Beef and Beans over Orange Rice

Beef and Beans Over Orange Rice plate

Fall is the start of casserole season here. It is so easy to include “Beef as Part of A Healthy Plate”. When it comes to choosing healthy proteins, lean beef is a delicious and healthy choice. It’s also a perfect partner for fruits, vegetables and whole grains, making it even easier to enjoy a balanced diet.

The Beef Checkoff Logo

I like putting beef, whole grains like brown rice, quinoa or barley and vegetables together and pop them in the oven. Magic happens in there, I swear! All those juices and flavors blend together to make an entire new dish from what I put in the oven.

Beef and Green Beans over Orange Rice Casserole

Nutty brown rice and pasta absorb the essence of meat and broth. Vegetables play both sides. Potatoes, carrots and beans give off flavor and take on their surroundings at the same time!

Beef enhances so many types of dishes.

I do love casseroles but soups and stews are on my must make list too! Who doesn’t like crock of hearty beef stew or smoldering bowl of beef barley soup?

For soups and stews I use a shoulder round roast or bottom round roast I can braise for an hour or two to draw out all the beefy goodness and create an outstanding broth. It’s a Low and Slow Experience way of cooking. Making the same roast in a slow-cooker will accomplish the same results.

Beef Apple and Squash Napoleons #WeekdaySupper

This post is sponsored by The Beef Checkoff. All opinions are my own.

Beef Apple and Squash Napoleons

Beef Apple and Squash Napoleons layer juicy beef, sweet apples and butternut squash with sautéed spinach into a delicious stack.

This recipe is part of our Sunday Supper “Beef as Part of A Healthy Plate” partnership with The Beef Checkoff.

The Beef Checkoff

Making beef part of your healthy meal choices is very easy. When it comes to choosing healthy proteins, lean beef is a delicious and healthy choice. It’s also a perfect partner for fruits, vegetables and whole grains, making it even easier to enjoy a balanced diet.

Beef Apple and Squash Napoleons create a quick and easy way to build a healthy plate with beef in less than 30 minutes! Your family and friends will feel like royalty. You can sit back and smile knowing you presented them a well-balanced meal that they will love.

It starts with the beef.

beef napoleon steak

I chose to use thin slices of beef tenderloin steaks instead of ground beef in these tasty stackers. Lean beef cooks so quickly that it’s a natural protein choice  for a busy weeknight meal.

The Beef Checkoff website offers an Interactive Butcher’s Counter to help you find lean cuts for quick meals.

Beef pairs well with fall flavors like mellow butternut squash and crisp, sweet apples.

I sprinkled a bit of brown sugar and cinnamon on top to draw out the natural sweetness of butternut squash. Did you also know that cinnamon goes great in beef dishes? So tasty!

Dark green spinach adds color and texture.

I served these beauties with  yellow rice. Don’t all those beautiful colors make the plate pop?
