Applesauce Cake with Peanut Butter Swirls

Autumn is officially here. Shorter days and cooler nights. All the leaves showing their true colors. Vivid reds, oranges and yellows peeking through the trees. Time for pumpkins, hayrides, corn mazes and apple picking. Time to break out my flannel shirts, and pack away the shorts.
Oh, and the food!
Crockpot beef stew filling the kitchen with mouth-watering promises. Apple crisp and warm cider. Roasted Butternut and Acorn squash appears in soups or stuffed and pumpkin everything.

This week Sunday Supper welcomes fall and celebrates autumn flavors!

I couldn’t decide which symbol of fall foods to choose. So I did what I usually do when faced with a similar situation. Try to use a few together in one dish!

That explains the extra long title this week.

Applesauce Cake with Peanut Butter Cream Cheese Swirls!

I love applesauce in just about anything. By itself, baked in cake or added to pork chops with a bit of cinnamon of course!

Peanut butter reminds me of fall. That’s the time to harvest the roasting ones. When the leaves turn yellow. As far as cream cheese goes, do you really need to pair it with a season? I feel cream cheese is a 4 season treat.

I’m ready to sit down with a piece of this cake, some warm apple cider and a good book. There is plenty here. Will you join me? What can I get you to drink?

Applesauce Cake with Peanut Butter Cream Cheese Swirls #SundaySupper

Ingredients

    cake
  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup applesauce
  • cream cheese swirl
  • 6 ounces cream cheese, softened
  • 1/3 cup peanut butter
  • 1 egg
  • 1/4 cup sugar

Instructions

  • Cream together cream cheese, peanut butter, egg and 1/4 cup sugar. Set aside.
  • Cake
  • Cream together butter, sugar. Add egg and applesauce.
  • In a separate bowl whisk together flour, baking soda, cinnamon. Fold into wet ingredients.
  • Pour batter into an 8 x 8-inch greased and floured pan.
  • Drop peanut butter cream cheese by spoonfuls on top of batter. Run a knife through the batter to swirl in the cream cheese.
  • Bake at 350 for approximately 35 to 40 minutes until inserted toothpick comes out clean.

There is a CVS Pharmacy close by my home, 2 near work and another near my friend’s house. So many locations make CVS my first choice to swing in for a snack, cold drink or greeting card.

OREO Thins are in for me because these new cookies are lighter, crisper with just the right amount of filling. Not to sweet.

OREO were always THE go-to cookie for me. I’ve eaten OREO cookies all my life and a thinner less messy version is a great reward for making it through a busy morning or work day!
I work an early shift and afternoons are time to grab some coffee and a well-deserved treat. A time to relax and recharge before starting dinner and household duties.

Sometimes I’ll call an elderly friend of mine and offer to stop by on my way home with a cup of coffee and we chat. Today I planned a nice surprise for her on my next visit. Instead of a quick coffee break and rushing off, I thought we’d play a few hands of cards.

She’ll be so excited!

I found these Jumbo Face cards to take along. These will be a lot easier on her eyes, mine too! 😉

I need a cute way to transport my surprise.

These “Oh so fancy” folded napkins hold a special bonus. You guessed it. Delicious OREO Thins! I’m taking along some OREO Thins in Original and Mint because we will need something great to nibble on that’s not messy, right? I knew you would agree!

These napkin pouches are super easy to make.

Start with a square napkin. Fold the bottom up about 3 inches.

Bring the top down to meet the fold.

Flip over keeping the small end on the bottom
Fold both sides to the center.

Fold in half. Tuck edges under top layer to secure.

Now you have pockets for your OREO Thins, cards and more!

I added the OREO Thins, cards, notepad and pen. You can keep it folded as a pouch. You can also unfold the napkin and use it as you like!

A cute sticker made from a print it yourself label sheet says it all.

Freezer Meals Preserve Garden Bounty #TheRecipeReDux

Share your tips and tricks for making one – or more freezer meals. It’s the end of the gardening season for some of us; let’s store away that produce in heat-and-eat-from-the-freezer-meals. Show how convenient healthy freezer breakfast, lunches or dinners can be!

I want to share on of my favorite ways to save the harvest. These soups kits were originally part of another save the harvest post but I think you will find the information timely.

My Freezer Harvest Soup Kits make quick meal starters. Turn extra veggies, great roadside deals or Farm Market finds into easily stored kits. You can eat this soup as is or add cooked meat or pasta. What’s nice about this idea is you can use these in soups, casseroles or puree to make a veggie slurry to thicken sauces and soups.

For this particular one I used chicken stock, but water or veggie stock would be fine.

I don’t season the vegetables, that way it gives me more options for meals. If you are not using stock, a little salt and pepper is fine.

Cut your vegetables in sizes according to how fast they cook. You will only be blanching the batch for a few minutes.

I add the vegetables to a saucepan and only use enough liquid to cover by about 1/2 inch.

Bring the pot to a boil, reduce heat and simmer about 2 minutes. You want the veggies to be crisp tender. They will cook a little more after you remove them from the heat.

Transfer to a bowl and refrigerate to quick cool.

I like freezer bags over containers. Label and date the bags. I use the same method for filling the bags that I use to fill pastry bags.

Drape the bag over a cup or bowl and fill with cold mix.

Squeeze out excess air and seal. Lay the bags flat in the freezer until totally frozen.

Viola! Your soup kits are ready for your next culinary masterpiece!

I also like to roast vegetables and use those gems in dishes like Vegetable Lasagna.

Roasted Vegetable Lasagna

Cooked Lasagna can be cut and portioned into individual oven safe or microwave safe containers and reheated on busy nights for family members on the go. You can also freeze the entire dish and reheat it as a family sit-down meal.
