When I make a special dinner for me and my sweetie it has to be fun. I love making stuffed chicken for example. Part of the fun for him is cutting into the chicken and finding a delicious filling. Sometimes I use bread stuffing or mashed potatoes. Other times I get more creative with cheeses, broccoli, spinach, sun-dried tomatoes, olives and more.
Half the fun for me is coming up with new combinations. The other half of course, is eating it!
Today I’m joining a group of friends to share the love. Love of food. Love of blogging. Love of friendship.

One of the requirements for today’s post is something with a Valentine’s Day feel about it.
My guy might not be a hopeless romantic, but he cares about me just the same.
He often shows his affection by surprising me with peanut butter cups (my favorite candy) or a case of beer I like. Must be a guy thing!
So I surprise him back with a dish he loves with a surprise filling.

Today it’s Mini Cheese Stuffed Meatloaves. I served these with his favorite twice baked potatoes. Now that’s love!

I use Certified Angus Beef® brand 85/15 ground beef in my meatloaf. I used smoked cheddar for the filling. Any natural cheese not processed cheese works best. I just like a smoky flavor!

Mini Cheese Stuffed Meatloaves

Yield: 2 loaves

Serving Size: 1 each

Ingredients

  • 1/2 pound ground beef (I use 85/15 Certified Angus Beef Brand)
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic salt
  • 1/4 cup smoked cheddar or Gruyere cheese cubes
  • 1 tablespoon tomato sauce
  • 1 tablespoon grated Parmesan cheese

Instructions

  • Mix together beef, bread crumbs, egg, seasonings, tomato sauce and parmesan cheese.
  • Divide ground beef mixture in half. Roll each piece between 2 sheets of plastic wrap to form a rectangle about 1/4-inch thick.
  • Place half the cheese in the center of each rectangle. Fold one side towards center then the other side. Pinch ends shut and shape.
  • Bake at 350 on a foil lined sheet for about 20 minutes until brown and thoroughly cooked.
  • Serve with your favorite sides.

Spaghetti Squash Parmesan Casserole #SundaySupper

Spaghetti Squash Parmesan Casserole serves sauteed veggies, spaghetti squash and cheese as a baked dish your family will love. Peppers and sun-dried tomatoes round out the meal. A great choice for lent or anytime you want a meatless meal.

This week Sunday Supper is going meatless! We’re serving up our favorites old and new, casserole style.

I’m into winter squash. I could eat it any time. Spaghetti squash is one of my go to choices. I love the texture too. I think it cooks up just ad fast as pasta. You also can prepare it so many ways. Bake it. Boil it. It doesn’t matter. It will taste the same.

For this recipe I baked the spaghetti squash cut side down in the oven with a cup of water at 350 for about 20 minutes. Let it cool just long enough to hold to shred. I just use a regular dinner fork.

While the squash bakes, you can saute your veggies. Then just mix it with the shredded squash. Top with Parmesan and mozzarella and bake. Easy right?

Yield: 4 to 6 servings

Serving Size: 1 cup

Ingredients

  • 1 medium spaghetti squash, cut in half and seeded
  • 1/2 cup sliced onions
  • 2 cups mixed bell pepper slices
  • 1 cup reconstituted sun-dried tomatoes
  • 1 tablespoon olive oil
  • 1/2 cup freshly shredded parmesan
  • 1 cup shredded mozarella
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  • Place squash halves cut side down into a shallow baking dish. Add 1 cup water. Bake at 350 until skin indents when pressed, about 20 minutes. Remove, cool slightly and shred with a fork.
  • Saute onions, peppers, tomatoes in oil. Add seasoning.
  • Add shredded squash to cooked vegetables. Place in shallow baking dish. Top with cheeses. Bake at 350 for 20 minutes until cheese melts and is golden brown.

Pistachio Chicken Apple and Avocado Salad

Yield: 2 servings

Serving Size: 1 cup

Ingredients

  • 5 ounces cooked chicken,diced
  • 2 ounce shelled whole Wonderful Pistachios, divided
  • 1/2 cup diced Granny Smith apple or tart apple
  • 1/4 cup diced avocado
  • 1/2 teaspoon lime juice
  • 1 teaspoon honey
  • 2 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/16 teaspoon cayenne pepper
  • red leaf lettuce, optional

Instructions

  • Place chicken, apple and avocado in a bowl. Toss.
  • Place one ounce Wonderful Pistachios in a resealable bag. Gently smash into fine pieces with a mallet or rolling pin. Add to chicken mixture.
  • Mix together oil, lime juice, salt and cayenne. Add to chicken mixture.
  • Arrange salad over lettuce. Sprinkle with remaining whole Wonderful Pistachios.

Notes

For a lot of families, a “family dinner” doesn’t mean cooking for four or more people! It can be difficult to find recipes that cater proportionally to cooking for just two people. For this Sunday Supper, we’d like to bring Simple Dinner Ideas for Two back to the table! Cooking for family is important no matter the number of people sitting down to eat.
I like cooking for my guy and me. He really is a good sport because he never knows what’s for dinner.
Families of food bloggers can relate. I do keep his dislikes out of the mix. Dishes with beans, pineapple, or coconut get a pass for him.
I’m glad he learned to love winter squash.
You can fill acorn squash with just about anything.

It is also so good for you!
Acorn squash contains vitamin A, niacin, folate, thiamine and vitamin B-6, but it is an especially good source of vitamin C. A 1/2-cup serving of cooked, cubed acorn squash provides approximately 20 percent of the recommended daily allowance of vitamin C for healthy adults following a 2,000-calorie diet.
A large acorn squash when filled is a meal in itself. Make a little extra filling on the side if needed.

Chicken Mushroom Stuffed Squash

Yield: 2 servings

Serving Size: 1 each

Ingredients

  • 1 large acorn squash cut in half, seed removes
  • 1/2 pound chicken breast cut into 1/2-inch pieces
  • 4 ounces sliced portobello mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup rice (long grain, brown or mixed)
  • 2 cups chicken broth
  • 1 teaspoon fresh thyme, extra sprigs for garnish
  • salt and pepper to taste

Instructions

  • Heat oven to 350. Place squash cut side down in shallow baking dish. Add one inch of water. bake approximately 30 minutes until soft not mushy. Pressing gently with a finger should leave a slight indent.
  • While squash cooks:
  • Prepare rice using broth according to package directions.
  • Saute chicken and mushrooms in oil and butter. Remove from heat, add rice, thyme salt and pepper.
  • Fill squash cavities. Serve.
