Running out of an ingredient when you cook or bake can be frustrating. Last minute change ups don’t bother David Joachim. In fact he’s an expert at it. In his new book, The Food Substitutions Bible, Joachim offers more than 6500 practical substitutions for just such an occasion. He doesn’t stop there. The book goes on to give substitutions for equipment and techniques in the kitchen. Joachim shares his ideas for what to do if you’re out of for example, pastry bags. Quinoa Oatmeal Bread is more than just quinoa and oats. I know, I know, but to say, Quinoa Oatmeal Bran Buttermilk Wheat Quick Bread would probably even give Google a headache!
When I saw this challenge from The Bread Bakers, I admit that I got a bit scared.

I never made bread with cooked grains before. It was well worth the try. Quinoa helps keep this bread so moist. It is a bit dense but toasts up well. The multi-grain facet adds depth. Buttermilk makes it just that little bit richer.
I’m glad I chose to use it as a whole grain as opposed to a flour. Look at those delicious bits in there.
Quinoa Oatmeal Bread Loaf
Oatmeal and bran flakes add extra nutrition and texture. How sweet this bread gets also depends on the type of bran flake you use. The less processed the better.

Quinoa Oatmeal Bread

Quinoa Oatmeal Bread

Ingredients
  • 3 cups bread flour
  • 1 cup oatmeal
  • 1 cup bran flakes
  • ½ cup cooked quinoa
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2½ cups buttermilk
  • 1 egg, beaten
Instructions
  1. Mix together flour, oatmeal, bran flakes, baking soda and salt.
  2. In a separate bowl combine quinoa, egg and buttermilk.
  3. Mix dry and wet ingredients together. Place in greased loaf pan.
  4. Bake at 350 for 11/4 hours and inserted toothpick comes out clean.
  5. Cool on rack before slicing.

I do love raisins. I enjoy them in oatmeal cookies, bread pudding and sauces and even right out of the box. When my daughter was little, I used to buy the little snack pack size boxes to toss into her lunch bag. That was 30 years ago but I can safely say she still enjoys raisins.

According to the USDA, raisins are the most economical dried fruit. All-natural California raisins are dried-by-the-sun with minimal processing. The label says it all. Ingredients: raisins. Don’t let the simplicity fool you. Raisins have zero fat, no cholesterol and no added sugar. One quarter cup offers 9% of your daily fiber and potassium, and 6% of your daily iron.

For the recipe challenge I decided to remake one of my Mom’s favorite Holiday dishes: glazed ham.

Raisin Glazed Ham Cheese Crostinis

Raisin Glazed Ham and Cheese Crostini uses Black Forest Ham, Smoked Gouda and a wisp of spicy brown mustard on a toasted baguette slice. This yummy appetizer is topped with golden and seedless raisins reconstituted in apple juice concentrate and lightly seasoned.

Serves: 8
Ingredients
  • 1 baguette, thinly sliced
  • 2 Tablespoons olive oil
  • 2 Tablespoons spicy brown mustard
  • ¼ pound Black Forest Ham or luncheon ham thinly sliced
  • ¼ cup grated Smoked Gouda cheese
  • ¼ cup raisins, golden, seedless or combination
  • ⅓ cup thawed out frozen apple juice concentrate
  • pinch of ground cloves
  • salt and pepper to taste
Instructions
  1. Brush baguette slices with oil. Broil until golden brown.
  2. Spread a thin layer of mustard on toasted bread.
  3. Loosely pile a slice of ham on top of each piece.
  4. Sprinkle with cheese. Broil just until cheese is melted.
  5. In a small saucepan, add raisins, apple concentrate, cloves and salt and pepper to taste. Bring to a boil, reduce heat and simmer uncovered until juice is reduced by at least half.
  6. Spoon raisin glaze over crustini. Serve immediately. Keep extras warm.

I read through every recipe. It was hard to decide which ones to prepare. So I tried several recipes from this book.

I found the Lemon Butter Brussels Sprouts, Sauerkraut-Style to be simple to prepare. Very different. Very delicious. (Recipe page 199)

One recipe that really caught my eye was Apple Celery Salad with Peanut Vinaigrette. This slaw-style salad uses a perfect combination of fall ingredients in a unique dressing. (Recipe page 177)
