stay fresh for several days in the fridge. If they last that long!

Ingredients
  

  • 1 cup brown sugar I use Dixie Crystals
  • 3 tbsp butter softened
  • 3 tbsp pumpkin puree
  • 1 cup flour
  • 1 tsp vanilla divided
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup pecans
  • 1 cup powdered sugar I use Dixie Crystals
  • 2 tbsp water
  • 1 tbsp shortening

Instructions
 

  • Preheat oven to 350 degrees. Grease and flour a 8x8-inch pan.
  • Cream together butter, brown sugar, pumpkin and 1/2 tsp vanilla.
  • Sift together flour, baking soda, baking powder into a small bowl. Add dry mixture to wet mixture. Stir in pecans. Pour mixture into prepared pan. Bake for 15 to 20 minutes until inserted toothpick comes out clean. Cool in pan on wire rack several minutes before cutting.
  • Cream together powdered sugar and shortening. Add vanilla and 1 tablespoon of water at a time to reach desired consistency. Frost cooled brownies.
