Eggnog Pie

Easy no bake Eggnog Pie made with just 5 ingredients. Mix, chill and serve!

Do you love eggnog? Maybe you just like eggnog but never had it as anything but a glassful around the holidays? If either is the case, this Sunday Supper event will shed light on new ways to enjoy that eggnog flavor!

I’m a fan of eggnog and even occasionally make my own around the holidays. I’ve even made eggnog pancakes with a spicy cranberry syrup.

Eggnog Pancakes Cranberry Syrup

For today’s Sunday Supper I was thinking about eggnog in pie. Creamy custard type filling in a traditional crust.

I searched the net and several cookbooks for a recipe that wouldn’t turn out with a soggy crust.

This version is a combines instant vanilla pudding, eggnog and whipped cream or non-dairy frozen topping if you prefer. I use a prebaked pie crust instead of a graham cracker base.

Of course if you want to make a closer to scratch version you can use homemade pudding made with eggnog and fold in the whipped cream before it sets.

Have fun adding your own twist to this recipe. I added a touch of rum, well just because!

Ingredients

  • 1 prebaked pie crust (purchased or homemade)
  • 1 box instant vanilla pudding
  • 1 2/3 to 2 cups eggnog (according to pudding mix instructions)
  • 1 cup whipping cream or 8 ounces thawed cool whip type frozen topping
  • 1 teaspoon rum extract
  • nutmeg for garnish (optional)

Instructions

  • Beat 1 cup heavy whipping cream to form stiff peaks. Set aside.
  • Whisk together pudding mix and eggnog and rum extract. Fold in 1 cup whipped cream.
  • Pour mixture into prepared pie crust. Dust with nutmeg if desired.
  • Use remaining whipped cream to decorate pie.
  • Chill at least 2 hours until set.

Lebkuchen-Spiced Molasses Cookies

Yield: 12 cookies

Serving Size: 1 cookie

Buckwheat honey gives these cookies a molasses flavor. The oil in the nut flours add a bit of moisture, keeping the cookie soft and chewy.

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup hazelnut flour
  • 1/4 cup plus 2 tablespoons almond flour
  • 1/2 teaspoon cocoa
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1/2 cup buckwheat honey
  • 2 tablespoons butter
  • 1 egg
  • 1/2 cup dried candied fruit
  • powdered sugar for dusting

Instructions

  • Whisk together flours, cocoa, baking powder, baking soda, salt and spices. Set aside.
  • Cream together butter and brown sugar. Add honey and egg. Add fruit.
  • Stir in dry ingredients.
  • Wrap dough in wax paper and roll to 1/2-inch thickness. Chill for at least one hour.
  • Unwrap dough and cut into 2-inch cookies. Bake at 350 for approximately 20 minutes until set and golden brown.
  • Cool on rack and dust cooled cookies with powdered sugar.

Melting Snowmen #ChristmasCookies

Melting Snowmen use a basic chocolate cookie and dress it up a bit!

Frost the cookies with white chocolate. Add mini peanut butter cup pieces for the hat, mini chocolate bits for eyes and orange sprinkles for a carrot nose. Easy, right?

Here is a recipe for the cookie. I’d love to see your version of a melted snowman!

Melting Snowmen

Yield: 20

Serving Size: 1 cookie

Ingredients

  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup cocoa
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp baking soda
  • 1 egg
  • 1/4 cup milk
  • 1/2 tsp vanilla
  • 1 1/2 flour
  • 1 bag vanilla candy melts
  • 1 bag mini peanut butter cups
  • 1/4 cup mini choc chips
  • orange sprinkles

Instructions

  • Cream together shortening, peanut butter and brown sugar.
  • In a separate bowl, whisk together flour, cocoa, salt, baking powder, baking soda. Add to creamed mix.
  • Add egg, milk and vanilla.
  • Shape dough into 20 balls. Bake at 350 for about 10 minutes until set.
  • Melt white chocolate candy. Frost cooled cookies and add peanut butter cup pieces for hats, sprinkle for a nose and mini chips for eyes.
