Carnival Squash with Maple Sausage Stuffing #SundaySupper

Welcome to a Squashin’ Winter Sunday Supper! We talking all things winter squash with over 50 recipes and suggestions to make the most of this fall bounty.

Personally I love winter squash from spaghetti squash casseroles to stuffed acorn squash and everything in between. I like butternut and crookneck squash for hearty soups, stews and casseroles. Acorn, Carnival, kabocha and delicata are for stuffing.
When I heard about this week’s theme, I had a hard time picking out one squash to feature in a recipe. So I went for the prettiest one, Carnival!

Carnival Squash with Maple Sausage Stuffing


  • 1 large Carnival or similar winter squash
  • 1/2 pound loose sausage (apple, Italian, maple, Country)
  • 1 cup dry stuffing cubes
  • 1 apple, diced, (peeled or unpeeled)
  • 1 cup apple cider
  • 3 Tablespoons Maple syrup
  • parsley for garnish

Cut squash in half, scoop out seeds. Place halves cut side down in a baking dish. Add 1/2-inch of water and bake at 350 until outer skin leaves an indent when pressed (30-40 minutes).
While squash bakes, saute sausage, apples, cider and 1 tablespoon maple syrup until sausage is no longer pink. Add bread cubes.
Flip and fill squash. Return to oven and bake 5-10 minutes to blend flavors. Remove and drizzle with remaining syrup if desired and garnish with parsley.
