Double Chocolate Cream Puffs #BakingBloggers

Double Chocolate Cream Puffs serve rich, chocolate custard filling in light chocolate profiterole. Drizzle with white chocolate for a special occasion.
Double Chocolate Cream Puffs
Me and chocolate go back a long way. I consider chocolate to be one of the minor food groups. A treat that has health benefits but only when consumed in moderation.
Easy to say. Hard to do for me.

January brings the #BakingBloggers group together to create Choux Pastry dishes. Thanks to Sue Lau from
Palatable Pastime for hosting our event.
My guy loves the traditional eclair overflowing with vanilla custard and rich, dark chocolate ganache slathered on top. Good but I needed more chocolate. 😉
I played around with the dough recipe. A bit of cocoa worked nicely!
I used cocoa for the chocolate custard instead of unsweetened chocolate. It turned out so creamy!

A quick drizzle of white chocolate works!
A few tips when making these cream puffs for best results.

  • Cook the flour a bit. Give the dough a few minutes on the heat to release moisture and bring out the flavor.
  • Bake dough thoroughly to release all the moisture trapped from the butter. When the little beads all disappear give the dough a bit more time to dry. Don’t over bake.
  • Cool custard to room temperature. Place a film of plastic wrap directly on top to seal out air and prevent scum from forming. Refrigerate.

Fill these close to when they will be served. Refrigerated filled puffs tend to get soggy quickly.

Turkey Fennel Skillet Dinner #SundaySupper

Turkey Fennel Skillet Dinner. A one pan meal of ground turkey, fennel, tomatoes, pasta and spices. A meal your family will love.
Turkey Fennel Skillet Dinner
Skillet dinners are big at our house. I grew up enjoying one pan meals. My mom worked, so quick dinners were her go to meals.
We often had a combo of leftovers to round out a meal.
Then there was Sunday.
Mom was off. She got to make a regular sit down meal. Roast chicken, mashed potatoes, gravy and corn for example. Good stuff.
Sundays stayed as days we shared a meal even after I was grown.
Mom watched my daughter on Sundays while I worked. I’d come home to a cooked meal at her house. I miss those days.
Sunday Supper Movement understands that feeling.

January is Sunday Supper Month!

Sunday is a great time to slow down and invest a little more time into the family meal. Pop in a roast or simmer a sauce on the stovetop to develop those deep, rich flavors and allow the aromas waft through your home creating that wonderful anticipation for the moment the family gathers around the table to enjoy Sunday Supper together.

We’re encouraging our readers to make Sunday Supper their routine. Take the Sunday Supper Pledge, and let’s create a collection of delicious Sunday Supper Recipes we can enjoy for generations to come.
Turkey Fennel Skillet Dinner reminds me that it’s not how long it takes to cook the meal. It’s not how elaborate you make it. It’s about sharing a meal when you can.

I’m happy to be hosting our Festive Foodies Budget Meals event!
Easy, inexpensive meals are always on my menu. I feel it’s great to splurge once in a while. I don’t live by mac and cheese alone! Although mac and cheese is inexpensive AND comforting. Win, win in my book!
A good BBQ is in store this week. Chicken is my choice for protein.
Chicken Sloppy Joes
If you’re not in the mood for chicken, that’s okay. This recipe can be made with any ground meat.

Ground chicken is often a good buy out of the ground meats in the case. I love beef and make it often. Ground turkey appears in a lot of dinners too.
Chicken Sloppy Joes
I use a tomato paste base. A bit sweet with brown sugar. A bit smoky with smoked salt and smoked paprika. All balanced out with Worcestershire and red wine vinegar.
Pile it high on a soft roll or Kaiser roll for a tasty treat!

Chicken Sausage and Rice Soup #SundaySupper

Chicken Sausage and Rice Soup chases away winter chills. A hearty soup that stands up to freezing and reheating.

Chicken Sausage and Rice Soup

It’s late. No time for me to shop for dinner.
Wait! I can pull something out of the freezer. Something easy to defrost, wholesome and inexpensive.

Chicken Sausage and Rice Soup
Did I mention it was also homemade?
Chicken Sausage and Rice Soup

This week Sunday Supper is hitting the deep freeze. By that I mean we’re making freezer meals!

Healthy Make Ahead Freezer Meals

New Years usually means resolutions to eat healthier. Which can sometimes be difficult with crazy busy schedules. Share your healthy make ahead freezer meals to get us all through the busy winter without ordering take out.

Soup tops my must make meals in winter. It’s so easy to make a big batch and freeze some for later.
Chicken Sausage and Rice Soup cooks in one pot. It easily reheats on the stove-top or microwaved.
I like using chicken sausage in soups and casseroles. It’s leaner and holds it shape when separated from the casing.
Today you can find chicken sausage in all kinds of flavors. Apple and maple, hickory, feta and spinach and my favorite, sweet Italian. Some brands even add peppers and onions. YUM!
Start with quality chicken stock. Add mirepoix and greens for some veggies. A few springs of fresh thyme and some lemon juice. That little bit of acid from the lemon makes a big difference.
I also like to cook the rice in with the soup. To me it absorbs all the flavors better that way.
How do you cook rice for soup?
Here’s the recipe. Don’t forget to freeze some for later!
