Rote Grütze

Rote Grütze or “red fruit pudding” is a German dessert served with vanilla cream sauce. Bright, sweet and delicious!

This week Sunday Supper celebrates Octoberfest with all the foods and flavors of German cooking.
This week was a bit of a challenge to find a recipe to participate. Not because I don’t eat German food, but because I’ve posted about so many of my favorites already!
I love the flavors of fall used in German cooking. German baked goods show off apples and cinnamon. Harvest time turns the garden bounty into preserved goodies like chow chow, jams and of course, sauerkraut.
Fall is the time to make sausage, wursts and pork roasts too.
Don’t forget the tasty beer known as Octoberfest. Märzen lagers with warm flavors of caramel, orange and nutmeg. Most are a bit sweet and some of my favorite beers.
I found several recipes for Rote Grütze on the internet. Traditionally this dessert is made with 2 red fruits, one being currants. The vanilla sauce can be custard, pudding or I found recipes that dollop it over ice cream.
Strawberries and raspberries are the stars of this version. I used a sweet red wine and cinnamon to balance the flavor. Vanilla pudding makes this an easy treat.

Rote Grütze (Fruit Pudding)

Ingredients

  • 6 cups of red berries (raspberries, cherries, blackberries, red currants, etc)
  • 3/4 cup red wine (I sued Gallo Sweet Red)
  • 1/3 cup sugar
  • 1 cinnamon stick
  • 1/4 cup cornstarch
  • 2 Tablespoons of water (or lemon if more tartness is desired)
  • Vanilla Pudding

Instructions

  • In a large saucepan, combine berries, wine, cinnamon stick, and sugar. Cook over low heat until berries are very soft but still have texture, about 20 minutes.
  • In a small bowl, whisk cornstarch and water until dissolved. Add starch mixture to the berries and stir well to avoid lumps. Simmer for another 3 to 4 minutes. Remove cinnamon stick, and pour the berry mixture into a bowl or container.
  • Let cool to room temperature, about 30 minutes, then cover and thicken in refrigerator for at least 2 hours, up to overnight.
  • Serve with pudding, ice cream or with vanilla flavored sauce.

That’s Bananas! Viki’s Granola Banana Granola Pops #ad

I’m a granola fan from way back before it was “cool”. Bananas are also one of my favorite fruits. So when a representative from Viki’s Granola showed me their latest mix, well, I went bananas! I definitely wanted to try it!

This granola has a subtle sweetness I found goes as well with plain yogurt as chocolate ice cream. I could liven up cereal too with a sprinkle. That chocolate ice cream with chocolate chunks was my favorite for a combo. Here’s a cool recipe from Viki’s Granola for banana lovers everywhere.

Ingredients:

  • 4 Bananas
  • 3 tablespoons Viki’s Banana Walnut Granola
  • 6 ounces dark chocolate chips or shards
  • 8 Popsicle sticks

Directions:

Peel, cut bananas in half crosswise and insert Popsicle sticks.  Place on a parchment-lined tray, cover with plastic wrap and freeze for about 3 hours. Place Viki’s Banana Walnut Granola into a shallow dish. Melt chocolate in a double boiler over slightly simmering water, over low heat, constantly stirring. Pour the chocolate into a tall glass. Dip each banana into the chocolate and roll in the granola straightaway. Place on a parchment-lined tray. Serve immediately or wrap individually in parchment paper or plastic wrap in the freezer.

Carrots are the star of this soup. Ginger adds a bit of zing. Fresh squeezed orange juice makes it tangy sweet.
How do you feel about meatless meals? We try to eat at least one meal where veggies are the center of attention. Sometimes I skip the eggs, butter and milk too.
Today Sunday Supper sets its focus on celebrating World Vegetarian Day!
Salads make an easy veggie meal. You can add fruit to brighten up the plate. Spinach and Strawberry Salad is one of my favorites!
Soup is another easy way to get your veggie meal. I love potato soups, rustic tomato and split pea. Yum!
Butternut squash is coming into season just in time for soup too.
I like the flavors of carrots, ginger and orange together. Try this combo as soup and let me know if you agree!

Orange Ginger Carrot Soup #SundaySupper

Yield: 8 to 10 servings

Serving Size: 1 cup

Ingredients

  • 2 pounds baby carrots
  • 4 cups vegetable broth
  • 1 medium red onion chopped
  • 2 teaspoons dried ginger
  • salt and pepper to taste
  • 1/2 cup freshly squeezed orange juice.
  • 1 tablespoon orange zest

Instructions

  • Add carrots, onion, broth and ginger to a 3-quart saucepan. Cook until carrots are soft but not mushy.
  • Stir in orange juice, zest, salt and pepper.
  • Puree in small batches. Serve warm or chilled.
