Healthy Recipes the Family Will Love #ChooseDreams

Sometimes I hesitate when I see a good recipe. Not because of the cost or weird ingredients, but because of my guy’s aversion to new food combinations. He tasted broccoli for the first time at age 51. Weekly meals for decades consisted of Meatloaf Monday, Taco Tuesdays and so on. You get the picture. I seldom repeat a meal over the course of several months. Fortunately for us, he has come a long way.
I can’t complain about what he eats on a daily basis. Breakfast included whole grain cereal and lunch consists of yogurt and raw veggies. He also enjoys nuts for snacks.
Healthy recipes are very important to me. Kicking nutrition up a notch in our meals can be a challenge. So here are some tips I’ve found helpful.

    I love summer but sometimes I just need a break from the heat. This week the Sunday Supper Group is just chillin’. We’re beating the heat with cool meal ideas.
    Do you do many cold meals in the summer? I personally make a lot of salads and occasionally cold soups. Corn Gazpacho is one of our favorites!

    This easy Tuna and Potato Salad will satisfy you without leaving you feeling stuffed. I used a light lemony vinaigrette and half yukon gold and the other half white potatoes. Use what you like, its all good!

    Tuna and Potato Salad

    Ingredients
    • ½ can tuna 2.5 oz
    • 2 medium potatoes cooked and cut into 1-inch pieces
    • 1 hard boiled egg cut into ½-inch pieces
    • ¼ cup fresh peas
    • 1 teaspoon dried celery flakes
    • 2 tablespoons olive oil
    • 1 tablespoon red wine vinegar
    • Lemon pepper
    • Lemon zest
    Instructions
    1. Whisk together oil, vinegar, lemon pepper,lemon zest, set aside.
    2. Mix together potatoes, egg, tuna, peas and celery flakes.
    3. Coat with dressing and serve alone or over a bed of greens.

    Hopsfest 2014 Bethlehem Beer Festival

    I like beer. If I had to pick a favorite way its brewed, I would have a problem. I like most types of beer from pale ale to stout. I’m far from a connoisseur I just know what I like. But I’m always open to suggestions. 😉
    So I was thrilled when I received tickets from WDIY Lehigh Valley Community Public Radio to the first annual Hopsfest held in Bethlehem, PA, sponsored by Celtic Cultural Alliance!

    Hopsfest is an event celebrating craft beers from around the world. We got to sample so many great beers under the three tents. There were 115 beers from 55 vendors advertised.

    The party spilled outside around the grounds where snack bowls were set up. You could also purchase food at onsite venders.
    Some people bought pretzel necklaces. The idea was to clear your palate by munching a pretzel between sampling.

    Fruited beers seem to be some of the most popular. I admit the Pineapple Hard Cider by Ace was my favorite. We even went back to “taste it again”. 😉

    There are many beers I didn’t get to try. Some ran out early. Also I was drinking in moderation and limited myself to the number of samples. I’m looking forward to Hopsfest again next year!
