Turnip Rutabaga Root Vegetable Beef Stew

Root Vegetables. Can You dig it?

I’m super excited to see root vegetables get their own event! I’m rooting for those veggies that grow underground! All time favorites like potatoes, carrots and onions. Lesser known mainstays like turnips, parsnips and rutabagas are represented too!
I spent many years as a Master Gardener through Penn State. One of my greatest joys was watching children “dig” for dinner. I would fill a large sandbox with sand, potatoes, turnips, onions, carrots, radishes and let the kids dig and collect vegetables for our pretend soup. Some kids would be amazed when they realized these veggies they love grew underground!

We would sample everything from carrot juice to potato candy!

If you carrot all, you can’t beet root vegetables for color, taste and texture! 😉

Turnip Rutabaga and Root Veggie Beef Stew blends tender beef with root vegetables creating a savory broth. This stew is rounded out with fresh kale, spinach and a bit of red wine.

Turnip Rutabaga and Root Veggie Beef Stew

Turnip Rutabaga and Root Veggie Beef Stew #SundaySupper

Yield: 6 servings

Ingredients

  • 1 pound beef cubes
  • 1 tablespoon olive oil
  • 2 quarts beef broth
  • 2 medium turnips, cut into 11/2-inch pieces
  • 1 rutabaga cut into 11/2-inch piece
  • 1 cup baby carrots
  • 1 medium onion, chopped
  • 2 cloves garlic chopped or 1 tablespoon garlic paste
  • 1 cup kale, chopped
  • 1/2 cup pinot noir
  • salt and pepper to taste

Instructions

  • Place beef cubes seasoned with salt and pepper and oil in 3-quart dutch oven. Brown beef over medium-high heat.
  • Reduce heat. Add broth and simmer about 1 hour until meat is almost done.
  • Add turnips, onion, carrots, garlic and rutabaga. Bring to a boil. Boil 1 minute and reduce heat to medium and simmer for 10 minutes. Add kale and wine and simmer until vegetables and meat are tender.

Welcome everyone! It’s time again to #FillTheCookieJar!

Every month our #FillTheCookieJar cookie loving group meets to share our best cookies and bars to fit the theme. This month we will be sharing cookies that are St. Patrick’s Day, Easter or spring inspired!


Irish Cream Cookies
I admit I get a bit sentimental around St Patrick’s Day. My close friend, James is a Pipe Major with his own bagpipe band. I love to hear the bagpipes. Going to Ireland and Scotland would be a dream come true!
I wanted to make a cookie using a popular Irish libation and or St. Patrick’s Day favorite celebration drink. I already make cakes and brownies with Guinness. Irish Whiskey found it’s way into sauces, marinades and pastries.
I still wanted to keep with the theme. Today’s cookies are inspired by the Emerald Isle. I originally was going to call these cookies, Chocolaty Blarney Stones. I like the sound of Irish Cream Kissed Chocolate Cookies better! Don’t you agree?

Irish Cream Kissed Chocolate Cookies #FillTheCookieJar

Yield: 12

Serving Size: 1 cookie

Ingredients

  • 1/4 cup shortening
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons Irish Cream Liqueur (like Bailey's)
  • 1/4 cup cocoa
  • 3/4 cup flour plus 2 tablespoons
  • 1/4 teaspoon salt
  • frosting
  • 1 cup powdered sugar
  • 2 tablespoons Irish Cream Liqueur
  • 2 tablespoons butter or shortening

Instructions

  • Cream together butter shortening and brown sugar. Mix in egg, yolk and Irish Cream
  • In a separate bowl, whisk together dry ingredients. Fold into wet ingredients.
  • Drop by tablespoonfuls onto ungreased cookie sheet. Bake at 375 for 8 to 10 minutes until set. Do not over bake. Cool completely before frosting.

  • Cream together frosting ingredients. Spread on cooled cookies.
