California Ripe Olives and raw veggies make a great salsa for tuna or chicken! A bit of crunch, slightly salty and so delicious! This meal has the good stuff you find in a Mediterranean diet, fresh vegetables, lean fish with no butter.

Tuna Steaks with Olive Salsa

Yield: 2 servings

Ingredients

  • 2 (6 to 8-ounce) yellowfin tuna steaks (1/2-inch to 3/4-inch thickness)
  • 3/4 cup California Ripe Olives, sliced
  • 1/4 cup bell peppers, diced (red, green or mix)
  • 1/4 cup diced tomatoes, seeded
  • 2 Tablespoons diced celery
  • 2 Tablespoons diced shallots
  • 1/2 teaspoon capers
  • 3 Tablespoons olive oil
  • 2 Tablespoons fresh squeezed lemon juice
  • 1/8 teaspoon dried oregano
  • salt and pepper to taste
  • 1 teaspoon lemon zest, optional

Instructions

  • Mix together California Ripe Olives, peppers, tomatoes, celery, shallots and capers.
  • In a separate bowl, whisk together oil, lemon juice, oregano, salt and pepper.
  • Pour dressing over olive mixture. Stir to coat. Refrigerate.
  • Heat a non-stick skillet over medium-high heat.
  • Season tuna with salt and pepper.
  • Add tuna steaks to hot pan. Sear. Cook approximately 6 minutes per side, turning once until reaching desired doneness. Tuna should be pink but not still red inside.
  • Top with Olive Salsa. Sprinkle with lemon zest if desired.

Labor Day celebrates the hard-working men and women who make up the workforce that drives the country. Many businesses honor workers by giving them the day off. We shouldn’t forget the brave men and women that fought to make workplaces safer and establish fair wages and decent hourly work weeks.
We are halfway through this 3 day weekend. There is still time to relax and send summer off with a bang!

I have a perfect less is more, fast sandwich to enjoy this weekend. An Ace of Clubs. This isn’t actually a recipe, its more like a suggestion for a terrific sandwich.
The Ace of Clubs is a king of the sandwich world to me. A triple-decker with layers of ham, turkey and Swiss stacked with bacon, lettuce and tomato. This beauty is on toasted honey wheat bread. I like horseradish mayo on mine. What will you put on yours?

    Sun-dried Tomato and Potato Crusted Baked Cobia #cobiacookoff #ad

    Have you ever tried Cobia?
    Cobia is a moist, flaky whitefish that lends itself to many recipe ideas.
    This was my first experience with this delicious fish. I found the texture similar to sea bass but not as sweet. I love the way it held its shape through the baking process. I tried cooking a piece with the skin intact and a piece without the skin. Both took about 20 minutes to cook, held their shape and stayed moist and flaky!
    The smoky flavor from the smoked sun-dried tomatoes and smoked paprika compliment mild flavor of the fish without overpowering it.

    I served my Sun-dried Tomato and Potato Crusted Baked Cobia on a bed of wilted kale with red bell peppers. Delicious!

     

    Sun-dried Tomato and Potato Crusted Baked Cobia

    Sun-dried Tomato and Potato Crusted Baked Cobia

    Prep Time: 20 minutes

    Cook Time: 20 minutes

    Total Time: 40 minutes

    Yield: 2 servings

    Ingredients

    • 2 6-ounce Open Blue™ Cobia fillets, skin removed
    • 1 cup freshly grated raw potatoes
    • 2 Tablespoon shallots, minced
    • 2 Tablespoons unsalted butter
    • 1/4 cup smoked sun-dried tomatoes, diced
    • 1 teaspoon prepared horseradish
    • 1/2 teaspoon capers, chopped
    • 1 Tablespoon olive oil, plus 1 teaspoon
    • salt and pepper to taste
    • smoked paprika (optional)

    Instructions

    • Soak sun-dried tomatoes in 1 Tablespoon olive oil, horseradish and caper for 15 minutes. While tomatoes soak, prepare potatoes.
    • Squeeze out any excess moisture from potatoes with paper towels
    • Heat a small skillet over medium-high heat. Add butter, potatoes and shallots. Saute until potatoes soften, (2 to 3 minutes)
    • Preheat oven to 375 Season Cobia with salt and pepper, set aside.
    • Place 1 teaspoon olive oil in a baking dish. Add Cobia.
    • Stir together potato and tomato mixtures. Place on top of Cobia. sprinkle with a pinch of smoked paprika if desired.
    • Bake uncovered for approximately 20 minutes until fish reaches 145 degrees, is opaque and easily flakes.
    • Serve with your favorite side dish, vegetable or salad.

    Notes

    Regular sun-dried tomatoes can be substituted for smoked sun-dried tomatoes.
