Salted Chocolate Chip Cookie Bars

Yield: 18 bars

Serving Size: 1 each

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/2 teaspoon orange extract ( I used Nielsen-Massey)
  • 1/2 teaspoon vanilla extract ( I used Nielsen-Massey)
  • 1 cup flour
  • 1 cup chocolate chips or variety
  • 1 Tablespoon sea salt

Instructions

  • Cream together butter and brown sugar
  • Add salt and baking soda
  • add egg and extracts
  • add flour
  • Place in a parchment lined 8x8-inch baking dish and bake at 375 for about 25 minutes until dough is set and cookie is browned
  • Cool in pan on a wire rack for about 1 hour
  • Lift out with parchment and cut into bars. sprinkle with sea salt

Salmon seems to be at every public brunch offering I attend. This versatile fish is so appealing and fits well in a breakfast or lunch spread.

Salmon with Citrus Yogurt Sauce adds an easy, flavorful sophisticated touch to any brunch. I used Nielsen-Massey lemon and orange extracts to balance the tart yogurt, lime and fish tastes. A few drops of honey is all the sweetness this sauce needs. Sprinkle with a bit of chopped cilantro.

Salmon with Citrus Yogurt Sauce

Yield: 2 servings

Serving Size: 1 each

Ingredients

  • 2 4-ounce portion of salmon
  • 1/2 teaspoon creole seasoning
  • 1/2 cup plain yogurt
  • juice from 1/2 lime
  • 1/4 teaspoon Nielsen-Massey orange extract
  • 1/4 teaspoon Nielsen-Massey lemon extract
  • 1 teaspoon honey
  • 1 teaspoon fresh chopped cilantro
  • lemon and orange zest
  • cooking spray

Instructions

  • Spray a baking dish with cooking spray. Sprinkle salmon portions with creole seasoning. Bake for 15 to 20 minutes until fish flakes and is thoroughly cooked.
  • While fish bakes, Whisk together yogurt, lime juice, lemon and orange extracts and honey
  • Drizzle over fish and sprinkle with cilantro and lemon and orange zest

I love a good fritter. Lightly fried batter with bits of fruit.

I found something that can make a fritter even better! Sweet Vidalia onions.
Apples and onions compliment each other in any dish. Even a sweet one like a fritter.

Apple Onion Fritters made with Breeze apples and Vidalia onions.

Apple Onion Fritters

Yield: 8

Serving Size: 1 each

Ingredients

    fritter
  • 1/3 cup butter
  • 1/2 cup Dixie Crystals sugar
  • 1/2 teaspoon vanilla
  • 2 eggs, beaten
  • 2 cups flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 to 1 cup milk
  • 3/4 cup chopped Breeze apples
  • 3/4 cup chopped Vidalia onions
  • glaze
  • 1 cup Dixie Crystals powdered sugar
  • 1 to 2 Tablespoons water or milk

Instructions

  • Cream together butter, sugar and vanilla.
  • Add eggs and beat until fluffy.
  • Combine flour, baking powder and salt.
  • Alternate adding a bit of flour mixture with adding milk.
  • Stir in apples and onions.
  • Fry at 365 degrees, about 4 minutes on each side until golden brown.
  • Remove and to drain off excess grease place fritters on paper towels.
  • Mix together powdered sugar and water as needed to get drizzle consistency. Drizzle over fritters.

The water content in Vidalia onions is much higher than in regular onions. This characteristic contributes to Vidalias’ sweet taste, but it also shortens their shelf life and makes them more susceptible to bruising.
How to store fresh sweet onions:
• One of our favorite places to store Vidalias is the veggie bin in the refrigerator. Wrap each bulb individually in paper towels, which will help absorb moisture, and place them in the crisper with the vents closed. A few will naturally go bad, but many will keep for months. Buy a big bag at the end of the season and you should have Vidalias through the holidays!
• In the legs of clean, sheer pantyhose – believe it or not this is a great way to store sweet onions. Tie a knot in between each Vidalia and simply cut above the knot when you want to use one! Be sure to hang in a cool, dry, well-ventilated area.
• On elevated racks or screens, not touching, and in a cool, dry place.
• Don’t store with potatoes, which make the onions go bad quicker.

Roll dough into a rectangle. Sprinkle the blackberries with Dixie Crystals sugar and cinnamon.

Meyer Lemon Blackberry Cinnamon Rolls

Serving Size: 1 bun

Ingredients

    dough
  • 1 pack Red Star Yeast
  • 2 Tablespoons Dixie Crystals sugar
  • 1 teaspoon salt
  • 1/2 cup milk 120 degrees
  • 1 egg
  • 2 Tablespoons butter, melted and cooled
  • 2 1/4 cups flour
  • filling
  • 2 cups fresh or frozen blackberries
  • 1/4 cup plus 2 Tablespoons Dixie Crystals sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon cinnamon
  • plus 4 Tablespoons melted butter to brush dough and grease pan
  • glaze
  • 1 cup Dixie Crystals powdered sugar
  • 1/4 cup water
  • 1/4 teaspoon Nielsen-Massey lemon extract
  • 1/4 teaspoon Nielsen-Massey orange extract

Instructions

  • Mix together 1 pack Red Star Yeast, 2 Tablespoons Dixie Crystals sugar 1 teaspoon salt and 1 1/4 cups of the flour.
  • Mix in milk, butter and egg.
  • knead in the rest of the flour.
  • Roll into a ball, cover and place in a warm spot for 10 minutes.
  • When dough sat for 10 minutes, roll into a rectangle.
  • Mix together 1/4 cup plus 2 Tablespoons Dixie Crystals sugar, 1 Tablespoon cornstarch
  • and 1 teaspoon cinnamon. Add blackberries. Toss to coat.
  • Brush dough with melted butter. Add berry mixture.
  • Roll tightly and cut into 8 pieces. Place pieces into a buttered 9x13inch baking dis. Place in a warm spot and allow to double in size.
  • Bake at 375 for about 20 minutes until dough is flaky and browned on bottom. Cool on rack.
  • Mix together 1 cup Dixie Crystals powdered sugar, 1/4 cup water, 1/4 teaspoon Nielsen-Massey lemon extract,1/4 teaspoon Nielsen-Massey orange extract.
  • Drizzle over cooled buns.
