Fall flavors make me feel all warm and snuggly inside. The smell of cinnamon, nutmeg, cloves, and ginger fill the air.

It’s time for warm apple cider and the season’s first hot chocolate. Apple pie, funnel cake spice cookies and pumpkin bread.

Break out the crock pot and make applesauce!

All that hearty food makes me think about taking little bites.

What better little bite of fall is there than these Pumpkin Pie Tassies? Cookie-sized pumpkin treats for kids of all ages.

Pumpkin Pie Tassies

Yield: 24

Serving Size: 1 each

Ingredients

    crust
  • 1/2 cup softened butter
  • 3 ounces cream cheese
  • 2 tablespoons sugar
  • 1 cup flour
  • filling
  • 3 ounces cream cheese
  • 1 egg plus 1 yolk
  • 1/4 cup softened butter
  • 1/4 cup pumpkin puree canned or homemade
  • 2 tablespoons brown sugar
  • 1/4 teaspoon pumpkin pie spice

Instructions

  • preheat oven to 350
  • crust
  • beat together butter, cream cheese and sugar. add flour to form a soft dough. Form into 24 balls. Chill for a few minutes.
  • Press balls into ungreased mini muffin cups to fill bottom and sides.
  • filling
  • beat together butter, cream cheese, pumpkin, and brown sugar until fluffy. Add egg, yolk and pumpkin spice.
  • Fill cups. Bake at 350 for about 15 minutes until filling is set and crust is browned. Do not overbake.
  • Cool on rack in tin for about 5 minutes before removing. Cool tassies to room temperature then chill for 1 to 2 hours before serving.

Did you know that October 4th is National Taco Day? How exciting is that?! Tacos are the best. There’s so much that you can do with them, from what you fill them with to the kind of shell that you put them in! Not to mention, they’re easy on a budget and definite crowd-pleasers. So, for this Sunday Supper, let’s have a taco fiesta! Bring your best easy taco recipes to the table, and we can celebrate National Taco Day together. I want to know what you put in your favorite taco recipes!

Warm spices sneak their way into my dishes this time of year. Cinnamon is my go to warm spice. It pairs with meats, makes killer desserts and flavors drinks like no other spice can.
Mixing cinnamon with cumin, garlic, chili and salt makes a great rub for beef. Not too spicy. I used a Certified Angus Beef ® brand ribeye. Simply delicious!
I added a mild version of Pico de Gallo to get that taco taste.
Why stop there?
Kick it up a notch. Add avocado slices and lettuce.

Serving Size: 1 each

Ingredients

  • 4 6-inch taco shells
  • 1 12 to 16 ounce ribeye (I used Certified Angus Beef ® brand)
  • 1 avocado, sliced
  • 2 cups lettuce
  • rub
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • pico do gallo
  • 1 cup chopped tomato
  • 1/4 cup diced red onion
  • 1/4 cup diced green pepper
  • juice from 1/2 a lime
  • salt and pepper to taste
  • 1/2 a jalapeno diced (optional)
  • 1 teaspoon cilantro (optional)

Instructions

  • Combine rub spices: cinnamon, cumin, garlic, chili and salt. Rub onto steak.
  • Heat oil in small skillet. Place steak in hot oil. Cook to desired doneness. Rest 5 minutes then slice.
  • Mix together tomatoes, onion, peppers and lime juice.Season with salt and pepper.
  • layer lettuce, beef, avocado and pico in a taco shell . Drizzle with lime or serve with salsa or sour cream.

Fall is here! Cooler weather inspires me to start baking. That doesn’t mean I have more time too. So sometimes a mix can come in quite handy.

For my Pumpkin Spice Peanut Butter Bars I used Krusteaz® Pumpkin Spice Cookie Mix.

Follow the mix directions on the box and add 1/4 cup peanut butter. Spread into a greased 8×8-inch bake pan. Top with chopped walnuts and pepitas.
Bake for 20 to 25 minutes until inserted toothpick comes out clean.
Cool in pan then cut into 16 squares. Drizzle with included Vanilla Spice Glaze mix.
It’s that easy!
