    Holiday Fudge Round Up

    fudge roundupGlorious fudge. Do you really need a reason to eat it? I know the holidays are often times we pack on the pounds. Everything in moderation, people. I’m guilty of over overindulging as much as the next person. Cheese, wine, rich foods and desserts are hard to pass up.

    I think we just need to pick our caloric battles more carefully.

    But I will make exception for some sweets. This confection is one of the exceptions. Chocolate covered anything is another!

    How about, a little sample of some fun and tasty fudge recipes just to appease me? I’ll tell you what. I’ll even throw in my white Chocolate Pistachio Fudge recipe. Deal? Hmmm I thought so!

    White Chocolate Pistachio Fudge

    Ingredients
    • 1 14 oz can sweetened condensed milk
    • 1 12 oz bag white chocolate chips
    • 1 tsp vanilla
    • 1 cup mini marshmallows
    • ½ cup chopped pistachios
    Instructions
    1. Grease an 8x8x2-inch pan with butter. Set aside.
    2. Combine the milk and white chocolate chips in a saucepan. Heat the mixture over low heat, stirring constantly, until the chocolate is completely melted. Remove the pan from the heat.
    3. Stir in the vanilla. Add marshmallows and pistachios, stir to mix. Cut back on stirring If you like little pieces of marshmallow.
    4. Pour the fudge into the prepared pan and smooth the top slightly. Refrigerate to set, 1½ hours or longer.

    Brandied Candied Sweet Potatoes for #SundaySupper

    Merry Christmas everyone!
    Christmas is always an emotional time for me. I get very sentimental about loved ones near and far. I miss those who have passed on as well as those that time and circumstances won’t let me be part of their Holidays. They all have a special place in my heart for the holidays and always.
    So when this music and movie inspired event came up I know what to pick!
    Christmas is the time to say, “I love you!”

    So this song inspired my dish for today’s Sunday Supper.
    Christmas is the time to say “I love you”
    Share the joys of laughter and good cheer
    Christmas is the time to say “I love you”
    And a feeling that will last all through the year

    Just outside the window snow is falling
    but here beside the fire we share the glow
    of moonlight and brandy, sweet talk and candy
    sentiments that everyone should know
    Memories of the year that lays behind us
    wishes for the year that’s yet to come
    and it stands to reason that good friends in season
    make you feel that life has just begun

    Brandied Candied Sweet Potatoes for #SundaySupper

    Ingredients
    • 2 medium sweetpotatoes thinly sliced
    • 1 cup chicken or vegetable broth
    • 2 Tablespoons brandy
    • ½ cup brown sugar, packed
    • 1 Tablespoon butter
    • ¼ cup craisins (optional)
    Instructions
    1. Preheat oven to 375. Place sweetpotatoes and broth (add a bit of water to cover if necessary) in a casserole dish and cook until tender.
    2. Drain cooked sweetpotatoes reserving the broth. Add potatoes to skillet.
    3. In a small saucepan bring sugar, brandy and butter to a boil whisking constantly. Cook to dissolve sugar and pour over sweetpotatoes. Stir to coat. Add reserve broth as necessary.
    4. Serve with craisins if desired.
