Pistachio Chicken Apple and Avocado Salad

Yield: 2 servings

Serving Size: 1 cup

Ingredients

  • 5 ounces cooked chicken,diced
  • 2 ounce shelled whole Wonderful Pistachios, divided
  • 1/2 cup diced Granny Smith apple or tart apple
  • 1/4 cup diced avocado
  • 1/2 teaspoon lime juice
  • 1 teaspoon honey
  • 2 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/16 teaspoon cayenne pepper
  • red leaf lettuce, optional

Instructions

  • Place chicken, apple and avocado in a bowl. Toss.
  • Place one ounce Wonderful Pistachios in a resealable bag. Gently smash into fine pieces with a mallet or rolling pin. Add to chicken mixture.
  • Mix together oil, lime juice, salt and cayenne. Add to chicken mixture.
  • Arrange salad over lettuce. Sprinkle with remaining whole Wonderful Pistachios.

For a lot of families, a “family dinner” doesn’t mean cooking for four or more people! It can be difficult to find recipes that cater proportionally to cooking for just two people. For this Sunday Supper, we’d like to bring Simple Dinner Ideas for Two back to the table! Cooking for family is important no matter the number of people sitting down to eat.
I like cooking for my guy and me. He really is a good sport because he never knows what’s for dinner.
Families of food bloggers can relate. I do keep his dislikes out of the mix. Dishes with beans, pineapple, or coconut get a pass for him.
I’m glad he learned to love winter squash.
You can fill acorn squash with just about anything.

It is also so good for you!
Acorn squash contains vitamin A, niacin, folate, thiamine and vitamin B-6, but it is an especially good source of vitamin C. A 1/2-cup serving of cooked, cubed acorn squash provides approximately 20 percent of the recommended daily allowance of vitamin C for healthy adults following a 2,000-calorie diet.
A large acorn squash when filled is a meal in itself. Make a little extra filling on the side if needed.

Chicken Mushroom Stuffed Squash

Yield: 2 servings

Serving Size: 1 each

Ingredients

  • 1 large acorn squash cut in half, seed removes
  • 1/2 pound chicken breast cut into 1/2-inch pieces
  • 4 ounces sliced portobello mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup rice (long grain, brown or mixed)
  • 2 cups chicken broth
  • 1 teaspoon fresh thyme, extra sprigs for garnish
  • salt and pepper to taste

Instructions

  • Heat oven to 350. Place squash cut side down in shallow baking dish. Add one inch of water. bake approximately 30 minutes until soft not mushy. Pressing gently with a finger should leave a slight indent.
  • While squash cooks:
  • Prepare rice using broth according to package directions.
  • Saute chicken and mushrooms in oil and butter. Remove from heat, add rice, thyme salt and pepper.
  • Fill squash cavities. Serve.

One year we surprised each other with chocolate covered strawberries. We also bought them at the same store about an hour apart on our way home from work. True story. But then who wouldn’t be happy to get a chocolate covered strawberries! 🙂
We both like carrot cake. Me more than him though. So a small cake works best!

Serving Size: 1 slice

Ingredients

    cake
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1/4 vegetable oil
  • 1 egg
  • 3/4 cup peeled carrots, grated
  • 1/4 cup finely chopped pecans
  • Cream Cheese Frosting
  • 4 ounces softened cream cheese
  • 2 tablespoons butter softened
  • 1/2 teaspoon vanilla
  • 1 1/3 cups powdered sugar

Instructions

    cake
  • Whisk together flour, baking powder, baking soda and salt.
  • In a separate bowl, mix together sugar, egg and oil. Add mix to dry ingredients.
  • Stir in carrots and pecans.
  • Bake at 325 in 2 pans of 5-inch or 6-inch diameter for approximately 30 minutes.
  • frosting
  • Beat together cream cheese, butter and vanilla. Slowly add powdered sugar. Beat to desired consistency.

Ham and String Beans #RecipeRedo

Ham and String Beans 2018Ham and String Beans pair juicy ham with tender green beans and potatoes. Pure comfort food.
If I need to pick just one comforting, soul warming dish today, I think Ham and String Beans (green beans, wax beans, haricot verts, snap beans) with potatoes is my choice.

Smoked ham hocks or shanks have a flavor and texture all their own. The meat is tender and moist. If you never had this portion of a pig, I’d compare it to the dark meat of poultry.
The cuts come from the same place, a shank named for German name of schenkel or thigh and a ham hock, which is a cut just above the foot.
My earliest gardening memories are of sitting at our kitchen table with a big colendar of green beans on my lap. My job was to snap off the ends, grab the little “string” and pull it off.
Today most varieties are “string-less” but every once in a while, I’ll find some farm fresh beans and I get to pull one!

You can serve this as soup or on a plate. I usually eat one serving each way!

Yield: 4 to 6 servings

Ingredients

  • 2 ham shank or 2 hocks
  • 1 pound fresh or frozen beans, ends removed
  • 4 medium potatoes, peeled and cubed (about 3 cups)
  • 4 cups of homemade or 1 (32 ounce) carton of chicken stock
  • 2 cup celery, chopped
  • 1 cup onion, chopped

Instructions

  • Place ham, celery, onions and stock in a Dutch Oven or large stock pot. Add water if necessary for liquid to cover ham.
  • Cover. Bring to a boil, reduce heat and simmer until meat is tender and easily releases from the bone. (about 1 to 1 1/2 hours)
  • Remove ham, cool slightly and remove skin and meat from bone. Cut into bite-sized pieces.
  • Add beans to stock and cook over medium heat 10 minutes. Add potatoes and cook until beans and potatoes are thoroughly cooked. Return ham to pot and heat thoroughly.
