BBQ Chicken Cups bake tender ground chicken barbecue in a flaky, bread cup. Ready in 30 minutes for lunch, after school snack or quick dinner. Perfect for busy #Back2School families.
I tried making cups like this before with different kinds of bread. Crescent rolls, biscuits and pie dough. None were very good. Too soggy or burnt too easy.
Rhodes Thaw, Rise and Bake Dinner Rolls make a great crust for these BBQ Chicken Cups. So simple.
Thaw as many as you like overnight in the refrigerator. Lightly spray a bit of vegetable oil onto a plate. Place on your frozen roll onto the plate. Spray a piece of plastic wrap lightly with oil for easy removal. Place over dough.
Next day, roll out thawed dough into a 5-inch circle.
Press dough into large lightly greased muffin pan. Fill with 1/4 cup chicken mixture. Adding only half the filing and baking will help prevent crust from getting soggy.
Brush exposed dough with egg wash. Bake cups at 350 for approximately 20 minutes until crust becomes flaky and turns brown.
Remove from oven and add reserved heated chicken mixture. Sprinkle with shredded cheddar if desired.
These cups bake up perfect every time. Serve them with salad for a quick dinner.
You can also make them a day ahead and reheat in the oven at 350 degrees. Place cups on baking sheet and reheat in oven for approximately 20 minutes until thoroughly heated with an internal temperature of 165.

BBQ Chicken Cups
Ingredients
- 3 each Rhodes Dinner Rolls, thawed
- 1/2 lb ground chicken
- 1/4 cup diced onion
- 1/4 cup diced celery
- 1 tbsp vegetable oil
- 1/2 cup barbecue sauce, divided
- 1/4 cup shredded cheddar cheese, optional
Instructions
- Sauté chicken, onions and celery in oil in a medium-sized
fry pan over medium heat until chicken is browned, no longer pink and
vegetables are soft (about 15 minutes). Remove from heat. Stir in 1/4 cup barbecue
sauce. - Roll out thawed dough into a 5-inch circle.
