Creamy Chicken Pesto Salad #SundaySupper

I have green on my mind. Now I know that green can be interpreted in many ways. Spring, Saint Patty’s Day, being novice, being environmentally conscience, salad type veggies, envy and even Shrek was green. So for this week’s Sunday Supper I dug into my roots.
I was married to an Irishman and carried that name for sometime. Irish beer is popular for Saint Patrick’s Day recipes. Even though Guinness is my favorite beer (no promotion, just stating a fact), I didn’t cook anything for this event with it. But I will tip my hat to the clan.

My suppressed Italian side begged to be represented today. Pesto made with fresh, fragrant basil is about as green as you can get! Inhale that minty aroma and you can’t help but think spring, maybe even summer!

Creamy Chicken Pesto Salad

For this salad you can use some of your favorite jarred pesto or make it fresh. If you need a pesto recipe, try mine here .
To make it creamy, I add a little light mayo and light sour cream. Chicken works great with this dressing but shrimp is equally good.
Sprinkle with chopped walnuts and add a few croutons for the crunch factor. Of course you need to serve it on a bed of greens. Okay, you can make a sandwich with it too!

Ingredients
  • 1 4-ounce chicken breast, cooked and chopped
  • 1 Tablespoon chopped celery
  • ¼ cup light mayo
  • 2 Tablespoons light sour cream
  • 2 Tablespoons prepared pesto
  • 1 Tablespoon chopped walnuts
  • croutons (optional)
Instructions
  1. mix together chicken, celery, mayo, sour cream and pesto.
  2. Arrange on a bed of greens if desired and garnish with walnuts and croutons.
Notes
Recipe can be doubled as needed.

Mango Apricot Bread Pudding

I’m a fan of bread pudding. Unfortunately sometimes this can be a very heavy dessert. I wanted all the taste and richness of it without the calories and fat. That’s where California yogurt comes in.
According to http://www.healthyeating.org/ yogurt is a calcium powerhouse and a source of high-quality protein. Yogurt is nutrient rich because it is an excellent source of vitamins and minerals for its calories!
The nutritional and caloric contents of yogurt are similar to those of the fluid milk from which it is made. So, it is an important source of
calcium, protein, vitamins A, riboflavin, phosphorus and potassium.  In fact, one serving of yogurt contains about as much potassium as a banana (around 400 mg).
Yogurt is a unique food because it is a cultured milk product, made by adding certain “friendly” or “good” bacteria called probiotics to milk, skim milk, and/or cream to produce a thicker and more textured product. These “good” bacteria are live active cultures that are similar to the ones that already exist in the human digestive tract. They help maintain and restore the delicate balance of both “good” and “bad” bacteria necessary for a healthy digestive system.
I mixed in California yogurt instead of some of the California butter. California half and half replaced the California heavy cream.

I found this Brown Cow California yogurt to use as a snack or part of the meal. One bite for me one for the recipe. So smooth and creamy!

The finished product turned out so delicious! A hint of allspice and ginger laced the custard soaked bread. Big chunks of mango and bits of apricot. You could use plain yogurt or vanilla just as easily with this recipe.

Ingredients
  • 3 Tablespoons California yogurt
  • 1 Tablespoon California butter, plus extra to grease pan
  • ¼ cup California milk
  • ½ cup California half and half
  • 1 egg, slightly beaten
  • 2 Tablespoons sugar
  • 1 cup mango pieces
  • ¼ cup dried apricots, chopped
  • ¼ teaspoon ginger
  • ¼ teaspoon allspice
  • 3 cups sourdough bread, cut into 1½ inch pieces
  • extra California yogurt for serving
Instructions
  1. Preheat oven to 350 and grease a casserole dish with California butter.
  2. Combine California yogurt, California milk, California half and half, butter,sugar and spices in a medium saucepan. Cook over medium heat until hot but do not boil, stir constantly.
  3. Remove from heat and cool a few minutes.
  4. Add a teaspoon of mixture to egg to temper then slowly whisk egg into mixture.
  5. Add mango, apricot pieces and bread. Stir and allow bread to soak up the mixture. If it seems too dry, add a little more California yogurt.
  6. Bake for 30 to 40 minutes until browned and firm to the touch.
  7. Serve warm with additional California yogurt.

I love these Dessert Challenges! They make think of new dessert ideas for dinnertime. Oh, or snack time, breakfast, you get the idea!
My choice for this challenge is pretty simple. Sometimes you just need a bit of sweet and you don’t want to wait for something to bake.
I mixed a bit of honey in the crust and a drizzle on top of cooked Bartlett pears, vanilla yogurt and chopped walnuts.

In the quick department these tarts can be made in about 10 minutes. So easy. So good!

Ingredients
  • ¾ cup graham cracker crumbs
  • 4 Tablespoons butter, melted
  • ¼ teaspoon cinnamon
  • 2 teaspoons honey
  • 1 14-ounce can Bartlett pears, drained
  • 1 6-ounce container vanilla yogurt
  • ½ cup chopped walnuts
Instructions
  1. Mix butter, crumbs,cinnamon and honey together. Press into 2 4-inch tart pans.
  2. Fill tarts with pear slices.
  3. Spoon in yogurt and walnuts. Sprinkle with walnuts and cinnamon.
